Day in the Life: Mel’s Clean Eating Meals [#85]

Mel's Clean Eating Meals

Mel’s Clean Eating Meals have changed quite a bit over the last few weeks! At least this week they are a little bit more healthy…

I haven’t lifted weights or done much exercising (besides going on walks outside) since a week before Abby Jo was born. It has definitely changed my appetite and the way I eat.

First of all, I have been eating breakfast later in the morning because I’ve been sleeping later since I am doing 2-3 feedings at night. I also have not been expending as many calories since I haven’t been at the gym. Both of those factors have me eating less frequently and less in general.

I’ve been trying to keep the food that I do eat a little more healthy this week, but I’ve also been going for convenience too!

9:00am – Breakfast:

I’ve been sleeping later now with Abby Jo, since she wakes up a few times in the night. It is very unlike me to eat breakfast at 9:00am on a weekday!

Anyway, I DID eat breakfast at 9:00am. It consisted of 1 large egg + 3 egg whites scrambled with salt and pepper and topped with Cholula. I made a breakfast sandwich using a whole wheat English muffin, provolone cheese and part of the egg scramble. I ate the remaining eggs plain. On the side I had some fresh cantaloupe.

1:30pm – Lunch:

Lunch was leftovers. We’d gone to a local Mexican food restaurant for my brother-in-law’s birthday and I had some steak, chicken, pinto beans and corn tortillas leftover so I made some tacos for lunch. I added some salsa that we had in the fridge.

2:00pm – Snack:

I guess you can call this a “snack” or maybe it should be dessert. Donny had bought a watermelon the week before and I finally got around to slicing it up! Luckily it was still good…. as I was cutting it up I had a few pieces!

5:30pm – Snack:

A little before dinner I started getting hungry so I ate some veggies with hummus. I had some cucumber, snap peas and baby carrots to go with the Roasted Pine Nut Hummus.

6:30pm – Dinner:

Donny’s mom brought us over some beef stew. It had green beans, sweet corn, carrots and potatoes in it, plus big chunks of beef. It was really good!

Along with the beef stew Donny griddled some of the whole wheat bread that she’d made us too. He buttered both sides and put it on the griddle to crisp up. It is SO good. I had it last week with some chili and this week with some stew! Yum.

Well that was everything I ate for Mel’s Clean Eating Meals. I’ve been trying to lay off the sugar a little more than previously. During my pregnancy I got into a candy and dessert habit! I’m still eating dessert occasionally, but I’m not eating as many sweet throughout the day.

I thawed some frozen mixed veggies, heated an Uncle Ben’s Ready Whole Grain Medley package and diced/heated some chicken that I made during meal prep up. Threw all that in a bowl with some Mrs Dash Onion & Herb Salt-Free seasoning and boom, dinner! Plus it has 33g protein and only 350 calories
