Sunday did not include very much meal prep this week. I generally take a few hours on Sunday to make a lot of my meals for the week. However, this last weekend we went to Omaha, NE to see Donny’s brother and his family. We got back late Sunday so I didn’t cook much of anything. Instead, I planned on making two recipes that required ZERO cooking. Check those “recipes” on yesterday’s post Grocery Shopping & Meal Prep Week 21.

Grocery Shopping & Meal Prep – Week 21

Grocery Shopping & Meal prep

Donny, his parents & I took a road trip to Omaha, NE to see Donny’s brother and his family! We had a great time and got back to town Sunday, just in time for the second half of the Broncos game. We listened to the first half on the radio and watched the other half on TV at my parent’s house.

I knew that we would be back late Sunday, so I didn’t want to have to go to the grocery store and make food once we got back. Instead, I went to the grocery store on Friday morning before I went to work and then cooked very little Sunday night. Turns out, the grocery store is EMPTY at 7:20am on a Friday! Plus, I only needed produce because I had most of the meat already. Another thing that helped was that I planned a couple meals that required zero cooking to make things easy!

Anything & Everything Friday – September 30th

This hit home for me based on the amount of Mexican food I at last night. Nom nom nom. It is my favorite and I have a very hard time resisting chips & guacamole! My sister, Donny & I went to see Sully (I love Tom Hanks) and had dinner beforehand. Look at me going to a movie on a weeknight!

Day in the Life: Mel’s Meals [#35]

Sharing Mel’s Meals with you has been fun for me. It has helped me focus on eating a variety of foods and changing things up from week to week. Before, I would generally switch proteins, but not much else. Now I am trying new recipes to keep my meals from being BORING!

I made two new recipes from the October issue of Clean Eating magazine and enjoyed eating them this week. Donny & I also made pasta for dinner along with pesto shrimp… yum! Clean eating doesn’t have to be super intense or difficult. I try to stick to whole foods that have had minimal processing. My diet consists (especially recently) of a ton of vegetables, plus fruits, meats, eggs and whole grains.

Grocery Shopping & Meal Prep – Week 20

Grocery Shopping & Meal PrepI have been trying to mix things up a little bit with my meal prep. Some for your sake, but some for my own sake! It takes a little bit more time, but the meals I end up with aren’t quite as boring each day. Plus, I love being in the kitchen!

Don’t get me wrong, I can eat meat and veggies all day long, but I have been experimenting with a few things. I love going through Pinterest so I might as well actually USE some of the recipes that I am pinning, right? If you see any recipes that you think I should make then feel free to send them over! Honstly, I enjoy making new recipes and trying new flavor combinations, so it is fun for me.

I made a large grocery haul, not because we were out of food but because Safeway had some great sales on meat! I decided to stock up while the prices were low, which led to a large grocery bill. The good thing is that my grocery bills the next couple weeks with be quite small! [Read more…]

How To Make Roasted Acorn Squash

Roasted Acorn Squash

Acorn squash is one of the many winter squashes that I look forward to eating when fall hits! Spaghetti squash, butternut squash and of course acorn squash are some of my go-to squash for when the weather cools down. Roasted acorn squash is super easy to make, but acorn squash can be microwaved or steamed as well.

Like other winter squash, acorn squash is low in calories, but is also high in fiber and potassium. Half a cup of cooked acorn squash is only 57 calories, yet has 4.5 grams of fiber! [Read more…]

Happy Friday! Today is the first Friday of FALL!!! I love the fall, especially in Colorado. We don’t always get very much fall, because it feels like it goes straight from summer to winter. I try to take it all in while we have it!

Grocery Shopping & Meal Prep

Saturday morning I had some down time and decided to plan a couple meals for the week. I decided to make zoodles, because it has been a while since I’ve prepared zucchini that way. While looking at Pinterest I also found a healthy recipe for cauliflower “fried” rice!

I went grocery shopping Saturday morning at Safeway then made all my food on Sunday. Donny was busy with a two-day golf tournament so no grilling this week! I made everything for the week inside with my stove and oven. I managed just fine and have some great meals ready for the week. [Read more…]

I thawed some frozen mixed veggies, heated an Uncle Ben’s Ready Whole Grain Medley package and diced/heated some chicken that I made during meal prep up. Threw all that in a bowl with some Mrs Dash Onion & Herb Salt-Free seasoning and boom, dinner! Plus it has 33g protein and only 350 calories
