Here is another Day in the Life: Mel’ Meals post. I document everything I eat for the day (and non-water beverages). If you have questions about how I prepared something or where I bought something then let me know.

I have decided to decrease my calorie intake slightly and do less cardio (more details at the end). I only cut out 150 calories and kept my macro percentages the same, but it always takes me a couple days to get in the habit of how much food to pack for each meal. Here is everything I had on Monday.

4:30am – Pre-workout

Day in the Life: Mel’s Meals posts are to show you what I eat throughout the day. I try to mix things up when I am doing meal prep but tend to gravitate towards the same foods. I like protein and I like mixing up my vegetables. I have oatmeal in different forms each week, but have it almost every day. Sometimes I get crazy and try new combos or techniques. This week I chose to track what I ate on Monday. Donny went grocery shopping on Saturday for me so I didn’t have to go Sunday. He bought a ton of veggies and I was not mad about it! He grilled all the veggies this week including green beans, Brussels sprouts, zucchini, eggplant, and carrots. I made a grilled veggie salad for dinner Sunday night and it was fantastic! First of all, happy St. Patty’s Day! Any plans for today? Any green beers being consumed?!?! I think I had plenty this last weekend…..

Even though it was only three-ish days of vacation I definitely gained a couple pounds! I ate very different than my normal (even compared to other vacations) and drank a lot more (emphasis on a lot). I have been trying to keep it under control now that I’m back and get rid of those couple pounds. I’m not too worried honestly and have been drinking a lot of water to help with it too. This week’s Day in the Life: Mel’s Meals post is everything I ate Tuesday of this week. I did really well and hit my macros almost exact. Then about 8:00pm I started getting hungry…. after analyzing if I was truly hungry or just bored/dehydrated I decided it was best to have a small snack before bed. I am actually glad I did. Here is everything I ate this last Tuesday. We had a great meal prepping session on Sunday (very different from the Sunday before that when we lost Kevin). Donny wanted a bunch of veggies to grill for the week…. so I bought a bunch of veggies. We also picked up some cod fillets at Sam’s Club a few weeks ago and I’ve been enjoying those for a few meals each week. We are out now so looks like we need to make another trip! Today’s Day in the Life: Mel’s Meals post is what I ate Monday. I had a weekend FULL of cheat meals and didn’t track any of my food Saturday or Sunday, which is rare for me to skip both days. I definitely felt like I needed to get back to clean foods and so I am being extra careful this week. Splurges are fine occasionally, but need to balanced back out at some point. Today was a little different in terms of meals. Our hospital does a health fair each year and they do early blood draws the week prior from 6am-8am. It is really affordable compared to the price of regular blood work. Donny & I have done this the last few years and I like comparing my results from year to year. 

Anyway, we had to get our blood drawn Tuesday morning so I couldn’t eat anything when I got up.

Time for Day in the Life: Mel’s Meals! Everything I eat is not a fancy recipe… in fact, I am pretty basic.

Here is everything I ate and drank yesterday. I never add my water intake, but I am pretty good about drinking water. Yesterday I consumed 6 liters of water (one right when I woke up, plus 5 more throughout the day at work). I pee a lot. And I mean a lot. [Read more…]

I thawed some frozen mixed veggies, heated an Uncle Ben’s Ready Whole Grain Medley package and diced/heated some chicken that I made during meal prep up. Threw all that in a bowl with some Mrs Dash Onion & Herb Salt-Free seasoning and boom, dinner! Plus it has 33g protein and only 350 calories
