Mel’s Clean Eating Meals look a little different this week! Here is what I ate throughout the day on Memorial Day. We got home from vacation in Illinois and I wanted to rest, so no BBQs or get-togethers.

Meal Prep Ideas

The weather is getting warmer and I’ve wanted to spend less time in the kitchen cooking over a hot stove. Lately I’ve been using more no-cook meal prep ideas for my snacks and meals!

This week I made a copycat Chick-Fil-A Grilled Market Salad, overnight oats, hardboiled eggs and some fruits and veggies. If you haven’t tried the Market Salad from Chick-Fil-A then try it next time you are there!

It combines blueberries, strawberries, apples and bleu cheese on the salad and is topped with chicken. It is my favorite! I decided to make a similar version this week during meal prep because summer fruits are getting cheaper and cheaper! [Read more…]

Mel’s Clean Eating Meals document everything I eat and drink throughout the day. I’ve definitely been more lax on my diet since I’ve been pregnant.

I try to eat healthy and clean 80% of the time, but I definitely allow a few more splurges in there (ice cream, chocolate, candy, etc). I’ve been keeping up with my workouts and eating healthy otherwise, so I don’t mind those occasional indulgences right now. [Read more…]

Mels Clean Eating Meals

Time to take a look at what my day looks like in terms of eating with Mel’s Clean Eating Meals. I’ve been a lot more hungry lately (I am growing a human being and all…), but my diet hasn’t changed too dramatically.

Before I was pregnant I would eat basically 5 smaller meals per day, which is similar to what I do now. I do have to mix in a few more snacks now and then to make sure I am not ravenous or worse, hangry!

I think it helps that I spaced my meals out like that before. My stomach can’t hold quite as much food at one sitting, yet I’m really hungry. Spacing out my meals throughout the day has helped me a lot. [Read more…]

I switched things up a little this week in terms of meal prep ideas. Mother’s Day was on Sunday so I squeezed in a little prep on Saturday instead. It doesn’t matter to me WHEN I make the food. I just like to find some amount of time to make it….

My Go-To Healthy Protein Choices

Healthy Protein Choices

Protein is a huge part of my healthy diet. I try to get quite a bit of it since I weight train 4-5 days per week. Protein keeps me full longer, especially when combined with complex carbohydrates and healthy fats.

Proteins are the building blocks of muscle and are found in pretty much every part of your body – your hair, skin, nails, etc. It is essential for your body to function and is key if you are exercising.

Sure, you could drink protein shakes with every meal and get the amount you would need for a day, but I’d rather mix in a few natural sources of protein. I opt for lean proteins that are as nutrient dense as possible (get more bang for my buck). [Read more…]

Time to take a look at what this week’s clean eating meals look like! I’ve been trying to eat 80% clean with a few more sweets every now and then. Some days I have no sweets (more like my diet pre-pregnancy), but other days I have them a couple times. Yes, sugar multiple times a day.

I thawed some frozen mixed veggies, heated an Uncle Ben’s Ready Whole Grain Medley package and diced/heated some chicken that I made during meal prep up. Threw all that in a bowl with some Mrs Dash Onion & Herb Salt-Free seasoning and boom, dinner! Plus it has 33g protein and only 350 calories
