Zoodles with Marinara & Meatballs

Personally, I find it very helpful to have my meals prepared ahead of time to make sure that I eat healthy all week. My week can get crazy in a hurry, but it helps to have a healthy lunch, plus two snacks already prepared ahead of time so that I know I getting good nutrition and clean eating foods all day.

Time for another edition of Day in the Life: Mel’s Clean Eating Meals! I share with you everything that I eat and drink throughout the day from start to finish.

Clean eating meals don’t have to be hard to prepare or require weird ingredients. I aim to get a variety of fruits and veggies throughout the day, plus adequate protein and some whole grains. I am currently 20 weeks pregnant, so I’ve changed my diet just a little bit. I’m obviously eating more, but I’ve also been eating more carbs. So far I am trying to make those carbs either fruit or whole grains, so that I’m getting plenty of fiber in my diet. [Read more…]

Part of my weekend routine involves packing food for the week! I take my lunch and two snacks to work each day, so I make it all ahead of time to keep the week easy. I have a ton of meal prep ideas and try to vary them week to week.

A few of my go-to meal prep ideas include overnight oats (which I made this week), yogurt parfaits and a variety of cooked vegetables and proteins for the week.

This week I was crazy and made zoodles with meatballs and marinara, plus a clean eating chicken salad to spread on a bagel! Healthy and easy meals are what I prefer to eat throughout the day. [Read more…]

3-Ingredient Italian Turkey Meatballs

An important part of any healthy diet is protein. Your body uses protein to build and repair tissues and also to make things like hormones and other body chemicals. Protein is the building blocks of various parts of your body such as your hair and nails.

If you are exercising frequently then it is even more important to have protein in your diet to maintain muscle.

My diet is high in protein. I personally aim to get 40% of my calories from a protein source. This is a high percentage, but it helps maintain my muscle mass since I am weight training 4-5 days per week. [Read more…]

My eating schedule has been fairly similar to before. I’m having five clean eating meals a day, but (now that I am pregnant) I have also been needing to add in some snacks here and there! Even though I’m eating more I am still trying to eat a lot of fruits, vegetables, whole grains and lean protein.

Check out all the meals I ate through the day from start to finish. Water has been a small struggle for me lately. I have a hard time drinking as much water as I was pre-pregnancy. I know it is still SUPER important so I am trying to get as much as possible, but not quite as much as before. [Read more…]

My weekend wasn’t CRAZY busy, but I had some things to get done so I kept the meal prep ideas pretty easy this week!

We had a birthday party to be at Saturday afternoon so I did some meal prep when we got home, but finished it up on Sunday. Some weeks I can bust it all out at the same time, but others have to be split up. I’ve been doing a lot more of the splitting-it-up since I’ve been pregnant. Meal Prep Tools

Meal prep is a huge part of my weekly routine. I try to make all my lunches and snacks for the week at some point over the weekend. I use a variety of appliances of course, including my oven, stovetop, microwave, etc. However, I also use a variety of meal prep tools as well.

So what do I use the most? Each week is different in terms of what I make and how I make it. However, these meal prep tools are the ones I use pretty much every week, regardless of the menu. [Read more…]

Mel’s Clean Eating Meals have changed a little bit. Maybe you’ve noticed, but maybe not!

I announced it to my email subscribers last week and on yesterday’s blog post that Donny & I are having our first baby! It has been very interesting playing around with food preparation and healthy eating while pregnant. To be honest I’m loving it!

Honestly, I’m still eating healthy, clean eating foods as much as possible. However, I am definitely incorporating a few more “convenience” foods and eating a lot more! Plus, I’m indulging in a little bit more dessert than normal….. surprise, surprise! [Read more…]

Well my meal prep ideas lately have been not quite as intense as they were a little while ago. If you are signed up for my email list then you might already know…

Donny & I are having a baby! Yes, we are expecting our first child in September. We are really excited!  

I feel really good, but lately it has sounded better to have more “snack-like” foods in the morning and in the afternoon, rather than multiple meals throughout the day. Maybe you didn’t notice at all, but in the afternoon I’ve been skipping meals like chicken & veggies and opting for things like cottage cheese! I went through a stage where chicken didn’t sound appealing (it tasted fine, but it didn’t sound good if I just thought about it) so I just avoided having any type of meat in the afternoons. I thawed some frozen mixed veggies, heated an Uncle Ben’s Ready Whole Grain Medley package and diced/heated some chicken that I made during meal prep up. Threw all that in a bowl with some Mrs Dash Onion & Herb Salt-Free seasoning and boom, dinner! Plus it has 33g protein and only 350 calories
