Grocery Shopping & Meal Prep – Week 28

Grocery Shopping & Meal Prep

Each week I try to come up with new combinations of clean eating foods to take for meals. I generally cook a variety of vegetables for the week, then mix and match those with protein and sometimes a carbohydrate. I used the Farro Harvest Salad from earlier this week for meals which has me feeling more and more like fall!

Here is everything that I bought at the grocery store and also how I prepared the food to make clean eating meals for the week. Thanksgiving is tomorrow so I only needed to pack four days worth, rather than five. [Read more…]

Farro Harvest Salad

Farro Harvest SaladSome of my favorite foods are in season in the fall. Brussels sprouts, sweet potatoes, winter squash, carrots, kale, apples, pears, figs, etc. So I decided it would be brilliant to combine several of my favorite fall foods into one salad. The result? Farro Harvest Salad.

Farro is an ancient grain that is high in fiber, magnesium and iron, plus is surprisingly high in protein compared to other grains. It does contain gluten, so if you are gluten-free then you could substitute quinoa or brown rice. [Read more…]

Happy Friday! Which part of the pie are you?!?! I am fairly conscious while eating dinner, but once dessert is out all bets are off!

Turkey Day is officially less than one week away, so I thought I’d make this Anything & Everything Friday post completely Thanksgiving related! Alright, honestly it is mostly about food, but THANKSGIVING food! I also received our Thanksgiving-themed BarkBox, which is awesome.

Most of my Mel’s Meals posts are weekdays that start with me getting up at the butt-crack of dawn for my early morning workout. However, this particular morning I didn’t get up for a workout. Whaaaaat? No workout? That’s right, no workout.

Here’s the thing, Donny fell and twisted his knee while we were on vacation so I took him up to see his knee surgeon in Loveland, CO. His appointment was at 8:20am, so we left the house before 7:00am. I didn’t want to be late so I skipped my workout all together (Donny’s knee ended up being fine, by the way). [Read more…]

Grocery Shopping & Meal Prep

Grocery shopping and meal prep this week was SUPER simple! I’m talking it took me one hour max. We were in New Orleans, LA from Friday night to Tuesday around noon, so not a ton of time for my usual shopping trip and meal prep schedule.

No worries though, I planned to make a few of my go-to meals for the week that are easy to make and take very little time. I only needed to make three days worth of meals so that helped too.   [Read more…]

Energy Bites

Energy bites are one of my favorite snacks! First of all, they are bite-sized, which I am a sucker for! Plus, they are SO easy to make. They can be made in a million different ways using a variety of ingredients. Customizable recipes, such as one for energy bites, are the best!

Energy bites come in really handy as a light, pre-workout snack for early morning exercises like myself. You could take a few with you to work to eat mid-morning or mid-afternoon. Some recipes are sweet enough that you could enjoy them after dinner as dessert! [Read more…]

Day in the Life: Mel’s Meals [#41]

I generally try to mix my meals up throughout the week so that I don’t get bored. However, this week I ended up making the same things for meals #3 & #4. I won’t lie, I’m not mad about it because they are delicious! During meal prep, I made some quinoa-pinto bean stuffed bell peppers and they are fantastic!

In terms of water, I drank A TON of it! I generally drink 5-6 liters of water per day. I start with one whole liter first thing, then drink 4-5 throughout the workday. Sunday night we had takeout ramen and I’m sure it was full of sodium! It didn’t make my hands swell, but I was so thirsty the following day. I ended up drinking 6-7 liters of water throughout the day. Honestly, I couldn’t get enough of it….. [Read more…]

I thawed some frozen mixed veggies, heated an Uncle Ben’s Ready Whole Grain Medley package and diced/heated some chicken that I made during meal prep up. Threw all that in a bowl with some Mrs Dash Onion & Herb Salt-Free seasoning and boom, dinner! Plus it has 33g protein and only 350 calories
