3rd Anniversary Celebration – Stoic & Genuine

Stoic & Genuine

Our 3rd wedding anniversary was last week. We celebrated the day of by going to Taquiera San Miguel, the food truck that catered our wedding. We ate tacos and drank margaritas in the comfort of our home. It was perfect.

We celebrated a little more a couple days after that. Friday night we went to Denver to eat at Stoic & Genuine, a seafood restaurant in Union Station. We had been dying to go there, but never found the right occasion. It isn’t the most fancy restaurant we’ve ever been to, but definitely higher end.

We got to town and check into the hotel. We splurged and decided to stay at The Oxford Hotel, which happens to be the oldest hotel in Denver. It was really nice and really cool! They still give you actual keys for the rooms and they come with giant tassles on them for you to carry. They let you leave the key at the front desk if you are going out so you don’t have to carry it around. It was actually pretty neat to have a real key, rather than than the normal plastic cards these days. [Read more…]

Donny & I had a wonderful anniversary celebration in Denver over the weekend. We ate at Stoic & Genuine, a seafood restaurant inside Union Station and stayed at The Oxford Hotel, which we found out is the oldest hotel in Denver! I took pictures of our room and of dinner so I’ll share those with you in a later post.

Anything & Everything Friday – July 22nd

Every week I say something about “this week has flown by” or “woah, this month is gone already”. However, I am not feeling that way right now. I won’t lie, this week seemed to take for-ev-ver (spoken Squints-style from The Sandlot). I felt like it should be Thursday or Friday and it was really only Tuesday. That was when I KNEW it was going to be a long week……

Regardless, I made it through the week (it wasn’t a bad week, just slow)! I am ready for a date night tonight for our anniversary and a hopefully (somewhat) relaxing weekend. Day in the Life: Mel’s Meals [#26]

Day in the Life: Mel’s Meals is a weekly post where I get to show you everything I eat and drink throughout the day. I want to show you that simple, healthy meals are possible using clean eating ingredients. They don’t have to be difficult recipes or made with weird ingredients. Most of my meals are made with whole foods and very few foods that have been processed. Occasionally I’ll incorporate “convenience” foods, which is perfectly fine every once in a while.

I track everything that I eat in terms of macronutrients. I aim to get 40% of my diet through protein sources, 30% through carbohydrates and 30% from fat. I use My Fitness Pal to track these values and have the app set to those goals. When I prepare my meals for the week I prepare 3 full meals ahead of time. I use breakfast and dinner to “fill in the gaps” in terms of rounding out macros. I also aim for 30 grams of protein at each meal throughout the day in order to keep a steady influx all day long.

I definitely like eating 5 small meals per day with a pre-workout snack in there. Each meal throughout the day is anywhere between 250-400 calories. This eating schedule works for me, but yours might be different! Don’t worry about, just do what works for you.

So I consumed 1 liter of water right away, then another 5 liters throughout the day. I did not do a great job drinking water on Sunday, so I could definitely tell on Monday that I needed a little extra H2O.

Grocery Shopping & Meal Prep

I had the whole weekend to grocery shop and meal prep, which has not been the case the last couple weeks! I enjoyed being able to do both tasks whenever I felt like it.

We were in Denver Friday during the day so I had Donny take me by Trader Joe’s. I wanted to grab a few things, but mostly to stock back up on their cashew butter! I’m addicted. So I bought a few things Friday then did a big trip on Saturday.

I made some freezer-meals for my friend Kortni, who is having her baby any day now. I bought a lot of food at the store (including everything for those meals), but this was everything that was for our house. [Read more…]

Chunky Monkey Energy Bites

Last weekend was really busy with Bobstock, while this weekend was not busy at all! I knew I’d be exhausted all week and we were lucky enough to not have anything come up that we had to do over the weekend.

We went to a wedding Thursday night in Golden, Colorado (congrats again Chelsea!) and stayed the night in Denver that evening. Both Donny & I took Friday off from work and hung out in Denver. It was great! Definitely what I needed after the last couple weeks.

Donny had to go to Chicago for work early Saturday morning so I was on my own all weekend long. I gave the doggies some much-needed attention and I also spent quite a bit of time in the kitchen – two of my favorite things! [Read more…]

Day in the Life: Mel’s Meals [#25]

Day in the Life: Mel’s Meals shows you everything I eat and drink throughout an entire day. I start at 4:30am with what I eat before I head to the gym and finish with either dinner or after-dinner dessert.

I track my macronutrients so occasionally I explain why I chose to eat certain foods. I try to spread my protein out throughout the day, without consuming too much more than 30 grams of protein per meal. I think that helps give me a steady supply of energy throughout the day to avoid an afternoon slump.

In terms of water, I consumed one liter of water right when I woke up and five more throughout the day. I drank a ton of water on Friday & Saturday, but also sweat a lot (it was in the upper-90s or 100 both days). I didn’t drink nearly enough on Sunday, because honestly I slept most the day! Grocery Shopping & Meal Prep posts are designed to help with grocery shopping when you want to eat a clean diet. I buy mostly whole foods, but also combine that with convenient food for fast, healthy meals. I also show you how I prepare my foods to create a week’s worth of clean eating meals.

This week was a bit different because of the crazy weekend. I was busy all day Friday & Saturday with Bobstock, so I went grocery shopping on Sunday. I didn’t have much energy to be honest, but I had planned for that and didn’t buy too much or get too wild with meal prepping. I knew I wanted to make a raw veggie salad and I’d frozen a bunch of prepared meat to use for this week since I didn’t think I’d have enough energy to cook all day.

I also bought a couple non-clean-eating foods to enjoy on Sunday. I have been craving ice cream for the last couple weeks and I figured there was no better time to enjoy it than after an extremely long and stenuous weekend, like Bobstock weekend! The sad part is that I tried some of it, but then forgot to eat a real serving of it on Sunday night! We had Bobstock, our company’s biggest event of the year, this last weekend! If you are not familiar, it is a two-day music festival with three stages so that there is constantly music playing throughout the day. This year we brought in 17 different bands from around the area with Grand Funk Railroad as our headliner for Saturday night. The best part about Bobstock is we keep it completely free of charge! We have great sponsors from the community who help us out, but the work is done entirely by our Media Logic staff.

I am very proud of the event and this year was fantastic! We had beautiful weather, which is always a concern. It was really hot both Friday & Saturday, but Saturday night was gorgeous. You could see the stars as Grand Funk was playing!!! It was awesome. [Read more…]

I thawed some frozen mixed veggies, heated an Uncle Ben’s Ready Whole Grain Medley package and diced/heated some chicken that I made during meal prep up. Threw all that in a bowl with some Mrs Dash Onion & Herb Salt-Free seasoning and boom, dinner! Plus it has 33g protein and only 350 calories
