I am definitely back to my eating routine in terms of clean eating meals. My eating habits changed quite a bit while I was on maternity leave. However I am back at work so I’m back to more meals and snacks throughout the day and normal eating times!

It has also been a very long time since I have logged my food in My Fitness Pal. I stuck to more intuitive eating while I was pregnant and for a few weeks postpartum. I still have a few pounds to lose so I know I need to keep a better eye on my food intake. [Read more…]

The first week of work post-maternity leave went quite well. I am SO glad that I meal prep because it saves me a ton of time in the evenings. Plus, I’m still up a few pounds so it is nice having healthy food available to grab and go!

15-Minute Meal Prep Chicken & Rice Bowls

Meal prep is a huge part of my weekly schedule. Meal prep is preparing a few days or even a week’s worth of foods/meals on one particular day of the week. You can pre-portion breakfast, lunches, dinners and even snacks so that you have convenient food to eat throughout the day.

I prefer to pre-portion my meals, but other people will store cooked foods in the refrigerator to put together meals throughout the week.

My clean eating meals this week are a little more normal than the past few weeks. I’m officially back to work after 8 weeks of maternity leave. I definitely have more of a routine and schedule going on, including my meals.

Meal prep helps me to eat healthy meals all week without having to take a bunch of time to cook. Trust me, we have way less time to cook meals with an infant! Luckily I was used to cooking a bunch of food ahead of time so it has helped a ton.

I need to be better about eating vegetables, so I am making it a priority to incorporate veggies into my lunches like I did before, but to also have extra on hand for dinners! What is your favorite cooked vegetable to keep on hand for quick meals? [Read more…]

Meal Prep Ideas

The time has come….I am back to work this week after 8 weeks or so of maternity leave. Not a big deal, I was ready. However, I needed to get back into the meal prep game!

I wanted to make a few easy recipes that were also quick. Some weekends I might have more time to cook, but until I get into the swing of meal prep with a baby I’ll have to keep my meal prep ideas simple.

Grocery Shopping & Meal Prep Ideas

This week’s meal prep ideas are not very exciting, but it has worked for me so far! I bought quite a few healthy things at the grocery store, but I didn’t do much prep work.

I enjoy having healthy foods handy so I can throw together a quick breakfast, lunch or dinner. Breakfast was a priority this week, so that I could quickly grab it, eat it and get ready for the day. This week’s Mel’s Clean Eating Meals does not have a lot of vegetables, but I ate some good meals! Does that count?!

My eating schedule is quite different since I’ve been on maternity leave and on Abby Jo’s schedule, rather than my own! I have been trying to eat a little more healthy the last few weeks, but I have not done a great job of getting veggies in. I need to make that a priority apparently.

Threw all that in a bowl with some Mrs Dash Onion & Herb Salt-Free seasoning and boom, dinner! Plus it has 33g protein and only 350 calories
