Did you have a good Halloween?! Did you remember to change your clocks on Saturday night/Sunday morning? I definitely like the “fall back” time change better than the “spring forward” time change. We were quite productive this morning at the ol’ Edson household.
I woke up about 7:00am, which happened to really be 6:00am! Donny bought a sous vide machine about a month ago but it wasn’t being released for a couple weeks. We finally got it delivered last week so all day yesterday we messed around with it. Ours is an Anova Precision Cooker and it is awesome! It hooks to the side of a pot and water circulates at the exact temperature you set it at. You put whatever you want to cook inside a plastic baggie and set it in the water. It then cooks that food evenly so it comes out perfect every time.
For example, we made two different types of chicken yesterday. We set the temperature to 145 degrees and when the water reaches that temperature you place the baggie in. The chicken will then cook until it is exactly 145 degrees throughout the whole piece. Amazing.
In this case, you would then pan fry the chicken quickly or grill it (which is what we did) so it became crisp on the outside and 165 degrees on the inside. It takes a while to do this. The chicken had to be in the water for 2 hours or more, but it is pretty hands off. Once you place it in the water it is just does its thing! Pretty handy.
Let’s go back to Halloween for a minute. Did you have a good Halloween? Did you dress up? I did not dress up. Donny did not dress up. Doug did not even dress up.
My grandparents sold their farm in Cheyenne county in September and they had a farm auction on Halloween. We went down there to support them and I also wanted to see how an auction like that went. We had a lot of fun.
We had fun and we also may or may not have come home with a 1973 Cadillac Sedan de Ville. Yes. Yes we did.
It had been my great grandpa’s car at one point and, for the majority of its life, was my grandpa’s car. My grandpa took great care of his vehicles and this Cadillac is still in amazing shape! It needs some work done to the brakes and little things like that but otherwise it is fantastic. We had talked about wanting it before the auction and then the bidding happened to go in our favor…so we bought it!
I think my entire family is glad that it is staying in the family. We’ll have a lot of fun with it.
So I love protein bites. They are super quick to make a require zero cooking. These are great because they can be enjoyed as a snack or are sweet enough to be a dessert! These Apricot Coconut Protein Bites are pretty sweet since they contain both coconut and dried apricots, which are naturally sweet.
I like to grab a protein bite before I head to the gym in the morning. I don’t like to eat too much, but want a little energy for my workout.

- 1/4 c vanilla protein powder
- 1/4 c oat flour
- 2 Tbsp coconut butter
- 1 Tbsp coconut oil, melted
- 1 Tbsp honey
- 1 Tbsp unsweetened almond milk
- 1/4 cup dried apricots, diced
- 1-2 Tbsp unsweetened shredded coconut (for coating)
- Combine the protein powder, flour, and coconut butter in small mixing bowl.
- Add the coconut oil, honey, and almond milk to the bowl and stir until well combined. Fold in the apricots.
- Roll 1 Tbsp of dough into a ball and roll in shredded coconut until evenly coated.
- Keep refrigerated for up to one week or freeze for up to 3 months.
