Meal Prep Ideas

After 5+ weeks of having no kitchen we are finally back in business! The funny thing is that we have a functional kitchen again, yet both Donny & I will be gone during the week so we didn’t use it to meal prep!

I don’t need any real meals for the week due to lunch meetings and vacation, so I packed several snacks instead. This week’s meal prep (if you can call it that) required about 15 minutes! Hahaha I enjoy cooking and cannot wait to get back at it next week. [Read more…]

In my opinion, pork is a very underrated meat option. Sure you have the fatty varieties like bacon and sausage, but there are lean options as well! My task for you this week is to incorporate some type of lean pork into your meal prep plan!

Obviously pork is high in protein, which is important to a clean eating diet.  Pork is also a good source of vitamins B12 and B6, AND one 3oz serving provides 1/5 daily recommendation of zinc. [Read more…]

Clean Eating Meals

Just like any recipe, some clean eating meals can be time-intensive and require a million ingredients! Other clean eating meals can consist of throwing five healthy ingredients into a bowl and calling it lunch! Either way, I like to have a clean diet.

My meals have been slightly different the last few weeks. I have been “snacking” more and not making as many meat-veggies meals. Mostly due to a lack of kitchen right now (we are remodeling) but also because I’ve been craving snack foods like cottage cheese and yogurt! Meal Prep Ideas

Donny & I are having our kitchen remodeled right now. It has been going on for the last four weeks or so, which means we’ve been without a kitchen for about a month! Honestly it hasn’t been too bad. We have all of our appliances installed now, so we actually got to do some cooking during meal prep!

Personally, I think meal prep helps me to eat healthy and clean. My meals are already prepared for the day, so I don’t have to grab unhealthy, convenient food because I’m starving. I take some time over the weekend to pack snacks and meals to last the workday. I have a million meal prep ideas depending on the time I have and what I feel like eating that week. [Read more…]

Week 8 of the 12 Week Meal Prep Series is all about beans, beans the magical fruit. The more you eat, the more you toot!

All kidding aside, beans are extremely healthy for you! Beans are loaded with protein AND fiber, hence the reference to farting!  I eat a lot of fruits and vegetables throughout the day and I try to get at least 25g fiber. Sometimes I fall short on fiber, even with all those fruits and veggies. However, if I have a serving of healthy beans throughout the day then I blow my 25g goal out of the water! [Read more…]

I will warn you. Mel’s Clean Eating Meals is quite random this week. I still haven’t been tracking macros and my eating has been slightly off due to our kitchen remodel. Who knows, but either way I had chocolate AND carrot cake in the same day, yet don’t feel bad about it. They were both delicious!

I found myself to be more hungry on this particular day, so I had small snacks randomly spread out. Rather than five meals, I had three meals and four snacks! It wasn’t a bad way to go, just different from my normal routine. What do you prefer? Large meals? Or small meals with snacks?! [Read more…]

Meal Prep IdeasIt was nice to actually go grocery shopping this week and prepare a few interesting meals! My meal prep ideas lately have been quite limited due to a lack of kitchen. Donny & I are in the middle of a kitchen remodel so I’ve been sticking to raw foods or foods I can cook in the microwave. Honestly, it hasn’t been that bad!

Meal prep is very important to me. I like knowing that I have healthy, convenient meals ready for me throughout the day. If I didn’t meal prep, I’d be more likely to stop by a fast food joint or other restaurant, plus I’d grab not-so-healthy snacks along the way too. Making all my food over the weekend takes a little planning and some extra time, but it is completely worth it to me. [Read more…]

Day in the Life: Mel’s Clean Eating Meals [#54]

Clean Eating MealsDonny, myself and four other couples went down to Texas to spend a weekend. It was a ton of fun, but we go back fairly late on Monday night. I didn’t have much time to meal prep, but I managed to throw together a little food to last the day!

I typically eat five small, clean eating meals per day, but this week it is more like 3 bigger meals and 2 more snack-like meals. I don’t mind this structure, but prefer to have 250-300 calorie meals spread out throughout the day. It is only one week, so I can manage! [Read more…]

Meal Prep Ideas

Grocery shopping was non-existent this week, but meal prep was not! Donny & I were on vacation Friday through Monday, plus we are remodeling our kitchen so we have NO kitchen. Both of those factors led me to skip grocery shopping.

Rather than skipping both shopping AND meal prep, I made a simple lunch for the week and packed two convenient snacks. I’d prefer to have fresh meals to eat all week, but sometimes life happens and I don’t get that luxury. [Read more…]

I thawed some frozen mixed veggies, heated an Uncle Ben’s Ready Whole Grain Medley package and diced/heated some chicken that I made during meal prep up. Threw all that in a bowl with some Mrs Dash Onion & Herb Salt-Free seasoning and boom, dinner! Plus it has 33g protein and only 350 calories
