Anything & Everything Friday – January 8th

January 8, 2016 by johnson_mel@hotmail.com

Friday - Alarm

Seems like a long week since we had to work all five days! We got spoiled over the holidays with two 3-day weekends in a row. This week flew by but it still seems like we should have today off, right?!? Anyone else agree that not having to set an alarm for Saturday morning is pure happiness? Hahaha I love when I get to sleep in on a Saturday morning with no where to be. Awesome.

It is time for Anything & Everything Friday, where I discuss the random thoughts and happenings from the week. [Read more…]

Chai Spiced Oatmeal Cookies

Chai Spiced Oatmeal Cookie-edit

Donny had his four week check-up yesterday afternoon and the surgeon was really impressed with his progress! He was really excited with how well Donny has done and says he heals really quickly. Compared to 70-year-olds I am guessing that’s true…. just kidding Donny, you do heal fast.

He thought his scar looked 8-10 weeks old, not 4 weeks old. Crazy! Plus he got his knee to bend to 102 degrees, which is awesome. His goal is 135 degrees like his right knee. [Read more…]

Workout Wednesday – Legs – Quad Focused

January 6, 2016 by johnson_mel@hotmail.com

Legs - Quad Focused

I am really excited for this weekend because Donny’s office is having their company holiday party. They actually were kind enough to postpone it until after Donny was feeling better from surgery! They are having it at Guard and Grace in Denver, which is a modern steak house. The “Guard” in Guard and Grace is for Troy Guard, the owner of the Tag franchise through Denver (Tag, Tag Raw Bar, Tag Burger Bar, etc). [Read more…]

Kale Lasagna Roll Ups

Kale Lasagna Roll Ups-EDIT 2

Well the holidays are officially over. It was nice to have two 3-day weekends in a row. Now it is time to tackle 2016!

Do you have any New Year’s resolutions? I mentioned this Friday, but I don’t usually do resolutions at the New Year. I make goals throughout the year, but don’t typically start anything at the beginning of each year.

Jodi is challenging us this round of bootcamp to come up with two goals. One is health related in terms of exercise and eating. The other is a health goal as well, but a lifestyle goal. I have some in mind, but I need to sit down tonight or tomorrow and really think about what I would like to accomplish. [Read more…]

New Years Resolutions

Hello 2016! Did you ring in the new year with a bang?! I would venture to say that I did not. We were not awake at midnight (which I am not mad about), but we were up until 10:00pm to watch the ball drop in NYC! That’s not too shabby, right?

We had two different couples (plus two kiddos) come over and made fondue. Sweat pants or PJs were required. It was fantastic! We made a cheese fondue using jarlsberg and gruyere. We had bread, chicken sausage, apples, and a ton of different veggies to dip in it. Then we had a broth that had some green onions and peppercorns in it that you cooked small chunks of beef, chicken, and shrimp in. They were both fantastic!  [Read more…]

Workout Wednesday: Chest Supersets

Chest Supersets

The countdown is on to 2016. Holy cow, it is almost here. I’ve have a fantastic 2015 and I cannot wait to see what this next year brings! We have a lot of plans, yet minimal real plans….if that makes sense. There are plenty of things we want to do and a few trips we have planned (shockingly), yet we have a lot of things not set in stone. It will be a good year. [Read more…]

Mocha Chia Pudding

Mocha Chia Pudding-edit

How was your Christmas?! It was really nice to have a three-and-a-half day weekend. The best part is I get to do this all over again this week! We work today, Tuesday, and Wednesday. We have a half day on Thursday and Friday we get the whole day off for New Year’s Day. We also have our company retreat on Wednesday so we’ll all be out of the office starting at noon on Wednesday. I’m sure this week will fly by! [Read more…]

Anything & Everything Friday – December 25th

Christmas

Well Merry Christmas! I hope Santa was good to everyone. Hopefully you made the Nice List and didn’t end up with coal in your stocking!

We spent Christmas Eve with my family at my grandparents. We had a gift exchange amongst all of us and enjoyed three different kinds of soup. I made Donny’s aunt Judy’s Clam Chowder recipe that must be made every year and it turned out fantastic! I also made a batch of this Chipotle Chicken Soup. My grandma made a homemade chicken noodle soup. I loved all the soups but I basically ate dinner from the chocolate tray. Hahaha my aunt and uncle always make a ton of chocolate-covered everything and it is all so delicious! [Read more…]

High Rep Bicep & Tricep Supersets

December 23, 2015 by johnson_mel@hotmail.com

High Rep Bicep Tricep Supersets

Christmas Eve is tomorrow, meaning Christmas is in two days! Are you ready?!?!?! I wrapped presents last night, which I always love to do. I didn’t have very many but I made them count. I had a few that were oddly shaped and I didn’t want to put them in a box, so I basically threw wrapping paper on them and taped wherever! I’ll just tell everyone that Donny wrapped those…. hahaha just kidding Donny. I’ll take credit for them. [Read more…]

Oatmeal with Avocado & Fried Egg

December 21, 2015 by johnson_mel@hotmail.com

Oatmeal with Avocado & Egg-edit

It is Christmas week!!! I had a huge sigh of relief Saturday afternoon when our Christmas Capital of the Plains events wrapped up. It is fun to do the events but it is a month long promotion that takes a lot of time! It is nice to have it over.

Our ice sculpting competition was awesome. Most of the teams had competed before and I felt like the sculptures were better this year than any other year. Check out Christmas Capital of the Plains on Facebook for pictures of the sculptures. [Read more…]
