Chocolate Covered Strawberry Overnight Oats

June 20, 2016 by johnson_mel@hotmail.com

Chocolate Covered Strawberry Overnight Oats

When the weather warms up, I don’t want a hot breakfast as much as something cool or cold. I drink more smoothies in the summer and choose hot oatmeal more in the winter. However, I will eat eggs year around, regardless of temperature.

Last week I had either overnight oats or chia pudding for breakfast every single day. I had packed a frittata for my mid-morning meal so I chose to use more yogurt and oat-based items for breakfast. Plus, I’d wake up in the morning craving overnight oats, so it made sense to eat them all week! Most of the time I made them the night before so they could sit overnight, however one morning I did made chia pudding before going to the gym and it was still good when I got back! [Read more…]

Anything & Everything Friday – June 17

June 17, 2016 by johnson_mel@hotmail.com

Friday

Happy Friday!!! I am all about balance. There is room in life to workout and eat well. There is also room to go pant-less and eat whatever the heck you want! I try to exercise daily and eat well 80% of the time. I love food and sweets so sometimes that is what wins! How do you find balance?!? Pants? Or no pants?

Time for Anything & Everything Friday, where I discuss five random topics of my choosing. I get emails and read articles about health all week long so I pick some of my favorites to share with you. I also find random articles that have nothing to do with health and I will occasionally share those as well.

This week I have some budget-friendly vacation destinations, ways to add more protein to your diet and some travel snack ideas.  [Read more…]

Day in the Life: Mel’s Meals [#21]

June 16, 2016 by johnson_mel@hotmail.com

Mel's Meals

Here is my Day in the Life: Mel’s Meals for this week. I did not have a yogurt parfait for my mid-morning meal. You’re welcome. I am trying to mix it up a little more for you (and myself, really). Make sure you read through to the end to see what we had for dinner too. It was awesome! Donny kept saying “we should make these more often”. I’m in, I would gladly make them more often….check it out below.

Day in the Life: Mel’s Meals posts are meant to show you that healthy eating and eating clean doesn’t have to be difficult and time-consuming. I literally throw breakfast together in 5 minutes sometimes and we rarely have weeknight dinners that take more than 20 minutes to prepare.

If you want to know more about how I prepared a certain food then check out yesterday’s Grocery Shopping & Meal Prep Week 6 post. If you have questions beyond that then feel free to ask! [Read more…]

Grocery Shopping & Meal Prep – Week 6

June 15, 2016 by johnson_mel@hotmail.com

Grocery Shopping & Meal Prep

Grocery Shopping is one of my favorite things to do, I won’t lie. I really enjoy it. I know a lot of people HATE grocery shopping and find it difficult to decide what to buy for a clean diet. Well I am here to help! Each week I document what I purchase so you can get a good idea of what I buy when I grocery shop. I also explain how I prep my foods each week, so that I have healthy and convenient foods available. Clean eating doesn’t have to be difficult, but it definitely takes some planning. Let me know if you have questions about what I buy or where I purchase it. [Read more…]

Peanut Butter Chocolate Chip Oatmeal Cups

Have you seen the new Reese’s Peanut Butter Cups that have the Reese’s Pieces IN the Peanut Butter Cup?!?! Yes, a giant Reese’s Peanut Butter Cup stuffed with Reese’s Pieces. Mind. Blown.

I read about this a while ago and was so excited to try them! They haven’t released these Reese’s Stuffed with Pieces, but they were handing out samples at a food show that Donny went to in late May. He brought some of the samples home with him and they are amazing. I mean, how could they NOT be amazing?! [Read more…]

Friday

This has happened to me a hundred times…..what about you?!

Happy Friday!!! This week flew by, it was crazy. We have Bobstock, our biggest event of the year, coming up four weeks from today! Holy sh*t, is what I say. We had meetings every day this week and I think I have meetings involving Bobstock of some sort every day next week. It is getting real….

By the way, Grand Funk Railroad is our headliner for Bobstock 2016, so if you are in the Fort Morgan, CO area then make sure you are at City Park on Saturday, July 9th to see them perform FOR FREE! It is going to be awesome.

Anyway, enough shameless plugs from me…. time for Anything & Everything Friday where I share five random topics with you each week. Today I’ve got articles about washing workout clothes, how to make the perfect salad, and some Father’s Day gift ideas! [Read more…]

Day in the Life: Mel’s Meals [#20]

June 9, 2016 by johnson_mel@hotmail.com

Mel's Meals

Time for my most recent Day in the Life: Mel’s Meals post, where I share with you everything I ate and drank for an entire day. If you have questions about how I prepared some of these foods then feel free to ask. Also refer to my post Grocery Shopping & Meal Prep Week 5.

I think my favorite meal from Monday was my mid-morning snack. Yogurt parfaits are my “thing” right now. I go through different stages where I eat the same foods all the time. I get on an egg-kick, then an oatmeal-kick, etc. Right now I am on a yogurt-kick. 2% Greek yogurt is where it’s at too…. I don’t know if I’ll ever go back to nonfat. [Read more…]

Grocery Shopping & Meal Prep – Week 5

June 8, 2016 by johnson_mel@hotmail.com

Grocery Shopping & Meal Prep

I was up rather early on Sunday morning. I woke up to let the dogs out (yes, I admit it – it was me…..) and I couldn’t go back to sleep. I had a busy day ahead of me and wanted to get my meal prep done, so that might have been part of my restlessness. I was going to a baby shower and wanted to make the mother-to-be some gluten free chocolate chip banana bread! She has to eat gluten free for health reasons so I like baking things for her. It gives me a reason to bake AND it lets me practice with different gluten-free ingredients. Plus, she loves treats!

I made that first thing, then started prepping veggies so they were ready when Donny was ready to cook. It is so nice to have him grill for me because it keeps the kitchen a lot more clean and it allows me to get other things ready while he is cooking outside. I definitely prefer it, but maybe that is because then it means he is actually home! Either way…..

Here is my Grocery Shopping & Meal Prep list. Tomorrow I will have a more detailed account of what I ate in my next Day in the Life posts. I can already tell you that my mid-morning snack in bombdigity! [Read more…]

Lemon Pepper Chicken Thighs

June 6, 2016 by johnson_mel@hotmail.com

Lemon Pepper Chicken Thighs

I want to talk about these Lemon Pepper Chicken Thighs, but first I want to talk about Top Golf.

We did end up meeting up in Denver to go to Top Golf and it was awesome! I highly recommend it.

It is a really big place with three different levels of area to hit golf balls. Each group has their own bay and you hit out into what looks like a normal driving range, but with targets set up in different spots. Each ball has a tracker in to so it knows where you hit and how many points you get. The point is to get the closest to the “pin”, but there are places around the pin that earn you points as well. Each target area is color-coded based on difficulty and each game has you hit at different targets. You get to choose what type of game you play.

It is sort of difficult to explain, but it makes a ton of sense when you get there. The best comparison I could think of was an electronic dart board. You can pick different games that you want to play and it scores how/where you throw based on what game you are playing. It is similar to that. [Read more…]

Friday

Happy Friday! Similar to last week, this MIGHT be me tonight. Not sure. I love lounging on Friday nights rather than getting crazy. I also love wine. Works perfectly.

While I am feeling all lovey-dovey, I love short weeks…. four days are so much easier to get through than five, right?! Time for Anything & Everything Friday where I share with you five different topics of my choosing. Today I’m sharing with you the item I purchased shopping last weekend (hello summer shorts!), Top Golf, and the benefits of spicy foods!  Here we go…. [Read more…]
