Watermelon-Honeydew Salad

Watermelon-Honeydew Salad

Have you heard of Bountiful Baskets? It is a food coop program and you purchase a basket of fresh fruits and vegetables. You don’t know ahead of time what will come in the basket, but it is 50% fruit and 50% vegetables. I have bought one a few times now and I love them. In my basket I’ve had grapes, apples, oranges, pears, avocados, potatoes, squash, carrots, romaine, celery, green onions, bok choy, jicima, etc. [Read more…]

Booty-Burning Treadmill Workout

Booty-Burning Treadmill Workout

Yesterday at the gym I tried a new workout that I found at Bodybuilding.com. It is called Nicole Wilkins’ Best-Ever Butt Workout and, let me tell you, it was a doozy. I tried part of it a couple weeks ago, but it was a Friday morning and I didn’t have enough time to do the entire thing. I decided I needed to try it out on a Saturday when I had plenty of time to spend at the gym.

If you are not familiar with Nicole Wilkins, she is a four-time IFBB Figure Olympia champion, which is one of the biggest bodybuilding competition for professional bodybuilders! She is amazing – I follow her on Instagram and Facebook and she posts a lot of good information about lifting, food, motivation, etc.  [Read more…]

My Go-To Afternoon Snack: Cottage Cheese with Avocado & Tomato

June 12, 2015 by johnson_mel@hotmail.com

Cottage Cheese with tomatoes and avocado

Guess what tomorrow is? Friday yes, but it also happens to be the day that Season 3 of Orange is the New Black comes out on Netflix!!! I haven’t had a show lately that I was so addicted to that made me miss it when it wasn’t on. I seriously miss OITNB. The characters are fantastic and they have just the right mix of drama and comedy. Good work Netflix, good work. [Read more…]

Road Trip 2015: Part 2

June 8, 2015 by johnson_mel@hotmail.com

In case you missed it, Road Trip 2015: Part One can be read here.

IMG_0050(Chippewa Square: this square was the one filmed in Forrest Gump)

Savannah was only a couple hours from Augusta so we only had to make a few stops (yes, we made multiple in that two-hour time frame).  Once we hit Savannah we checked into our hotel, which was the perfect location! It was right on the river but faced downtown. We were in walking distance of everything we needed! We walked around for a little bit and decided to grab a bite to eat. It was fairly close to dinner time but we hadn’t eaten lunch so we shared a meal at this New Orleans-style restaurant called Huey’s on the River. We shared a shrimp po’boy that was smothered in gumbo. We had never seen that before! It also came with a side of red beans and rice. Donny was in heaven! Those are three dishes we love in the south… genius. [Read more…]

Road Trip 2015 – Part 1

June 5, 2015 by johnson_mel@hotmail.com

First Stop

Well Donny & I are both back to our normal routines (pretty much at least). I always have fun on vacations, but I am very much a routine kind of person and I am a home-body so I also enjoy coming home from vacations!

We had such a fun time on our road trip. We drove a total of 2,700 miles, leaving from Fort Morgan, Colorado and ending in Fort Lauderdale, Florida with a bunch of stuff in between! I am going to apologize now….I did not take very many pictures the first part of the trip but I did get a few on Instagram so I will share those (they aren’t great because they are iPhone pictures… but they are better than nothing). We are officially back home from our 8-day vacation. Holy cow, eight days is a long time to be gone! Donny & I had a blast and we are still married! We actually didn’t even fight….lame, right? We enjoyed each other the entire 2,700 miles. Not bad.

I have some pictures and I’ll tell you all about the trip later. Right now I want to tell you about Bikram Yoga. [Read more…]

Travel Snacks

Travel Snacks

Donny & I are going to test our marriage over the next week or so and drive together all the way to Naples, FL. Yes, just the two of us confined to a Chevy Malibu for a couple thousand miles. Yikes.

I personally think we will be fine, but ya just never know! We are going to stay with my cousin, his wife, and their beautiful almost-two-year-old daughter tomorrow night. Then Saturday we are going to head in the general direction of Augusta, Georgia. We are not 100% sure where we will stay Saturday night, but we were thinking Little Rock, Arkansas. I guess it depends what we want to do Saturday morning….we may want to hang out with the Robinson’s for a bit!  [Read more…]

Lower Body Blast

Lower Body Blast

I’ve been  needing some new motivation the past few weeks for my strength training. I have my go-to lifting routines and I rotate them depending on which body part(s) I want to work, but they were getting bor-ing.

Luckily I have bootcamp twice a week, so I don’t have to come up with those workouts on my own (thank you very much Jodi!). However, I try to do some type of strength training 2-3 more days throughout the week.  [Read more…]

Oatmeal Chocolate Chip Cookies

I just need to say this once and then move on. Holy rain. We have been getting hammered with rain here in northeast Colorado. I was glad to hear that the river did crest finally today, so Rainbow Bridge won’t be flooded (my way home!).  [Read more…]

Girl’s Trip 2015: Austin, Texas

May 7, 2015 by johnson_mel@hotmail.com

Group Pic Austin

We basically spent four days eating and drinking, which honestly, was expected.

My sister met Katie when they were in school at the University of Northern Colorado in Greeley. They were best friends right off the bat. Katie has a sister my age, Brandy. Brandy & Katie are just as close and Lindsey & I, which made it really easy for all of us to hang out in college! We had a ton of fun in college (I would drive to Greeley to see them) and we partied. A lot. [Read more…]
