What is better than having chocolate in the morning?! Having TWO forms of chocolate in the morning! That is exactly what you’ll get with this recipe for Double Chocolate Protein Oats. Plus, you’ll only need a few ingredients and five minutes to make this healthy breakfast recipe.

Happy Friday! My grandparents are in town this weekend from Illinois! They got to town on Tuesday and leave Monday. We are going to spend some time with them this weekend, but keep it pretty casual. Donny & I are going to have them over for dinner tomorrow to try out some recipe for the upcoming museum dinner! My parents and my sister & Cody will join us so it should be a good time. I get to test out my sticky toffee pudding recipe again and gives these guys instant diabetes! It is good, but rich!

Time for Day in the Life: Mel’s Meals, where I document everything I eat and drink throughout the entire day. I plug everything into my My Fitness Pal app to track calories consumed and also macronutrients consumed (aka protein, carbs, fat).

Sometimes my plate looks extremely full and other times it doesn’t look very full at all, so I’ve decided to start adding how many calories are in each meal (or a rough estimate). I’ve had people tell me that they could never eat this much, but it is a lot of vegetables! I stick to around 1,600 calories per day and yes, it is a lot of food…a lot of healthy food! [Read more…]

Grocery Shopping & Meal Prep

My weekend was less than eventful and I am really happy about it! Donny was out of town (boo) and I didn’t have any plans (yay). Saturday morning I hung out at the house and my sister came over for coffee. I made it to the grocery store and to the gym then had zero plans the rest of the day. My mom & I ended up going on a walk and I spoiled the pups all evening long! A perfectly relaxing day.

I went to Safeway for all my groceries this week. My list consisted of mostly vegetables and a couple other items for recipes I wanted to try. I’ve been trying to incorporate new recipes into my meal prep so that I don’t get bored eating and you don’t get bored reading about my eating!  [Read more…]

How to Make Cauliflower Rice

Cauliflower Rice

Cauliflower rice is a fun and different way to eat the vegetable. At only 25 calories per cup, it is low in calories, high in vitamin C and vitamin K, plus provides 2.5 gram fiber!

It can be eaten raw, roasted, sautéed, blanched and even grilled. However, “ricing” it is one of my favorite ways to prepare it.

Happy Friday! I don’t have very many plans for this weekend so does anyone want to partake in a “juice cleanse”?!?!?

Donny is out of town and I have zero plans. That’s right, zero. I am actually looking forward to a relaxing weekend. Hopefully I’ll get some cooking, reading, exercising and meal prep in! Sounds like a pretty good weekend to me (minus the whole no-husband thing). Do you have any big plans?

I had quite a bit of time to try some new recipes this last weekend while meal prepping. Beef & cabbage stir fry, Brussels sprouts-kale salad with honey mustard dressing and slow cooker Mexican chicken were all on the menu this week! They were all easy to make and delicious to eat…..my favorite combination!

Grocery Shopping & Meal Prep

Donny & I went to a wedding Friday in Estes Park, CO and stayed the night. I dropped Donny off at the airport in Denver Saturday afternoon and decided to go grocery shopping while I was up there. At first I thought I’d stop by a Sprouts or Trader Joe’s, but I didn’t want to have to go back into the city so I stopped by Target in Brighton, CO.

First of all, going to Target is dangerous business in my world! I spend WAY too much money on things I only kinda sorta need…. I’m not the only one that is like that, right?!?!

I didn’t do too bad in the grocery department, but I won’t discuss the other areas! In the end I didn’t end up too terribly bad (aka broke), but I’m glad I don’t go there very often. [Read more…]

How to Prepare Blanched Broccoli

How to Blanch Broccoli

One of my new favorite ways to cook broccoli is to blanch it. Blanched broccoli is cooked for less time compared to other methods, which leaves more nutrients in the vegetable.

First of all, it takes very little time to prepare. Second of all, it leaves the broccoli tender, bright in color and requires zero oil. Roasting and grilling broccoli is a great way to cook broccoli, but it does take some of the color out of the vegetable. However blanching vegetables, including broccoli, make them quite vibrant.

So how do you prepare blanched broccoli? It is incredibly easy and ensures the vegetable remains clean eating friendly. [Read more…]

I thawed some frozen mixed veggies, heated an Uncle Ben’s Ready Whole Grain Medley package and diced/heated some chicken that I made during meal prep up. Threw all that in a bowl with some Mrs Dash Onion & Herb Salt-Free seasoning and boom, dinner! Plus it has 33g protein and only 350 calories
