Another day in the life of Mel’s clean eating meals. Meal prep really helps me be able to eat healthy meals from start to finish. I like having foods already prepared so that I can make a quick breakfast or easy dinner. Plus, I love having my lunch and snacks already prepared ahead of time! I keep them in the refrigerator all week and grab them before I head to work in the morning. It is really convenient!

Clean eating meals don’t have to be difficult to make or involve crazy foods. For example, my breakfast was basically three ingredients – bread, avocado and eggs! Add a little salt and pepper and you are good to go! [Read more…]

Meal Prep Ideas

For some reason I didn’t feel like cooking too much this week in terms of meal prep. I still wanted to use the kitchen and cook a few things, but didn’t want to spend four hours doing so.

Luckily, I knew I would feel this way so I bought food at the grocery store that needed very minimal cooking! Chopped salad needs zero cooking and I made zucchini noodles this week without sautéing them! Call me crazy, but they are just fine without being cooked. [Read more…]

This week I want you to put all your knowledge together.

Each week I’ve had you focus on one task so that you feel more comfortable with it later on. For example, cooking chicken for the first time might be intimidating, but once you’ve done it a few times it doesn’t feel intimidating anymore. Clean Eating Meals

I am back to a normal eating schedule for me. When we were remodeling our kitchen I was eating a little different in terms of meals. I was still eating healthy meals, but they were more snack-like and more frequent. I definitely prefer eating actual meals compared to snacking. They keep me full longer than snacks so I don’t go crazy at night eating every. single. thing.

Most of these meals are made during meal prep. Meal prep helps me to eat healthy, clean eating meals throughout the day without having to worry about preparing food. It is already done! It saves me time and also money from not eating out when I am starving. It has become a staple in my weekend routine and I definitely recommend it to anyone. [Read more…]

Meal prep this week took about four hours, from start to finish, but I did take some time in there to make some healthy blueberry muffins for my sister! My healthy meals this week involve a variety of protein and also a variety of vegetables!

One of my favorite meal prep ideas is to use a slow cooker. It is pretty much hands-off so you can prepare the rest of your food while the slow cooker works its magic! I actually made a recipe I found online and it was awesome! [Read more…]

Only two more weeks of the 12 Week Meal Prep Series! I hope you’ve found a few tips and ideas to start incorporating meal prep into your schedule sometime during the week. Remember, it doesn’t have to be on the weekend! Find a time when it works best for you to prepare a few things.

I love the task this week! I want you to prepare a meal in your Crock Pot, aka your slow cooker! 

A slow cooker is a very convenient way to prepare meals because it is virtually hands off! You throw all the ingredients in and let it work its magic. In fact, you can start your Crock Pot before you leave for work and you’ll come home to a ready-to-eat dinner! [Read more…]

It is SO nice to be back to a normal eating schedule. Honestly, I was more thrown off my clean-eating-meals-game than I thought.  I wasn’t eating a ton of unhealthy food, but I was definitely snacking more and not feeling as satisfied after meals. Over the weekend I got to do some legitimate meal prep and I have been loving the meals I prepared.

The last few weeks I’ve had three meals and a couple snacks. This week I’m back to five smaller meals spread throughout the day. I definitely find that my body likes this eating schedule better. It is not a big deal to change things up every once in a while, but it is good to be back to a better eating schedule. [Read more…]

After 5 weeks or so of having no kitchen, I am back in action! I managed to meal prep with a microwave and convenience foods while our kitchen was being remodeled, but I prefer actual cooking.

Since we hadn’t been able to cook for a little while, we also didn’t grocery shop and buy quite as much. However, I made up for it (and then some) this week! I’m happy that I can start sharing meal prep ideas with you again, but I’m even more excited that I get to eat meals throughout the day that weren’t microwaved and boring….. [Read more…]

Lately Mel’s Clean Eating Meals have been a little different. Maybe you’ve noticed, maybe you haven’t.

I’ve been a lot less structured lately and have been eating even more often (who knew that was possible….) and snacking more than eating full meals. I still have breakfast, lunch and dinner, but also 3-4 snacks mixed randomly throughout the day. I am still trying to eat healthy, but have had a few more sweets lately. Oh well, life happens. I thawed some frozen mixed veggies, heated an Uncle Ben’s Ready Whole Grain Medley package and diced/heated some chicken that I made during meal prep up. Threw all that in a bowl with some Mrs Dash Onion & Herb Salt-Free seasoning and boom, dinner! Plus it has 33g protein and only 350 calories
