Grocery Shopping & Meal Prep – Week 20

Grocery Shopping & Meal PrepI have been trying to mix things up a little bit with my meal prep. Some for your sake, but some for my own sake! It takes a little bit more time, but the meals I end up with aren’t quite as boring each day. Plus, I love being in the kitchen!

Don’t get me wrong, I can eat meat and veggies all day long, but I have been experimenting with a few things. I love going through Pinterest so I might as well actually USE some of the recipes that I am pinning, right? If you see any recipes that you think I should make then feel free to send them over! Honstly, I enjoy making new recipes and trying new flavor combinations, so it is fun for me.

I made a large grocery haul, not because we were out of food but because Safeway had some great sales on meat! I decided to stock up while the prices were low, which led to a large grocery bill. The good thing is that my grocery bills the next couple weeks with be quite small! [Read more…]

Saturday morning I had some down time and decided to plan a couple meals for the week. I decided to make zoodles, because it has been a while since I’ve prepared zucchini that way. While looking at Pinterest I also found a healthy recipe for cauliflower “fried” rice!

I went grocery shopping Saturday morning at Safeway then made all my food on Sunday. Donny was busy with a two-day golf tournament so no grilling this week! I made everything for the week inside with my stove and oven. I managed just fine and have some great meals ready for the week. [Read more…]

Grocery Shopping & Meal Prep

Donny & I were gone for an entire week on vacation in Oregon (read about the trip here)! I enjoy eating out, but a week of eating at restaurants is too much for me. I needed to get back into the kitchen to actually cook! Plus, I was in need of some clean eating vegetables. We’d had vegetables at some of our meals, but deep fried Brussels sprouts are not exactly healthy!

Grocery Shopping & Meal Prep – Week 17

I had a great time preparing food this last weekend. Donny was playing in a golf tournament so I hung out at the house and took my time preparing different foods.

This week I also took a little extra time and planned out my meals quantity-wise. I have the My Fitness Pal app so I calculated how much of each food to put in the container to make a balanced meal. Burrito bowls was one of the meals I wanted to take. First, I calculated how many beans to take, then how much meat, next how many veggies, etc so that once all the food was cooked I could get right to filling the containers. I did that with both the burrito bowls and the spaghetti squash. Planning ahead really does save time in the long run! [Read more…]

Grocery Shopping & Meal Prep

Donny & I made a quick trip to Madison, WI this last weekend for a college friend’s wedding! We had a blast, but got home mid-afternoon on Sunday. Luckily I am a HUGE planner, so we had meat prepared already for the week. We stopped by a huge King Sooper’s on the way home from the airport so pick up all the groceries we needed. It was fun to check out a new grocery store! In college I shopped at King Sooper’s, but rarely make it there anymore. It was fun to change it up. We also bought a ton of fun produce that we normally don’t buy.

We bought a ton of produce, but tried to keep meal prepping fairly simple. I didn’t want to spend too much time cooking on Sunday, so made a salad for each day this week and grilled just a few vegetables. We didn’t cook all the vegetables we bought because we knew we’d want to make some for dinners this week. Cooked beets are on the menu for this week! [Read more…]

I am one of those weird people that LOVE to go grocery shopping. On Saturdays I can spend an hour or so wandering up and down store aisles looking at new products and at nutrition labels. Not everyone loves to go grocery shopping, so to make it a little easier I provide a list of the clean-eating-approved foods that I buy each week.

This week I went on a HUGE grocery shopping trip. In order to save space in the photo I only included one of certain items rather than each individual thing. For example, I bought 5 large apples, but only put one in the picture. We were not low on food by any means but I wanted plenty of fruits and vegetables to eat this week, plus I wanted to prepare extra protein.

Donny & I are going to a wedding this weekend in Madison, Wisconsin. We will be back early afternoon on Sunday, but I didn’t want to have to worry about preparing too much food for the next week. I decided to buy extra chicken and pork to cook and then freeze for meal prep next week. I know, I know I am quite the planner. Sometimes that is what needs to happen if you want to come back from a weekend full of indulges and get right back on track. We are going to cheese heaven for goodness sake. Most weekends I spend a couple hours in the kitchen. I either work on new recipes, prepare food/meals for the week or Donny & I have someone over for dinner. Either way, I get a lot of cooking time in. However, this weekend was definitely not that way. We are hardly home at all! Those few hours we were home we actually decided to take naps….

Both Donny & I had a busy weekend, but it was full of fun things going on. Our company BBQ was on Friday night, then we both played in a big two-day golf tournament Saturday & Sunday. I knew I would be tired after being outside in the hot sun golfing, so I planned on making meal prepping super simple. Knowing there was a full weekend ahead, I actually went grocery shopping on Friday during my lunch hour instead. I knew I wouldn’t want to go once the tournament was done, which ended up being a good decision. [Read more…]

This week I made a pretty big trip to the grocery store. I only went to one, Safeway, but made it count! Donny is doing a weight loss challenge and wanted me to stock up on lots of fruits and vegetables! I am not sure if this is enough or too much or where we will stand at the end of the week, however I’ll see what we have left on the weekend and make adjustments. Donny has never complained about having to eat healthy foods for breakfast and dinner, but I love that he is eating more fruits, veggies and whole grains during the day! Maybe my healthy eating is rubbing off on him….. what do you think?!?

Preparing different foods or entire meals doesn’t have to be difficult or take a ton of time. I cook and package up the majority of my meals for the week on Sundays, but you wouldn’t have to go that route. Even just preparing a few different foods to keep in the fridge helps on a busy weeknight. Make a batch of quinoa or brown rice. Grill or bake some chicken breasts. Roast a batch of various veggies. Simple things like that make it easy to throw together a healthy meal in a matter of minutes. I like to cook a bunch of vegetables ahead of time in order to add them to my eggs in the morning or throw them in a bowl with some chicken for a 5-minute dinner. We stayed in Denver Friday night to celebrate our anniversary. Check out yesterday’s post about our 3rd Anniversary Celebration at Stoic & Genuine.

We woke up Saturday morning and walked the half a block to Union Station to get coffee and share a pastry. Turns out they have a farmer’s market set up in the courtyard of Union Station on Saturday mornings. I LOVE farmer’s markets! We bought some very different produce – some that I’ve never seen before!

Donny also started a weight loss challenge with some people he works with in the industry. I haven’t been making him too much extra food because he’s either been gone or eating out for lunch. He is going to start taking his lunch everyday so I prepared a lot of extra food for the week. I’ll have to play around with grocery shopping to figure out how much to buy and now prepare! For now, here is everything I purchased for the week and how I used those food to prepare meals for a week of clean eating! [Read more…]

Grocery Shopping & Meal Prep

I had the whole weekend to grocery shop and meal prep, which has not been the case the last couple weeks! I enjoyed being able to do both tasks whenever I felt like it.

We were in Denver Friday during the day so I had Donny take me by Trader Joe’s. I wanted to grab a few things, but mostly to stock back up on their cashew butter! I’m addicted. So I bought a few things Friday then did a big trip on Saturday.

I made some freezer-meals for my friend Kortni, who is having her baby any day now. I bought a lot of food at the store (including everything for those meals), but this was everything that was for our house. [Read more…]

Threw all that in a bowl with some Mrs Dash Onion & Herb Salt-Free seasoning and boom, dinner! Plus it has 33g protein and only 350 calories
