Day in the Life: Mel’s Meals [#19]

Today’s Day in the Life: Mel’s Meals post is a little different. This is actually everything I ate and drank on Monday, which I had off for Memorial Day. I was going to wait and document Tuesday, but I thought it was a good way to show you how I eat when I’m not working 8:00am-5:00pm. This was pretty typical of how I eat on the weekends, especially Sunday’s since it is my meal prep day and I did meal prep on Monday. I didn’t have any BBQs or get-togethers, so I ate everything at home.

You’ll notice that not only are my meals a little different, but the timing is VERY different. I slept in and then lounged around before eating breakfast. I also didn’t workout very first thing, so you can see how I plan meals around my workouts when they are in the middle of the day too. Grocery Shopping & Meal Prep – Week 4

Grocery Shopping Meal prep

This week was a little different in terms of meal prep and grocery shopping. I did a little shopping Friday night and the rest Saturday. Donny is gone all week so I didn’t need too much food. I also prepped my meals on Monday, rather than Sunday since I had Monday off for Memorial Day. I only needed four days worth of meals so it cut back on what I prepared significantly.

I did manage to make some extra vegetables and a little extra chicken to keep on hand for dinners. I still have a lot of eggs so I may or may not be making breakfast for dinner several times this week…… [Read more…]

Coconut Cashew Energy Bites

Every couple years my parents go on a trip with my dad’s side of the family. They go with my dad’s two sisters, their husbands, and my grandma and grandpa. Over the years they’ve traveled together to Washington D.C., Oregon a couple times, and on a cruise to Alaska. This year they went on a 10-day cruise through the northeast part of the United States.

I typically go to my grandparents house for lunch, unless I have an appointment or meeting. However, with them gone I’ve been on my own. I don’t mind eating alone, but it takes some getting used to. I wasn’t quite sure what to do with myself those first few days because my sister was gone and so was Donny. One day I ended up going to Lindsey’s to eat lunch and read. Date Night at Bones

Date Night at Bones

My husband loves to spoil me. He knows me quite well, so he knows HOW to spoil me.

Donny had to do a Cajun boil on Saturday so we needed to go pick up all the food Friday night. I suggested we go to Bones, a restaurant we’ve been wanting to go to in Denver for a while. Of course, I had to twist his arm but he humored me.

We got everything for the Cajun boil first, then had a few minutes before our reservations so we stopped by Vitamin Cottage (Natural Grocers). He needed to pick up some samples for work and I love grocery shopping. I do enjoy Vitamin Cottage and this one was huge! He found what he needed and I, of course, found goodies of my own! Can you imagine finding this carrot in your garden? That’d be awesome.

Yay it is Friday! Even better, it is Friday before a 3-day weekend! Boomshakalaka is all I can say. Not a ton going on this weekend, which is nice. We have date night tonight (see below), we are doing a Cajun boil tomorrow night and then I’m planning to go with my sister up to Denver to do some mad shopping! I am in need of new sandals, shorts, and some tops for warmer weather. Donny will be gone Sunday & Monday so I’ll have lots of time to meal prep and create recipes. Ayo, sounds like a good weekend to me! What are your plans?

I’m not going to lie, I had some gooooood eats in this Day in the Life: Mel’s Meals post. Donny is out of town and yet I still threw together a delicious and healthy dinner!!! I managed 5 1/2 liters of water (one right away then 4 1/2 throughout the workday). Grocery Shopping & Meal Prep Week 2

Time for my weekly Grocery Shopping & Meal Prep list. Donny was gone on Sunday so meal prep was entirely up to me! I survived, no big deal.

I bought a Bountiful Basket this week so I picked that up on Saturday. It FULL of fruit, plus I bought two fruit add-ons! I never go grocery shopping before I pick up my basket so I don’t buy stuff at the store that I’m already getting in the basket. That’d be silly! I usually pick up my basket and go immediately to the store for all the other weekly staples and random fruits and veggies that I didn’t get. [Read more…]

Blueberry Chia Parfait

Blueberry Chia ParfaitDonny had a catering job to do this last weekend that was quite over due! The couple had purchased a dinner for 10 people catered by Donny four years ago. Yes, FOUR YEARS AGO. Donny’s schedule is kind of crazy and there had been twice that we’d booked it and then something came up with us or them and we had to reschedule. We finally got it done and it was a blast.

Donny made a bunch of amazing food including chipotle sweet corn chowder, a salad with a crispy egg, homemade pasta with sausage and kale, New York strip and scallops. It was a ton of food and all of it was awesome! [Read more…]

Here is this week’s Day in the Life: Mel’s Meals post. If you want to know how I prepared some of these foods then make sure you check out yesterday’s Grocery Shopping & Meal Prep post.

Clean eating doesn’t have to be difficult, but it does require some planning. I try to prep everything for the week sometime throughout the weekend. If you don’t have time to do that, then find another way to keep healthy foods cooked and ready to eat. For example, if you are cooking a pork chop or chicken breast for dinner then cook several of them and keep them in the fridge to grab in a pinch. If you want to eat brown rice for dinner one night then make 2 cups instead of 1/2 cup and use it for lunch or dinner the next day. [Read more…]
