Mel’s Clean Eating Meals is quite random this week, I won’t lie.
Lunch was a rush because little miss Abby Jo was having a rough afternoon. Dinner was a little random too because we were trying to eat some leftovers from the weekend. Random doesn’t always mean unhealthy. It was just a weird mix of food. Do you have days or meals like that? Everyone does, right?
Check out what I ate from start to finish with Mel’s Clean Eating Meals. My diet is not 100% clean, but I am try to eat healthy most of the time, with some indulgences. When your mom brings over homemade banana cake you eat the banana cake! Read on to see what healthy meals I prepared.
4:30am – Pre-workout:
First off, I woke up and drank a liter of water. For some reason I woke up REALLY hungry on this particular morning. I had my typical small banana before heading to the gym, but I needed a little bit more. Along with the banana I had 1/2 scoop vanilla protein powder mixed with water.
6:45am – Breakfast:
I wasn’t hungry right when I got home, but I knew I needed to eat before Abby Jo woke up. During meal prep I’d made four servings of pumpkin protein overnight oats, so I had one serving of that.
Along with the oats I had a cup of coffee with some half & half in it. After breakfast I had another cup of coffee, but I only got through 1/3 or 1/2 before letting it get cold.
10:00am – Snack:
I went to the office to get some work done and started to get hungry. Luckily I had a Pumpkin Pie Larabar in my purse for such occasions!
Pretty sure I’m going to turn into a pumpkin with all these pumpkin spice foods…..
1:45pm – Lunch:
Abby Jo was NOT happy after her lunch, so I did not get to eat until late. I whipped up quite the random lunch with foods in the refrigerator. First I heated up some cooked chicken with 1/2 cup marinara. I toasted two slices of bread, poured the chicken marinara on top and melted some mozzarella on top. It was quite good! Basically a healthy, open-faced chicken parm sandwich!
For some extra veggies I grabbed some mini bell peppers and baby carrots.
4:45pm – Snack:
I needed something to tide me over until dinner, so I had a vanilla Oikos Triple Zero Greek yogurt cup with homemade granola (homemade by someone else that is). I also had a bowl of red grapes.
6:15pm – Dinner:
The Broncos were playing the Chiefs for Monday Night Football. Donny has been making meals for the games based on the city the opponent is from. For Kansas City he did barbeque! He made ribs and brisket, then my mom made succotash (which is apparently a Kansas City vegetable dish). We didn’t have big pickle spears, so Donny cut up some little gherkins to go with the BBQ.
We were also trying to get rid of leftovers in the fridge so Donny set out German sausage and sauerkraut. Quite the random meal, but delicious!
7:00pm – Dessert:
For dessert my mom made a homemade banana cake. It was gluten free and made with banana buttercream frosting. My mom mixed ripe bananas into the frosting… I love it! It was really good.
Well that wraps up Mel’s Clean Eating Meals. Pretty simple eating, but somewhat healthy. I am getting better and better about eating healthy these days, but I still indulge occasionally.
