Sweet Potato Yogurt Bowl

We made it back from our weeklong vacation to Oregon. We had the best time!  Donny & I both had fun and feel like we came back refreshed, which is the point of a vacation right?!

We try to keep vacations pretty relaxed with a few activities each day, but not go-go-go the whole time. We ate some great food and tried some interesting beer. I didn’t take a TON of pictures, but I have some that I’ll share those with you tomorrow. [Read more…]

Cinnamon Raisin Toasted Muesli

I definitely want to talk about toasted muesli, but first we must discuss homemade ice cream!

A couple weeks ago we had our company BBQ and the last couple years there had been an auction. Our sales manager pairs up one sales person with one non-salesperson and each team has a chance to win “Media Logic Money” based on performance. He also rounds up a bunch of auction items for us to bid on.

One of the items on the auction this year was an ice cream machine, which I “bought” with my Media Logic Money!

My grandparents celebrated their 56th wedding anniversary yesterday, so in honor of their marriage we made homemade ice cream! We stuck with plain vanilla for the first round and it was awesome. [Read more…]

Whole Wheat WafflesAre you a waffle person? Or a pancake person? Some people prefer one over the other. I love both, but if I have to choose then I will go with waffles 9 times out of 10.

I love how crispy waffles get compared to the fluffiness of pancakes. Plus, each little indention allows a small pool of syrup to settle in….yum! [Read more…]

Donny & I had a wonderful anniversary celebration in Denver over the weekend. We ate at Stoic & Genuine, a seafood restaurant inside Union Station and stayed at The Oxford Hotel, which we found out is the oldest hotel in Denver! I took pictures of our room and of dinner so I’ll share those with you in a later post.

Oatmeal 4 ways

Oatmeal is one of my favorite breakfast foods. Well, it is one of my favorite foods in general! It is healthy, full of fiber and keeps you full all morning!

I eat oatmeal in some form 4-5 days per week. In the summertime, I prefer overnight oats. In the winter, I tend to make more hot oat recipes! Sweet or savory you can make oatmeal one million different ways!

You can use oatmeal in so many different types of recipes from cookies to meatloaf to breads. Breakfast is the obvious choice, but get creative in your clean eating recipes. Oat flour can be a great substitute for other whole grain flours. [Read more…]

Chocolate Covered Strawberry Overnight Oats

When the weather warms up, I don’t want a hot breakfast as much as something cool or cold. I drink more smoothies in the summer and choose hot oatmeal more in the winter. However, I will eat eggs year around, regardless of temperature.

Last week I had either overnight oats or chia pudding for breakfast every single day. I had packed a frittata for my mid-morning meal so I chose to use more yogurt and oat-based items for breakfast. Plus, I’d wake up in the morning craving overnight oats, so it made sense to eat them all week! Most of the time I made them the night before so they could sit overnight, however one morning I did made chia pudding before going to the gym and it was still good when I got back! [Read more…]

Have you seen the new Reese’s Peanut Butter Cups that have the Reese’s Pieces IN the Peanut Butter Cup?!?! Yes, a giant Reese’s Peanut Butter Cup stuffed with Reese’s Pieces. Mind. Blown.

I read about this a while ago and was so excited to try them! They haven’t released these Reese’s Stuffed with Pieces, but they were handing out samples at a food show that Donny went to in late May. He brought some of the samples home with him and they are amazing. I mean, how could they NOT be amazing?! [Read more…]

Blueberry Chia ParfaitDonny had a catering job to do this last weekend that was quite over due! The couple had purchased a dinner for 10 people catered by Donny four years ago. Yes, FOUR YEARS AGO. Donny’s schedule is kind of crazy and there had been twice that we’d booked it and then something came up with us or them and we had to reschedule. We finally got it done and it was a blast.

Donny made a bunch of amazing food including chipotle sweet corn chowder, a salad with a crispy egg, homemade pasta with sausage and kale, New York strip and scallops. It was a ton of food and all of it was awesome! [Read more…]

Strawberry Banana Mini Muffins

I will get to these wonderful Strawberry Banana Mini Muffins shortly, but first I want to tell you about this restaurant we tried.

We had a wedding this weekend up in Boulder, Colorado. We decided to go up a little early so that we could try out a new restaurant. My sister and her husband met us up there, which was perfect because then we could share a couple things. We ended up going to Oak at Fourteenth, which is a sister restaurant to Acorn (check out my post about Acorn here).

Acorn is one of our favorite restaurants in Denver and Oak at Fourteenth did not disappoint! We shared a burger, shrimp & grits, and their fried pickles. All three were awesome. Their burger was topped with cheese and bacon, plus it came with homemade tater tots that were bomb-digity, to say the least. We want to go back and try their real menu. We were there about 3:00pm, so they had a mid-day menu rather than their full lunch or dinner menu. We don’t make it to Boulder very often so we might just have to make a special trip! [Read more…]

I’m not saying I’m 100% changed, but I might be changing my point of view on Greek yogurt.

Before you freak out, let me clarify. I might be changing how I view nonfat Greek yogurt. I decided to buy a couple individual servings the other day at the grocery store, along with my normal 32 oz tub of nonfat. I wanted to give the 2% Greek yogurt a try because I’d read somewhere that it has a little less tang to it then nonfat. Just to clarify, I am basing my information on plain yogurt, not the flavored kinds. [Read more…]

I thawed some frozen mixed veggies, heated an Uncle Ben’s Ready Whole Grain Medley package and diced/heated some chicken that I made during meal prep up. Threw all that in a bowl with some Mrs Dash Onion & Herb Salt-Free seasoning and boom, dinner! Plus it has 33g protein and only 350 calories
