Even though I am not back to work yet (still a couple more weeks of maternity leave), I have been meal prepping a few things over the weekend.

My days can get crazy in a hurry, so I have been keeping healthy, cooked foods in my refrigerator. That way I have some easy lunch, dinner and snack options that I can throw together in no time! My meal prep ideas this week include a sheet pan chicken dish, plus some egg muffins. [Read more…]

It’s hard to believe that Abby Jo is now 5 weeks old! I’m back to working out a little bit, but taking it easy. I have been trying to eat a little more healthy, but I am definitely not being hard on myself if I don’t.

Timing for meals has been dramatically different now that I am on maternity leave. I’m not as hungry as I used to be because I am not doing much during the day.

I’m also pretty distracted. If Abby is awake then I want to hang out with her, but if she is sleeping then I try to get a few things done! Eating meals happens in those sleeping breaks, but they have to be quick and easy! [Read more…]

Meal Prep Ideas

This was the first week since we’ve had Abby Jo that I felt like I had some meal prep ideas. I did a little prep last week, but it was pretty disjointed. This week I busted out a couple things on Sunday so that we could eat healthy this week.

Both Donny & I are trying to eat somewhat healthier than we have the past few weeks. I definitely wanted some healthy foods already cooked so that I could make some meals in a short amount of time. I do feel like I accomplished that! [Read more…]

Grocery Shopping & Meal Prep Ideas

It has been four weeks since we brought Abby Jo into this world and I am finally meal prepping again! It looks a little different than before because I am still on maternity leave. No need for pre-portioned lunches or snacks yet!

We’ve had a ton of family and friends bring us meals so that we didn’t have to cook those first few weeks. It was awesome to have those available, but I am ready to get back to (somewhat) healthy eating! I cooked a few things to eat for lunches and dinners. [Read more…]

Mel's Clean Eating Meals

Mel’s Clean Eating Meals have changed quite a bit over the last few weeks! At least this week they are a little bit more healthy…

I haven’t lifted weights or done much exercising (besides going on walks outside) since a week before Abby Jo was born. It has definitely changed my appetite and the way I eat.

First of all, I have been eating breakfast later in the morning because I’ve been sleeping later since I am doing 2-3 feedings at night. I also have not been expending as many calories since I haven’t been at the gym. Both of those factors have me eating less frequently and less in general.

We welcomed our beautiful daughter, Abby Jo, into the world on September 13th, 2017. Everything went great and she is one healthy baby!

Threw all that in a bowl with some Mrs Dash Onion & Herb Salt-Free seasoning and boom, dinner! Plus it has 33g protein and only 350 calories
