It was a great Sunday in the kitchen this week! Lots of meal prep ideas thrown out to get me through the week….

I managed to make breakfast, lunch, a couple snacks and a few dinner for the week all in one day! Meal prep keeps me on track in terms of healthy eating and I stress less, because the cooking is already done for me. I can literally grab and go if need be.

Day in the Life: Mel’s Clean Eating Meals is intended to show you the simple, yet healthy meals that I prepare throughout the day.

Meal prep honestly helps me a TON when it comes to healthy eating. I have clean eating meals already prepared for the day, which makes it easy to stick with a healthy diet.

I’ve been back to tracking my food intake each day with My Fitness Pal. The app is great and allows me to track calories that I consume throughout the day. I haven’t started tracking macros again, but I do watch my calorie intake and focus mostly on keeping my protein intake high. [Read more…]

December weekends get crazy for me! We do a month-long Christmas promotion for work and it takes a lot of time and energy. I didn’t have any time to shop or cook on Saturday, so I did it all on Sunday.

We also decided to go to Denver to pick up an elliptical that we bought for our basement (yay!) and Sunday was the only day we could do it. Instead of skipping meal prep, I decided to keep things REALLY easy.

A few years after I began weight lifting I got more serious about fueling my workouts. I started trying to get 40% of my calories from protein, which is not that easy to do!

I prefer to get as much protein as I can from whole foods, such as lean meats, eggs, yogurt, cottage cheese, etc. However, that isn’t always realistic.

Sometimes I need to use protein powder because it is quick and easy. Other times I need a little more protein added to the meals I already have. [Read more…]

My sister’s daughter, Bailey, was born exactly 3 weeks after Abby Jo. How cool is that? It is really fun watching them change and it will be fun to see them grow up together.

Anyway, we have a nanny to watch both girls but she doesn’t start until January. We are juggling the girls around for a month or so right now, so I took Monday off of work to watch both girls. They were nice to me and both slept at the same time, which allowed me to get a couple snacks and lunch in! So nice of them…..

In fact, my day of eating was pretty normal considering I didn’t go to the office.

Time for me to share my meal prep ideas for the week! Donny wanted a few things to take for lunches this week, so I made two different lunch-worthy dishes so that I could rotate what I had each day and so Donny could use the rest!

The last few months I’ve made the same lunch for each weekday, so it is nice to make this change! It takes a little more time but I made it easy by incorporating my slow cooker!

My slow cooker is one of my favorite small kitchen appliances and one of my favorite meal prep hacks if you are super busy. I’m starting to get back into a routine of meal prep and clean eating! It’s obviously more difficult with an infant. However, Donny & I are pretty good at figuring out how to make an easy, yet healthy dinner on a tired weeknight.

It’s Thanksgiving week so it will be a short one. I still work Monday, Tuesday, Wednesday & Friday, but we have weird schedules as we get ready for our big Christmas promotion.

I only needed lunch for three days and I wasn’t sure how often I’d be able to snack at my office. Since I am not 100% sure on the afternoon snack situation, I packed a few but also threw a couple Larabars in my purse just in case.

I thawed some frozen mixed veggies, heated an Uncle Ben’s Ready Whole Grain Medley package and diced/heated some chicken that I made during meal prep up. Threw all that in a bowl with some Mrs Dash Onion & Herb Salt-Free seasoning and boom, dinner! Plus it has 33g protein and only 350 calories
