This week required quite the grocery shopping haul! We were pretty low on groceries from being gone most of last week, so we made up for it this week.

Luckily it is summertime so fruits and veggies are widely available! Donny & I were actually in Greeley, CO on Saturday so we stopped by King Soopers. I haven’t shopped at King Soopers since college and I really enjoyed it! The one we went to was really nice, which helps too. [Read more…]

Healthy On-the-Go Snacks

I love snacking. Snacking is my favorite!

I cannot go too many hours without eating, so I pack snacks to eat between breakfast, lunch and dinner. If you’ve followed Eat. Lift. Play. Repeat. for very long then you know I eat pretty often! I aim for every 2-4 hours.

My job allows me to eat at my desk and we have a refrigerator so I can keep snacks stored in there. [Read more…]

Day in the Life: Mel’s Clean Eating Meals [#72]

Donny & I were on a quick vacation to see family most of the week. I needed food for two days of work before the weekend, so we did a very tiny shopping trip so that I could create Mel’s Clean Eating Meals.

I knew I would go on a normal shopping trip over the weekend, so I didn’t want to go too crazy. I am definitely lacking in the fresh fruit and veggies department! Plus, I’m pretty sure I ate 14 breakfasts… well breakfast-like foods 14 times throughout the day.

Even though I did go grocery shopping, I didn’t want to get too crazy with meal prep. However, I knew I’d feel better if I packed my meals for the day rather than eating out or grabbing convenient food later. I ended up with some pretty tasty meals for Mel’s Clean Eating Meals! [Read more…]

It was hard to even call what I did this week “meal prep”. Donny & I were in Tennessee from late Friday night to Wednesday morning seeing his sister and her family.

We landed in Denver about 10:00am, so we stopped by Target on the way home to grab a few things.

I didn’t have to do too much in terms of meal prep ideas because I only have two work days to make food for! I’ll do another normal shopping trip and meal prep session this weekend. Check out how simple I kept things this week. [Read more…]

My Go-To Healthy Fat Choices

Back in the day fats were frowned upon in the health-food-world. However, let’s get one thing straight: eating fat does not make you fat. The right fats sources have some great benefits and should be added into any clean eating diet.

Fats are higher in calories compared to proteins and carbohydrates. Fats contain 9 calories per gram, while protein and carbs contain 4 calories per gram.

Here’s the kicker though, if combined with the right foods, healthy fats can keep you feeling full longer! Combining healthy fats like extra-virgin olive oil, avocado or peanut butter with whole grains and lean protein is a great combination for a healthy meal. [Read more…]

Mel’s Clean Eating Meals this week is full of lots of healthy foods! I’m pregnant, but still trying to get as many fruits and vegetables in my diet as possible. Fruits are definitely easier to incorporate than vegetables, but I am working on both.

I’m still trying to get quite a bit of protein daily as well. My workouts still involve lifting weights and that protein helps me maintain my muscle! I made egg salad using whole eggs and egg whites, plus I am snacking on Greek yogurt and beef jerky between meals! [Read more…]

Meal Prep Ideas

There are a few reason I like the warmer weather months in terms of meal prep ideas.

Produce is a huge difference, because in the summer time produce prices drop dramatically! Summer time is obviously a peak season for a lot of produce, so it tastes better and it is cheaper. Win-win my friend!

I also tend to change up my cooking routine in the summer. Actually, I tend to cook LESS for my meal prep ideas. My meals end up being more raw-based including salads and fresh fruit as snacks.

When it is 100 degrees out I don’t like turning my oven on! I’ll make other foods instead that require less cooking. [Read more…]
