Day in the Life: Mel’s Meals [#29]

Mel's Meals

I had another interesting day of eating this week in terms of Mel’s Meals. Nothing too weird, but definitely a little different. Donny & I had another dentist appointment to go to get our teeth fixed up, so my eating schedule was thrown off a little bit. I still managed to eat whole, clean eating foods. The only difference was the timing and some of the foods I chose.

I did end up eating a lot of yogurt, which I didn’t realize until I was putting together this post. I had a little in the morning, a little mid-afternoon and then had more for dinner. Most of the time I try to avoid that, but I didn’t do too much meal prep this week. [Read more…]

Grocery Shopping & Meal Prep – Week 14

Grocery Shopping & Meal Prep

Most weekends I spend a couple hours in the kitchen. I either work on new recipes, prepare food/meals for the week or Donny & I have someone over for dinner. Either way, I get a lot of cooking time in. However, this weekend was definitely not that way. We are hardly home at all! Those few hours we were home we actually decided to take naps….

Both Donny & I had a busy weekend, but it was full of fun things going on. Our company BBQ was on Friday night, then we both played in a big two-day golf tournament Saturday & Sunday. I knew I would be tired after being outside in the hot sun golfing, so I planned on making meal prepping super simple. Knowing there was a full weekend ahead, I actually went grocery shopping on Friday during my lunch hour instead. I knew I wouldn’t want to go once the tournament was done, which ended up being a good decision. [Read more…]

Certain recipes stick out in my mind when I think about my childhood. For example, my mom’s green chile enchiladas, my grandma’s cinnamon rolls and my dad’s pancakes are the first ones that come to mind.

My mom’s banana bread however gets it’s own category in terms of memories.

Well you made it to Friday!!! I had a crazy busy week and am glad it is over. We are playing in a big golf tournament this weekend. You should see my husband… he is like a kid in a candy store thinking about this tournament. I have never played in it, but he says it is the best. We’ll see I guess.

Time for Anything & Everything Friday where I share five random topics with you. They are generally health related, but I promise nothing! Today they ARE health-related. Grocery Shopping & Meal Prep – Week 13

Grocery Shopping & Meal Prep

This week I made a pretty big trip to the grocery store. I only went to one, Safeway, but made it count! Donny is doing a weight loss challenge and wanted me to stock up on lots of fruits and vegetables! I am not sure if this is enough or too much or where we will stand at the end of the week, however I’ll see what we have left on the weekend and make adjustments. Donny has never complained about having to eat healthy foods for breakfast and dinner, but I love that he is eating more fruits, veggies and whole grains during the day! Maybe my healthy eating is rubbing off on him….. what do you think?!?

Preparing different foods or entire meals doesn’t have to be difficult or take a ton of time. I cook and package up the majority of my meals for the week on Sundays, but you wouldn’t have to go that route. Even just preparing a few different foods to keep in the fridge helps on a busy weeknight. Make a batch of quinoa or brown rice. Grill or bake some chicken breasts. Roast a batch of various veggies. Simple things like that make it easy to throw together a healthy meal in a matter of minutes. I like to cook a bunch of vegetables ahead of time in order to add them to my eggs in the morning or throw them in a bowl with some chicken for a 5-minute dinner. Whole Wheat Waffles

Whole Wheat WafflesAre you a waffle person? Or a pancake person? Some people prefer one over the other. I love both, but if I have to choose then I will go with waffles 9 times out of 10.

I love how crispy waffles get compared to the fluffiness of pancakes. Plus, each little indention allows a small pool of syrup to settle in….yum! [Read more…]

My meals this week have a little more variety in terms of vegetables. I eat a lot of the same foods each week, but this weekend we went to a couple farmer’s markets in Denver and picked up some cool produce (tri colored green beans?!?! Awesome).

Here is everything I ate and drank throughout the day. I drank 5 liters or so of water (one when I first woke up and four more throughout the day). Drinking water is really important and can help with weight loss. I suggest staying well hydrated!

Grocery Shopping & Meal Prep – Week 12

Grocery Shopping

We stayed in Denver Friday night to celebrate our anniversary. Check out yesterday’s post about our 3rd Anniversary Celebration at Stoic & Genuine.

We woke up Saturday morning and walked the half a block to Union Station to get coffee and share a pastry. Turns out they have a farmer’s market set up in the courtyard of Union Station on Saturday mornings. I LOVE farmer’s markets! We bought some very different produce – some that I’ve never seen before!

Donny also started a weight loss challenge with some people he works with in the industry. I haven’t been making him too much extra food because he’s either been gone or eating out for lunch. He is going to start taking his lunch everyday so I prepared a lot of extra food for the week. I’ll have to play around with grocery shopping to figure out how much to buy and now prepare! I thawed some frozen mixed veggies, heated an Uncle Ben’s Ready Whole Grain Medley package and diced/heated some chicken that I made during meal prep up. Threw all that in a bowl with some Mrs Dash Onion & Herb Salt-Free seasoning and boom, dinner! Plus it has 33g protein and only 350 calories
