Day in the Life: Mel’s Meals is a weekly post showing you exactly what I eat throughout the day. You do not have to eat just like me, but I want to show you some of the healthy, clean eating meals that I throw together. I honestly don’t spend a lot of time cooking. I cook breakfast and dinner if I have the time, but sometimes it is a throw-it-in-a-bowl-and-call-it-dinner type of meal (aka my dinner below).

Clean eating and choosing healthy foods doesn’t have to be difficult or time consuming, so I am here to help give you ideas for quick meals that are good for you. Check out yesterday’s Grocery Shopping & Meal Prep Week 7 post to see a little more detail about how I prepared these foods.

I am not kidding when I say I love to talk about food! Please feel free to ask me anthing… whether it be about my pre & post-workout supplements or how I cooked those dang Brussels sprouts to make them delicious, feel free to shoot me an email, Facebook message, or comment below.

Alright, well here is everything I ate and drank on Monday. I ended up with 5+ liters of water (1 right off the bat and 4 1/3ish throughout the day). Grocery Shopping & Meal Prep – Week 7

Grocery Shopping & Meal Prep

Lately I’ve been going grocery shopping on Saturday and then having everything already at home ready for meal prep on Sunday. I didn’t get that luxury last week, but I was back to that schedule this week.

My mom actually asked if I wanted to go to some garage sales Saturday morning so I went with her. We were about done and she said she’d brought her list for the grocery store if I needed to go. I figured it was the perfect time to go so I didn’t have to drive back to town and go. Plus, company at the grocery store is fun! We were pretty much in and out in 20 minutes or so, which is pretty good!

Well here is my weekly Grocery Shopping & Meal Prep list, which is meant to help you decide what clean foods to buy at the grocery store and also some easy ways to incorporate those into meal prepping. Each week I pack three meals per day for five days in the week, so a total of 15 meals. Two of them are similar and can for my meal around noon or for my mid-afternoon meal. I typically make something similar to breakfast for my mid-morning meal. For example this week I made yogurt parfaits. I then use the leftover prepped food to make breakfast and dinner at home. Easy peasy!

Late last week we had a catering job on Friday night and had a few things leftover. I didn’t need a ton of stuff, but definitely the basics! Here is what I bought at the grocery store and then how I incorporated that into my meal prep! [Read more…]

Anything & Everything Friday – June 17

Happy Friday!!! I am all about balance. There is room in life to workout and eat well. There is also room to go pant-less and eat whatever the heck you want! I try to exercise daily and eat well 80% of the time. I love food and sweets so sometimes that is what wins! How do you find balance?!? Pants? Or no pants? 

Time for Anything & Everything Friday, where I discuss five random topics of my choosing. I get emails and read articles about health all week long so I pick some of my favorites to share with you. I also find random articles that have nothing to do with health and I will occasionally share those as well.

Here is my Day in the Life: Mel’s Meals for this week. I did not have a yogurt parfait for my mid-morning meal. You’re welcome. I am trying to mix it up a little more for you (and myself, really). Make sure you read through to the end to see what we had for dinner too. It was awesome! Donny kept saying “we should make these more often”. I’m in, I would gladly make them more often….check it out below.

Day in the Life: Mel’s Meals posts are meant to show you that healthy eating and eating clean doesn’t have to be difficult and time-consuming. I literally throw breakfast together in 5 minutes sometimes and we rarely have weeknight dinners that take more than 20 minutes to prepare.

Grocery Shopping is one of my favorite things to do, I won’t lie. I really enjoy it. I know a lot of people HATE grocery shopping and find it difficult to decide what to buy for a clean diet. Well I am here to help! Each week I document what I purchase so you can get a good idea of what I buy when I grocery shop. Anything & Everything Friday – June 10

This has happened to me a hundred times…..what about you?!

Happy Friday!!! This week flew by, it was crazy. We have Bobstock, our biggest event of the year, coming up four weeks from today! Holy sh*t, is what I say. We had meetings every day this week and I think I have meetings involving Bobstock of some sort every day next week. It is getting real….

By the way, Grand Funk Railroad is our headliner for Bobstock 2016, so if you are in the Fort Morgan, CO area then make sure you are at City Park on Saturday, July 9th to see them perform FOR FREE! It is going to be awesome.

I think my favorite meal from Monday was my mid-morning snack. Yogurt parfaits are my “thing” right now. I go through different stages where I eat the same foods all the time. I get on an egg-kick, then an oatmeal-kick, etc. Right now I am on a yogurt-kick. 2% Greek yogurt is where it’s at too…. I don’t know if I’ll ever go back to nonfat. [Read more…]

Grocery Shopping & Meal Prep

I was up rather early on Sunday morning. I woke up to let the dogs out (yes, I admit it – it was me…..) and I couldn’t go back to sleep. I had a busy day ahead of me and wanted to get my meal prep done, so that might have been part of my restlessness. I was going to a baby shower and wanted to make the mother-to-be some gluten free chocolate chip banana bread! She has to eat gluten free for health reasons so I like baking things for her. It gives me a reason to bake AND it lets me practice with different gluten-free ingredients. Plus, she loves treats!

I made that first thing, then started prepping veggies so they were ready when Donny was ready to cook. It is so nice to have him grill for me because it keeps the kitchen a lot more clean and it allows me to get other things ready while he is cooking outside. I definitely prefer it, but maybe that is because then it means he is actually home! Either way…..

Day in the Life: Mel’s Meals [#19]

Today’s Day in the Life: Mel’s Meals post is a little different. This is actually everything I ate and drank on Monday, which I had off for Memorial Day. I was going to wait and document Tuesday, but I thought it was a good way to show you how I eat when I’m not working 8:00am-5:00pm. This was pretty typical of how I eat on the weekends, especially Sunday’s since it is my meal prep day and I did meal prep on Monday. I didn’t have any BBQs or get-togethers, so I ate everything at home.

You’ll notice that not only are my meals a little different, but the timing is VERY different. I slept in and then lounged around before eating breakfast. I also didn’t workout very first thing, so you can see how I plan meals around my workouts when they are in the middle of the day too. Grocery Shopping & Meal Prep – Week 4

Grocery Shopping Meal prep

This week was a little different in terms of meal prep and grocery shopping. I did a little shopping Friday night and the rest Saturday. Donny is gone all week so I didn’t need too much food. I also prepped my meals on Monday, rather than Sunday since I had Monday off for Memorial Day. I only needed four days worth of meals so it cut back on what I prepared significantly.

I did manage to make some extra vegetables and a little extra chicken to keep on hand for dinners. I still have a lot of eggs so I may or may not be making breakfast for dinner several times this week…… [Read more…]

I thawed some frozen mixed veggies, heated an Uncle Ben’s Ready Whole Grain Medley package and diced/heated some chicken that I made during meal prep up. Threw all that in a bowl with some Mrs Dash Onion & Herb Salt-Free seasoning and boom, dinner! Plus it has 33g protein and only 350 calories
