12 Week Meal Prep Series – Week 9: Pork

February 27, 2017 by johnson_mel@hotmail.com

Pork

In my opinion, pork is a very underrated meat option. Sure you have the fatty varieties like bacon and sausage, but there are lean options as well! My task for you this week is to incorporate some type of lean pork into your meal prep plan!

Obviously pork is high in protein, which is important to a clean eating diet.  Pork is also a good source of vitamins B12 and B6, AND one 3oz serving provides 1/5 daily recommendation of zinc. [Read more…]

12 Week Meal Prep Series – Week 1: Cook Chicken

January 2, 2017 by johnson_mel@hotmail.com

Meal Prep Series Chicken

Chicken can be a very healthy and versatile food, which makes it perfect for meal prep. Boneless, skinless chicken breasts are high in protein and are low in fat.

One 3oz serving of cooked chicken breast is 120 calories and provides 26g protein. Boneless, skinless chicken thighs are another good option for a clean eating diet. Chicken thighs provide more flavor, but also have a higher fat content.

It is rare for me to meal prep for the week without cooking chicken in some way, shape or form. Both chicken breasts and chicken thighs can be prepared easily. My preferred methods of cooking including baking, grilling or cooking in a slow cooker. [Read more…]

How to Bake Chicken Breast

November 7, 2016 by johnson_mel@hotmail.com

How to Bake Chicken Breast

Chicken is one of the most popular meats and it provides a ton of protein. Cooked chicken provides 25-30 grams of protein for 3.5oz of meat, while only providing around 1 gram of saturated fat. It is incredibly lean and is perfect for a clean eating diet.

There are plenty of different ways to cook chicken including grilling, baking, roasting, broiling, slow cooking, etc. In this particular post I am going to show you how to bake chicken breasts. [Read more…]

Lemon Pepper Chicken Thighs

June 6, 2016 by johnson_mel@hotmail.com

Lemon Pepper Chicken Thighs

I want to talk about these Lemon Pepper Chicken Thighs, but first I want to talk about Top Golf.

We did end up meeting up in Denver to go to Top Golf and it was awesome! I highly recommend it.

It is a really big place with three different levels of area to hit golf balls. Each group has their own bay and you hit out into what looks like a normal driving range, but with targets set up in different spots. Each ball has a tracker in to so it knows where you hit and how many points you get. The point is to get the closest to the “pin”, but there are places around the pin that earn you points as well. Each target area is color-coded based on difficulty and each game has you hit at different targets. You get to choose what type of game you play.

It is sort of difficult to explain, but it makes a ton of sense when you get there. The best comparison I could think of was an electronic dart board. You can pick different games that you want to play and it scores how/where you throw based on what game you are playing. It is similar to that. [Read more…]

Balsamic Honey Pork Tenderloin

May 2, 2016 by johnson_mel@hotmail.com

Balsamic Honey Pork Tenderloin

I feel like pork tenderloin is the red-headed step-child of healthy animal proteins. Chicken gets all the love. I mean, I do love chicken but it gets ALL the attention for being the healthy meat.

Pork tenderloin always seems to get overlooked. In four ounces of pork tenderloin there is over 23 grams of protein! If you don’t eat much meat, then it is fine to stick with chicken. However, if you are a meat-eater like me, then occasionally you need to mix things up! The last few weeks I’ve rotated chicken, pork tenderloin, and cod in my meals. It has been fantastic! I love switching it up so much so I don’t get bored with my meals. [Read more…]

Extra Lean Italian Burgers

April 14, 2016 by johnson_mel@hotmail.com

Extra Lean Italian Burgers

I happen to really love hamburgers. I know a lot of people that choose to be healthy and eat healthy by being vegetarian or vegan. I support their decision 100%, but I personally could not do it. I love beef, chicken, and pork of course, but also meats like turkey, deer, bison, duck, etc.

I would not be able to ever fully eliminate meat products from my diet. So instead, I will make them healthy! One of my favorite ways to eat meat is in the form of a burger. I am American, ya know. [Read more…]

Asian Chopped Salad

March 28, 2016 by johnson_mel@hotmail.com

Asian Chopped Salad

Before we get to the Asian Chopped Salad, let’s talk about Easter. Was the Easter Bunny good to you?!?!? He was good to me! I got a little basket full of goodies including some cute socks that look like tennis shoes (awesome), some beef jerky, and Reese’s PB Egg. Most importantly however, the Easter Bunny gave me the ingredients for a Moscow mule! Hahaha yes, last year I received a six pack of beer and this year a shooter of vodka, one can of ginger beer, and a lime! The Easter Bunny really does know me! [Read more…]

Hamburger Lettuce Wraps

January 18, 2016 by johnson_mel@hotmail.com

Hamburger Lettuce Wrap-edit

Let’s just say that Donny is quite the lucky guy these days! We went to the Fort Morgan Elks Lodge on Friday night for a chance to win Broncos tickets to the game yesterday. We were hanging out with a few of our friends before the drawing and they have these “pull-tab” tickets that you buy to win money (same idea as a scratch ticket). Some are 25 cent winners, some $1 winners, and a few bigger prizes. [Read more…]

Green Chile Smothered Burritos

January 11, 2016 by johnson_mel@hotmail.com

Green Chile Smothered Burritos-edit

We had a blast this weekend and Guard and Grace was amazing!!! We started with seafood towers, which included oysters, shrimp, crab, and lobster, and then some platters with burrata cheese, speck ham, and grilled bread. I barely touched the ham and cheese because I was all about that seafood (it is like being all about that bass, but different)! [Read more…]
