Clean Eating Meals

I won’t lie, I didn’t feel THAT great throughout the day but I still managed to eat healthy, clean eating meals. Honestly, meal prep is the only way that I continue to do that!

Without meal prep, I’d most likely grab unhealthy foods to make me feel better. I’m thinking chips, candy, pop, etc. Instead I ate what I had packed which included lean proteins, healthy carbs, veggies and fruit. [Read more…]

Personally, I prefer to make all of my healthy meals to enjoy throughout the week over the weekend. I have a million meal prep ideas and rotate those depending on what I am craving and what foods I have on hand that week.

Healthy Enchilada Casserole

One of my favorite cuisines is Mexican. I love rice, beans, cheese, green chile and tortillas plus all the seasoning combinations! The only bad part about Mexican food is that it can be high in calories and high in fat. However to get my Mexican food-fix, I made a healthy enchilada casserole that is perfect for meal prep!

To save a little labor I made a casserole by layering the ingredients, rather than rolling them all into a corn tortilla. [Read more…]

My clean eating meals this week were super simple, but I have not been bored at all! During meal prep I made an enchilada casserole and it has been wonderful to eat for lunch this week. I also forgot how much I like hardboiled eggs! I’ve been having those as a snack and they are filling, yet low in calories.

Meal prep helps me to eat clean all day long without having to cook every meal. In fact, the only thing I cooked all day was the eggs at breakfast! I keep healthy foods in the fridge ready-to-eat in case I get home late or am too tired to cook. [Read more…]

Each week varies in what I prepare during meal prep. Sometimes it is based on the amount of time I have available, but sometimes it is based on motivation. I have been wanting to try new recipes and meal prep ideas the last few weeks without spending the whole day in the kitchen.

Mel’s Clean Eating Meals is a weekly post where I show you what I eat through the entire day. I try to eat healthy foods from start to finish, but I do throw in an occasional treat (especially lately).

Meal prep ideas can be as intense or as easy as you need them to be. I wasn’t wanting to get too wild and crazy in the kitchen this week, so I prepared TWO no-cook meals to last me the week. I made No-Cook Burrito Bowls for lunch and overnight oats  for a mid-morning snack! So simple, yet so delicious.

Some weeks I feel like cooking for a couple hours and preparing fun meals, but other times I want a relaxing Sunday with extra time for Mad Men! As you will soon find out… this was a Mad-Men-marathon type of weekend! [Read more…]

Meal Prep Burrito Bowls

I personally love taking a few hours over the weekend to prepare lunch, snacks and a few extra foods to use for breakfast and dinner throughout the week. It saves me time and keep me from eating out every day!

Meal prep helps me eat clean meals all day long and I’m not having to hit up vending machines or convenience stores because I am starving. Instead I have a lunch bag full of foods to get me through the day.

I thawed some frozen mixed veggies, heated an Uncle Ben’s Ready Whole Grain Medley package and diced/heated some chicken that I made during meal prep up. Threw all that in a bowl with some Mrs Dash Onion & Herb Salt-Free seasoning and boom, dinner! Plus it has 33g protein and only 350 calories
