Donny & I spent the night in Denver Friday night. Sadly, we are getting old! We had dinner at a fun restaurant that had a pretty extensive beer list. I had one called “Gore’d” and it was a pumpkin beer. What?!?! I love it. We then made it our mission to find the best pumpkin beer in Denver.
We were not too far from Denver Beer Company so we walked over there to try some different tasters. One thing to know about Denver Beer Company is that their beers are FULL of flavor. They happened to have three different pumpkin beers right now, and holy cow, they tasted so much like pumpkin! DBC sells tasters for $1 each, which is awesome if you want to try several different kinds. Donny & I shared the three pumpkin beers and a Graham Cracker Porter.
We decided to move on to the next spot and headed towards Union Station. We did not make it that far…this is where the “old” comes in. We stopped at a bar along the way so that we could use the bathroom. Donny got a drink at the bar and after about ten minutes, we looked at each other and said “let’s go back to the hotel”. It was only 9:30pm. Hahaha yikes. We use to be able to hang until at least 11:00pm!
If I am being 100% honest, I don’t mind being in bed by 9:00pm….even on weekends.
I love everything pumpkin…from beer to oatmeal to cookies. I also love no-bake cookies, so it was obvious that I should make pumpkin no-bake cookies. There are plenty of different recipes out there for no-bake cookies, but I wanted to make mine “clean”. These contain 6 ingredients and take only a few minutes to make….my favorite combination. They are similar to energy bites, and actually could be turned into energy bites with a couple modifications.
These no-bake cookies are full of protein and are great if you have a sweet tooth! I have mentioned this before but the protein powder that I use is pretty sweet already. If the type you use is less sweet, then you might add stevia, honey, agave, whatever sweetener you choose. You could also add mini chocolate chips or cinnamon chips to the recipe for some sweetness too!
I did want to mention the oat flour. If you do not have oat flour then you can make it. In fact, I have never actually purchased oat flour because is that easy to make. Place oats in a food processor and process until you receive a flour-like consistency….that is it! If you make your own oat flour then make sure you measure after it has been through the food processor.
- 3/4 cup quick cooking oats
- 1/2 cup oat flour
- 1/4 cup vanilla protein powder
- 1 tsp pumpkin pie spice
- 1/3 cup canned pumpkin (not pumpkin pie filling)
- 2 tbsp milk (I used unsweetened almond milk)
- 1 tbsp coconut oil, melted
- Combine oats, oat flour, protein powder, and pumpkin pie spice in a small bowl. Combine the melted coconut oil, pumpkin, and milk in another small mixing bowl. Mix wet ingredients with the dry ingredients and stir until evenly combined. Next, scoop or spoon out cookie-sized portions onto a plate or cookie sheet. Place in the refrigerator for 15 minutes. Enjoy!
