Grocery Shopping & Meal Prep

My grocery shopping schedule was the same this week, but I ended up doing all of my meal prep on Saturday, rather than Sunday. Donny & I planned to be bums on Saturday and then go to Denver on Sunday to get some things done.

Originally Donny had planned to get his wisdom teeth out on Friday so we’d left the weekend open in case he was in pain or on painkillers. His appointment was rescheduled for early December, so we had a free weekend! I did my typical Saturday routine of grocery store and gym, then meal prepped the rest of the day. [Read more…]

How to Bake Chicken Breast

Chicken is one of the most popular meats and it provides a ton of protein. Cooked chicken provides 25-30 grams of protein for 3.5oz of meat, while only providing around 1 gram of saturated fat. It is incredibly lean and is perfect for a clean eating diet.

Happy Friday folks! I am ready for a very relaxing weekend. Donny scheduled to have his wisdom teeth out today, but they had to reschedule. We’d purposely planned nothing for the weekend in case he was in pain and now it is completely wide open!!! This rarely happens in our world…..

Mel’s Meals this week fell on Halloween. However, don’t get too excited….I factored in eating several pieces of candy and then got distracted with friends that night and never had any! Don’t worry, I made up for it the following night. Holy chocolate. Yum!

We had some friends over and Donny was heading home from Denver so he picked up (spoiler alert) Chick-fil A. I apologize ahead of time for the shitty picture! Not my best job, that’s for sure, but the food was bombdigity.

Grocery Shopping & Meal Prep

We took it pretty easy in terms of food preparation this week. Donny had a catering job to do on Saturday, so I knew I wouldn’t want to spend too much time in kitchen on Sunday.

Meals this week were kept pretty simple. They consist of a few different types of meat and lots of vegetables…my favorite! I did all of my grocery shopping at Safeway this week. The kitchen was in use on Saturday, so I took pictures at the store!

Spaghetti squash is one of my favorite foods. It is one of those vegetables that seems like it will leave me hungry an hour later. However, I am always surprised how filling it is!

Happy Friday! I am really ready for the week to be over. What about you?! The weather is suppose to be beautiful this weekend in Colorado and it is Halloween weekend! Are you dressing up? We have a catering job this weekend and then will hand out candy on Monday, but I don’t think we are going to dress up. Maybe we’ll dress the pups up! What are your Halloween plans?!

Day in the Life: Mel’s Meals is intended to show you that clean eating meals don’t have to be difficult to put together or consist of weird foods. I try to keep things pretty simple, even though I’ve been branching out a little in terms of making recipes during meal prep. These new recipes help to keep me from getting too bored with my meals.

I started documenting how many calories go along with each meal. In the past, I’ve had people mention how much food I consume. I know, I do eat a lot! However, my calories are not outrageously high because I am eating a lot of fruits, vegetables, lean proteins and complex carbs. I aim to keep meals between 250-350 calories.  [Read more…]

Grocery Shopping & Meal Prep

Donny is home from over a week of work travel, so my grocery shopping trip was a bigger than the last couple weeks! I can deal with a bigger grocery trip because Donny was kind enough to grill for me. I (almost) forgot how nice it is to have a couple things cooked outside of the kitchen! It goes a little quicker if he is cooking outside while I am cooking inside.

I found one recipe online and one in a magazine this week that I wanted to try out for meal prep. Pinterest is a fantastic place to hunt for recipe ideas! I rarely make the recipe exactly the way it written. Most of the time I take a not-so-healthy recipe and make it clean eating friendly. Other times, I only have certain ingredients on hand so I’ll make a couple substitutions. [Read more…]

I thawed some frozen mixed veggies, heated an Uncle Ben’s Ready Whole Grain Medley package and diced/heated some chicken that I made during meal prep up. Threw all that in a bowl with some Mrs Dash Onion & Herb Salt-Free seasoning and boom, dinner! Plus it has 33g protein and only 350 calories
