Spinach Salad with Quinoa, Edamame, & Radish

August 6, 2015 by johnson_mel@hotmail.com

Spinach Quinoa Salad with Edamame- edit

This last Sunday my grandparents had all of us over for lunch because my cousin Latisha and her husband were in town. They recently moved to Fresno, CA and this is the first time I’ve seen them since the move! There were ten of us total and we had steaks, barbeque chicken, scalloped potatoes, baked beans, roasted zucchini and yellow squash, and salad. [Read more…]

Creamy Avocado & Orange Salad

Avo Orange Salad edit

Have you seen the movie Lawless? Donny & I started it last night as we were going to bed. It is by no means a horror film, but it is pretty intense and has some very graphic/bloody scenes. Those scenes get me pretty scared!

I had watched Lawless a couple years ago and it didn’t bother me. I actually really like movies like that and I actually do enjoy that film. However, for some reason I watched about 20 minutes of the movie before falling asleep and then I kept having bad dreams about it! I woke up a little scared and realize it was just because of the movie and go back to sleep. I did that probably 3-4 times last night…… Silly movie. I felt 6-years-old again watching Are You Afraid of the Dark with my sister in our living room growing up. Yikes. [Read more…]

Tart & Tangy Granola

The other day I was at Donny’s office and noticed he had a couple large piles of magazines in the corner. I figured they were mostly Golf Magazine, which I don’t need to read (I like golfing, but don’t need to read about it). However I was mistaken. It was a bunch of food magazines! I’m talking issues of Bon Appetit & Food & Wine from as far back as 2013. [Read more…]

Green Lake Wisconsin 2015

July 27, 2015 by johnson_mel@hotmail.com

Green Lake, WI

It feels like it has been forever since I have done a blog post…..maybe because it has been forever. Well, at least a week and a half!

I was pretty drained after Bobstock last week so it was good timing that we had planned a trip to Wisconsin! My mom has always wanted to rent a house by a lake in Wisconsin and have all her side of the family stay there and hang out. It worked out that we could all make it there this year, so 14 of us stayed in a house by Green Lake. [Read more…]

Back-Chest Supersets

 Back-Chest Supersets

Well Bobstock 2015 is officially in the books and it was a success! We had our best year yet. Warrant rocked the stage on Friday night and they were amazing to work with. They were really fun guys and want to come back! That’s always a good sign right?!?!

Lou Gramm was incredible – he still sounds great. I did not enjoy working with his tour manager one bit (that is putting it nicely). Lou was very nice himself, quiet but nice. His tour manager was not at all. No fun. However, once Lou performed and did amazing I decided I didn’t care that his manager was a jerk because I never had to see him again. I got to rock out to all my favorite Foreigner songs and that was enough for me! [Read more…]

It has been crazy busy at the office the last couple of weeks. We put on a two-day music festival once a year in Fort Morgan and bring in a band from the 80s. The past few years we’ve had Blue Oyster Cult, Little River Band, and Foghat come and play. The best part is that the entire event is free to the community! We don’t have a very big staff at Media Logic, so it is a lot of work. It is a really fun event, but a lot to coordinate. [Read more…]

New York City 2015

July 6, 2015 by johnson_mel@hotmail.com

NYC Collage

First of all, I am officially an owner of a brand new laptop! Walking in to the store Donny told me “if there is one you like that is only a couple hundred dollars over what you were thinking about spending, then just upgrade to it. You won’t regret it”. I thought that was good advice since I have a hard time making large purchases like this.

I walked in, went straight to the laptop area, and found someone to assist me. I had quite a few questions for them about purchasing a computer. The first thing she asked me was “what will you be using this for”. When I told her “editing pictures, but I’m not a professional photographer”, she immediately narrowed my choices down to three because she recommended one with a graphics card. I was glad that the choices were down to only three (helps my lack of decisiveness) but I did not like the prices of the three she recommended! All three were several hundred dollars more than what I had intended to spend. [Read more…]

Pistachio & Cherry Overnight Oats

Pistachio-Cherry Overnight Oats

We had a fantastic time in New York City! We left late Thursday night and I returned home on Sunday. To say it was a quick trip is an understatement. The food show started on Sunday, so Donny stayed out there a few more days and I returned home. I will get some pictures together and post about the trip later! Let’s just say it was a trip full of shrimp cocktail, hot dogs, lots of seafood, gigantic porterhouse steaks, and pizza! Not too shabby….. [Read more…]

Lemon-Blueberry Parfait

My senior year of college at CSU I got a job working at the bakery on campus. It was such a fun job! Most college students would have hated it because I had to be at work at 5am. Yes, I was a senior in college and woke up Monday through Friday at 4:00am… yet I loved it. My dad always told me that the morning was the best part of the day. I thought he was full of it my whole life, that is, until I starting working at the bakery. Turns out, I am very much a morning person! [Read more…]

5 Things I Am Loving Right Now…

June 23, 2015 by johnson_mel@hotmail.com

I hope everyone had a fantastic Father’s Day and a great first day of summer! We had a great day yesterday full of family and food (shocker!).

We went over to Donny’s parents’ house for lunch. Donny’s sister, Cathy, and her family (husband Jay and three kids Kyle, Elena, & Carlie) were in town from Tennessee and then Donny’s oldest brother along with his wife and daughter (Gemma is almost 3 months old now!) were all here to celebrate. Donny smoked brisket and ribs, then we had coleslaw, fruit salad, beans, potato salad, and four desserts!

We hung out for a while at the Edson house and then ventured over to my parents. My grandpa requested fish & chips for dinner, so Donny fried up some beer-battered cod and my mom baked french fries!  [Read more…]
