Well I’m back to share my meals with you! A disclaimer though, they are not quite clean eating meals this last week.
We welcomed our beautiful daughter, Abby Jo, into the world on September 13th, 2017. Everything went great and she is one healthy baby!
Our friends and family have been amazing over the last week and a half. They’ve brought us meals to eat so that we didn’t feel like we had to cook with a brand new baby in our lives. It’s been wonderful.
Here is a look at my day of eating. It is quite different from my pre-pregnancy meals and even different from my pregnancy meals! Turns out I have something to do other than eat, which is to hang out with Abby Jo. By hang out, I mean stare at her adorable face while she sleeps.
2:00am & 6:00am – Snack:
Abby Jo needed to feed throughout the evening and mama was hungry too! I had half a banana at the 2:00am feeding and the other half at the 6:00am feeding.
10:00am – Snack:
I slept in then took the dogs for a walk. My mom came over for some Abby-time, so I took advantage and walked the dogs. I wasn’t super hungry, but I wanted a little something. I’d made a batch of chocolate chip banana muffins and had one before the walk.
The recipe I used was from Amy’s Healthy Baking, but I used chocolate chips instead of pecans in her Ultimate Healthy Banana Nut Muffins.
***I’m not sure if Doug was more interested in the muffin or in going on a walk… either way he is cute!
11:00am – Brunch:
After walking the dogs I made breakfast, which was more of a brunch based on the time and what I ate!
One of our friends had made a Mexican casserole with ground beef, tortillas, black beans, corn, green chile, etc. It was SO good! Donny talked me into frying an over-easy egg and putting it on top. It was legit!
I suggest making the Healthy Enchilada Casserole and putting a fried egg on it!
3:45pm – Snack:
My appetite has been weird lately. I don’t really notice that I’m hungry, but I know I need to eat.
I made a turkey wrap as a snack with a whole wheat tortilla, turkey, Havarti cheese, yellow mustard, mashed avocado and dill pickles. The mustard and pickle combo is so good!
Along with the wrap, I also had some red grapes.
6:30pm – Dinner:
Another friend of ours brought over some chili, tortilla chips and cheese. Donny put a few chips in the bottom of the bowl, sprinkled a little cheese in there and topped it with the chili. Super simple and really tasty!
Along with the chili, he griddled some homemade whole wheat bread with butter. Donny’s mom made the bread and it is really good! She said she uses honey which adds a touch of sweetness. Heating it on the griddle makes it crispy on the outside, but still soft on the inside. Yum!
8:30pm – Dessert:
My schedule has been much different on maternity leave. I sleep in so I don’t go to bed quite as early. My dessert was a serving on Blue Bell Cookie Two Step, which has chocolate chip cookie dough and Oreo-like cookies crushed in it. Pretty dang good! I finished the pint, which was almost a perfect serving.
Well that was everything I ate throughout the day. Again, not exactly clean eating meals but it could be worse.

Over the next week or so I’d like to start getting back into making clean eating meals. I definitely need some vegetables in my life again!
