The Meal Prep Series this week focuses on vegetables. I happen to love vegetables and don’t mind incorporating them throughout the day. Meal Prep Ideas

The Meal Prep Series task this week involves preparing vegetables to last the week. Well this week I made a TON of vegetables! Roasting them is one of my favorite ways to cook, because while they are in the oven I can do other things. My sister wanted to prepare some foods for the week, so she joined me in the kitchen preparing a lot of veggies! What are your favorite meal prep ideas for vegetables?

I split meal prep up a little bit this week. Rather than doing it all in one day I split it into two days. I cooked all the vegetables on Saturday, then prepared all the protein (turkey, chicken and beef) on Sunday. Meal Prep Vegetables

Every healthy diet should have plenty of vegetables incorporated. My challenge for you Week 2 of the Meal Prep Series is to prepare a variety of vegetables to last you the week. If you missed Week 1 of the Meal Prep Series then you can find that here.

I am lucky because I actually enjoy the taste of (most) vegetables! When I food prep I typically try to cook 4-5 different vegetables to rotate throughout the week. My go-to veggies include broccoli, cauliflower, zucchini, green beans, Brussels sprouts, bell peppers and carrots.

Normally I document Mel’s Clean Eating Meals on a weekday that I am at work. I am very much a routine girl, so I eat around the same times each day.

However, this week I decided to document a day that I was off of work (we had Monday off to celebrate the New Year). Not only that, but this was a random day of eating. I was busy pretty much all day long working around the house so my meals were quick and simple.

It has been a while since I went on a grocery shopping haul! We’ve been so busy with work and the holidays that I haven’t gone on a big shopping spree in a while! It was time. Lately I’ve lacked in meal prep ideas based on minimal time on the weekends. This week I felt like keeping it simple even though I had the time.

I’m up a few pounds from our trip to New York City and the holidays, so I wanted to keep things simple with meat and vegetables! 12 Week Meal Prep Series – Week 1: Cook Chicken

Meal Prep Series Chicken

Chicken can be a very healthy and versatile food, which makes it perfect for meal prep. Boneless, skinless chicken breasts are high in protein and are low in fat.

One 3oz serving of cooked chicken breast is 120 calories and provides 26g protein. Boneless, skinless chicken thighs are another good option for a clean eating diet. Chicken thighs provide more flavor, but also have a higher fat content.

It is rare for me to meal prep for the week without cooking chicken in some way, shape or form. Both chicken breasts and chicken thighs can be prepared easily. My preferred methods of cooking including baking, grilling or cooking in a slow cooker. [Read more…]

Clean eating meals can be few and far between during the holiday season! It helps that I prepare all my meals at once to keep me from eating out for lunch or grabbing take-out on the way home from work. I’ve still been trying to eat as many healthy meals as I can, but there have been plenty of indulgences the last few weeks.

Mel’s Clean Eating Meals are designed to show you what healthy, nutrient-dense meals look like throughout the day. I don’t make any weird recipes or eat crazy, off-the-wall foods. Simple, whole ingredients are used for most of the clean eating meals that I consume and they don’t take hours and hours to prepare. [Read more…]

12 Week Meal Prep Series

Over the last few years I have really gotten into preparing food and meals for the entire week. Meal prep can help save you time throughout the week because the cooking part is already done. It can also save you money because you won’t need to eat out for lunch or dinner!

The meals that I create are all clean eating friendly. However, meal prep does NOT have to be clean eating. Make the foods you love that will help you reach your individual goals. Diets that are gluten free, vegan, high carb, low carb, etc can all be accommodated through your meal prep. [Read more…]

Clean Eating Meals

Vacation and getting delayed coming home threw off my clean eating meal schedule for this week. I made it work, but it definitely didn’t go as planned. Plus, forgetting my afternoon snack in the freezer didn’t help either!

This was not my favorite way to get back to clean eating meals after vacation, but it was fine. I didn’t have very many vegetables throughout the day, but I managed to hit my goals regardless. I typically like to have more food throughout the day and not quite as big of a meal at dinner, however life doesn’t always go as planned. Luckily, I keep plenty of healthy snacks with me for times like this. [Read more…]

I thawed some frozen mixed veggies, heated an Uncle Ben’s Ready Whole Grain Medley package and diced/heated some chicken that I made during meal prep up. Threw all that in a bowl with some Mrs Dash Onion & Herb Salt-Free seasoning and boom, dinner! Plus it has 33g protein and only 350 calories
