Mels Clean Eating Meals

My clean eating meals have definitely evolved over the last 9 months. I’m 38 weeks pregnant and my stomach just doesn’t hold what it used to be able to hold!

I thought it would be great to be able to eat more food at meals since my calorie intake needed to increase. Turns out, that’s not the case. My poor stomach doesn’t hold much at one time, so I end up eating less at one time. I still need those calories and I am hungry a lot, so I eat more frequently.

Over the last few months I’ve traded my five-meals-per-day schedule for three meals and a million snacks! It works for me right now and I’m sure I’ll go back to a different eating schedule later. [Read more…]

Meal Prep Ideas

This week’s meal prep ideas are pretty easy! In fact, there are a lot more healthy snack options than meals this week.

I’m 38 weeks pregnant and not able to eat very much at one sitting without getting sick. Instead of feeling sick, I have been eating small things constantly throughout the day. I do still eat a lunch of a normal size, which hasn’t been problem for me yet.

Usually I would eat 5 meals per day with a snack before my early morning workout. This new way of grazing all day long is hard for me, but I’m working on it. It has also been hard to get enough protein in throughout the day too, because chicken doesn’t sound that good and cottage cheese isn’t sitting well. [Read more…]

Beef Enchilada Baked Pasta makes a great healthy dinner or meal prep recipe! It is full of lean protein, vegetables and complex carbs.

Try this simple twist on the standard baked pasta dish. Trade the marinara for enchilada sauce, then add green chiles and black beans for even more flavor!

Whole wheat pasta and black beans provide lots of fiber in this dish while lean ground beef adds plenty of protein!

You’ll notice very quickly that these clean eating meals do not contain very many vegetables! I am currently 37 week pregnant and I did very well with vegetable intake the first 8 months. However, I’ve started getting nauseous again and have very little appetite lately. I get really hungry so I eat constantly, but nothing actually sounds good.

I should really work on getting more veggies into my snacks, but right now I’m focusing on getting in enough food without making myself sick! It has been a pretty easy pregnancy, so I can’t complain too much. I’ll get through this and back on the veggie-train! [Read more…]

Mel’s Clean Eating Meals is more like Mel’s Clean Eating SNACKS this week! I felt like I ate all. day. long. Most likely because I did eat all day long.

I’m currently 36 weeks pregnant and this little baby is taking up some belly room! I have been getting heartburn a lot more and my nausea has kicked back up. Honestly, I was not expecting that to happen, but here we are! I can manage it, but it has changed my eating routine.

Small snacks throughout the day sits better on my stomach and I’ve had a hard time with protein. Eggs and beef are the best protein options for me at this point, because chicken doesn’t even sound good sometimes. [Read more…]

There was some “prep” done this week, but not a lot of full meals! I still consider these meal prep ideas though… because snacks work too!

I am currently 36 weeks pregnant and I cannot eat very much at one time! My nausea has come back a little, plus some heartburn so I have to be careful what I eat. Instead of full blown meals throughout the day I’ve basically been “grazing” on smaller snacks here and there. It is definitely different than normal, but it has helped this week. [Read more…]

Post-Workout Meals

Choosing the right post-workout meals throughout the week can really help you reach your fitness goals. It is important to replenish what is lost when you exercise.

You need a good dose of protein, as well as healthy carbs to replace the glycogen that was used during your workout. When you weight train, you tear your muscle fibers. You need protein and carbs in your post-workout meals to heal those tears, aka build muscle.

I usually go to the gym early in the morning on weekdays. Personally, I like to get my workout in first thing so that I don’t skip out on it later in the day. I’m definitely a morning person, so this works well for me. [Read more…]

Mel's Clean Eating Meals

The foods that I eat for Mel’s Clean Eating Meals seem to be changing these days. This particular day might look normal, but I struggle to get enough protein in each day.

I’m currently 35 weeks pregnant and my nausea has kicked up again. Nothing too terrible, but I don’t really have an appetite yet I get really hungry. However, once I eat my stomach gets upset. It is a never ending battle…… 

I can’t complain TOO much because the rest of my pregnancy has been a breeze! Chicken has been hard for me to handle the last few weeks, so I’m better off sticking with eggs and beef for protein sources.

I thawed some frozen mixed veggies, heated an Uncle Ben’s Ready Whole Grain Medley package and diced/heated some chicken that I made during meal prep up. Threw all that in a bowl with some Mrs Dash Onion & Herb Salt-Free seasoning and boom, dinner! Plus it has 33g protein and only 350 calories
