Raspberry Habanero Chia Jam

September 15, 2015 by johnson_mel@hotmail.com

Raspberry Habanero Chia Jam-EDIT

Two of the magazines that I have subscriptions to are Clean Eating magazine and Oxygen magazine (I also have a subscription to People StyleWatch… you know to cover my bases of food, fitness, and clothing).

I almost always get both Clean Eating magazine and Oxygen magazine on the same day, which is fine except I never know what one to start reading first! I’m telling you, the struggle is real (does this warrant a #thestruggleisreal ?!?). [Read more…]

Anything & Everything Friday – September 11, 2015

September 11, 2015 by johnson_mel@hotmail.com

Friday Pic

Anything & Everything Friday’s are something I hope to continue each Friday where I get to talk to you about, well, anything and everything I have on my mind. See what I did there?!

I have a lot of random information that I find throughout the week or short events/topics that I want to bring up, without writing about each one in a different post. It is also a way to make my random thoughts seem somewhat organized. Organized chaos, if you will.

Here goes…. [Read more…]

Banana French Toast Muffins

Banana French Toast Muffins-Edit

Donny & I had a pretty relaxed Labor Day weekend. We did quite a bit of yard work Saturday morning, which wasn’t too bad because once we got that done we didn’t have anything else to do all weekend! We made sure to get all the yardwork done first thing so we could play.

After we were done with the yardwork we went to Denver. We did end up getting pedicures (yay!) and then went to Biker Jim’s Gourmet Dogs for our date! It was awesome. We shared three dogs and a half order of the fried mac and cheese. We could have gone with two dogs and the mac and cheese, but we aren’t exactly the type to order responsibly. [Read more…]

Raw Black Bean Brownie Bites REVISED-edit

Well September is finally here… I completely lost August. I went from July 31st straight to September 1st. Or is feels that way. Labor day weekend starts tomorrow at 5:00pm (not that I’m counting….) and we actually don’t have a jammed-packed weekend of activities. [Read more…]

Spinach Artichoke Farro with White Beans & Roasted Tomatoes

September 1, 2015 by johnson_mel@hotmail.com

 Spinach Artichoke Farro-edit

I have a new appreciation for people that do manual labor for a living. Donny & I spent between 6-7 hours doing yard work in our backyard this weekend and most of that was spent tearing out this concrete slab we had in the back. The people that we bought the house from bred dogs and they poured concrete back there to put their dog kennel on. [Read more…]

Cashew-Millet Clusters

Cashew Millet Snacks-edit

I went and saw Straight Outta Compton this past week. I’m not going to lie — I loved it! I honestly expected to like it, but I really liked it! I didn’t now much about N.W.A. and I didn’t know much about Dr. Dre, Ice Cube, or Eazy-E in general.

I thought they did a great job finding actors that looked a lot like the actual characters did when they were young. If you have seen the movie or previews then you know what I’m talking about but, holy cow O’Shea Jackson Jr. looks A LOT like Ice Cube. I know, I know…it is his son but still! I don’t look THAT much like my mom or dad. It was unreal. [Read more…]

Peach Crisp for One

Peach Crisp for One-edit

I have to take a minute and brag about my husband. The last two years he has helped Brad, the dad of  few guys Donny went to high school with, to raise money for ALS (Lou Gehrig’s disease). You might remember last year in August when social media went crazy with the Ice Bucket Challenge….that was for ALS awareness. In fact, according to the ALS Association $115 million was raised in 2014 because of the challenge. Pretty impressive. [Read more…]

Glutes-Glutes-Glutes

I’m not going to lie….I have done this glute workout twice now and it made me super sore both times. I love training my legs and glutes. It makes me feel really strong and I dig it!

I have been working on my squat strength recently. I have pretty strong legs, but it takes practice to get the hang of lifting really heavy. I am still getting the hang of using heavier weights for fewer reps. I tend to keep my reps anywhere in the 10-15 rep range, but I have been experimenting lately with lifting even heavier for more like 5-6 reps. I have to play with it quite a bit to figure out what I can do, but guess what? [Read more…]

Chicken Cordon Bleu Grilled Cheese

August 16, 2015 by johnson_mel@hotmail.com

Chicken Cordon Bleu Grilled Cheese Edit

Donny & I like to try out new restaurants all the time. Doesn’t matter what type of cuisine or how fancy it is, we just really enjoy trying new places and seeing how creative the chefs can be these days. Denver has a million cool restaurants that have been around a while or some that are fairly new. It really is an up-and-coming food city in my opinion. [Read more…]

Savory Oat Cake with Fried Egg

August 13, 2015 by johnson_mel@hotmail.com

Savory Oat Cake

Breakfast is by far my favorite meal of the day. If I am feeling lazy about cooking dinner or nothing sounds good to me at that moment, then I inevitably choose to have BFD, aka Breakfast For Dinner. I have also been known to have BFD 3-4 nights per week when Donny is out of town. I just love breakfast foods! I crave them more than any other food. [Read more…]
