Trail Mix Energy Bites

Did you enjoy the beautiful Colorado weather yesterday?!?! It was crazy nice out! I made sure to spend plenty of time outside enjoying it. I went to the grocery store first thing and then Donny had the grill started by the time I got back. He grilled up a bunch of food for me for the week and I got my meal prep out of the way before noon!

I took the dogs outside for a while. We think we found where Kevin got out, so we fixed it up over there and hopefully he can’t get out again. Both Saturday & Sunday I let the dogs out and didn’t have Kevin on a leash. I went out there with them and supervised, but he was still off the leash! [Read more…]

Peanut Butter & Banana Baked Oatmeal

First of all, BRONCOS ARE GOING TO THE SUPER BOWL! The game was a blast yesterday. It was quite intense the last 6 minutes…… Our defense played lights out and it was amazing!

We had a very busy weekend. We left work early on Friday and my surprise birthday evening started. Donny actually booked us a night stay at The Stanley Hotel in Estes Park. It is beautiful there! We had a great time. The hotel called a few days ahead of time and started these intimate dinners with alcohol pairings. They had an opening for us to do their whiskey pairing, which included a six-course meal with a different whiskey paired with each dish. Very cool! There were 20 people or so and the chef came to talk to us about each dish as well as the two whiskey experts for the hotel. Totally worth the money! We had a blast. [Read more…]

Unfortunately I woke up this morning and was not a millionaire. No winning the PowerBall for the Edson’s. Too bad. We would have done some fun things with all those dollar bills!

It is pretty fun to talk about winning. We did at work a little bit and my dad decided we would buy a company jet. Only makes sense. We would use to mostly to go to all the away Broncos games… not necessarily radio things. [Read more…]

It is Christmas week!!! I had a huge sigh of relief Saturday afternoon when our Christmas Capital of the Plains events wrapped up. It is fun to do the events but it is a month long promotion that takes a lot of time! It is nice to have it over.

Donny & I don’t get a ton of time to sit down and watch TV but occasionally we will. Recently I’ve been into the show How To Get Away With Murder. Have you seen it? It is on ABC, but the first season is on Netflix. It stars Viola Davis and I guess originally came out in 2014.

There is a lot going on and they go back and forth from current times, to things that happened months and weeks beforehand. If you’ve seen it then you know what I’m talking about, but they give you bits and pieces of what is happening yet won’t give the whole story. Breakfast is by far my favorite meal of the day. If I am feeling lazy about cooking dinner or nothing sounds good to me at that moment, then I inevitably choose to have BFD, aka Breakfast For Dinner. I thawed some frozen mixed veggies, heated an Uncle Ben’s Ready Whole Grain Medley package and diced/heated some chicken that I made during meal prep up. Threw all that in a bowl with some Mrs Dash Onion & Herb Salt-Free seasoning and boom, dinner! Plus it has 33g protein and only 350 calories
