Cashew-Millet Clusters

August 28, 2015 by johnson_mel@hotmail.com

Cashew Millet Snacks-edit

I went and saw Straight Outta Compton this past week. I’m not going to lie — I loved it! I honestly expected to like it, but I really liked it! I didn’t now much about N.W.A. and I didn’t know much about Dr. Dre, Ice Cube, or Eazy-E in general.

I thought they did a great job finding actors that looked a lot like the actual characters did when they were young. If you have seen the movie or previews then you know what I’m talking about but, holy cow O’Shea Jackson Jr. looks A LOT like Ice Cube. I know, I know…it is his son but still! I don’t look THAT much like my mom or dad. It was unreal. [Read more…]

Pistachio & Cherry Overnight Oats

Pistachio-Cherry Overnight Oats

We had a fantastic time in New York City! We left late Thursday night and I returned home on Sunday. To say it was a quick trip is an understatement. The food show started on Sunday, so Donny stayed out there a few more days and I returned home. I will get some pictures together and post about the trip later! Let’s just say it was a trip full of shrimp cocktail, hot dogs, lots of seafood, gigantic porterhouse steaks, and pizza! Not too shabby….. [Read more…]

Lemon-Blueberry Parfait

My senior year of college at CSU I got a job working at the bakery on campus. It was such a fun job! Most college students would have hated it because I had to be at work at 5am. Yes, I was a senior in college and woke up Monday through Friday at 4:00am… yet I loved it. My dad always told me that the morning was the best part of the day. I thought he was full of it my whole life, that is, until I starting working at the bakery. Turns out, I am very much a morning person! [Read more…]

Cottage Cheese with tomatoes and avocado

Guess what tomorrow is? Friday yes, but it also happens to be the day that Season 3 of Orange is the New Black comes out on Netflix!!! I haven’t had a show lately that I was so addicted to that made me miss it when it wasn’t on. I seriously miss OITNB. The characters are fantastic and they have just the right mix of drama and comedy. Good work Netflix, good work. [Read more…]

Travel Snacks

Donny & I are going to test our marriage over the next week or so and drive together all the way to Naples, FL. Yes, just the two of us confined to a Chevy Malibu for a couple thousand miles. Yikes.

I personally think we will be fine, but ya just never know! We are going to stay with my cousin, his wife, and their beautiful almost-two-year-old daughter tomorrow night. Then Saturday we are going to head in the general direction of Augusta, Georgia. We are not 100% sure where we will stay Saturday night, but we were thinking Little Rock, Arkansas. I guess it depends what we want to do Saturday morning….we may want to hang out with the Robinson’s for a bit!  [Read more…]

Snickerdoodle Energy Bites

Snickerdoodle Energy Bites

Two things I am loving right now: cucumber in my water (enough said) and my new Fitbit.

Donny won earned quite a bit of money in Blackhawk this last weekend! He has been on a roll playing Blackjack. I’m diggin’ it…. I don’t gamble but I am great support emotionally and comedically (is that even a word?!?!).

Last week he came up to me and said “want to know when it’s time to get new tennis shoes?” Of course I did…. he said “when they do this….” and showed me one of his tennis shoes that had a 4 inch hole across the side of it. Yeah, I’d say it’s time for a new pair of shoes! I like buying shoes too much to let myself go that long without buying a new pair. He bought that pair probably two years ago and wears them a lot so probably time to retire them. By retire, I mean throw in the trash. Those cannot even be donated. Just trash them. [Read more…]

Coconut-Cashew Granola Bars

Prepare for me to go through withdrawals over the next few days. Withdrawals of what? Television. I know, right?! Who am I?!? I went three whole years without cable or television and now I am addicted to Orange is the New Black… well, Netflix in general. I finished Season 1 the last time Donny was gone and then he had to catch up. Well one week later and we are now done with all 13 episodes of Season 2. Yikes. [Read more…]

Mini Veggie Egg White Cups

Mini Egg Cups

Man, has it been cold this winter or what?! At least here in northeast Colorado it has been cold. What I do like about this year is that with the cold weather we have had snow! Quite a bit compared to other Decembers in fact. I don’t mind the cold if I can look outside and see white stuff on the ground! It’s not as fun when it’s freezing and all you see is bare, brown grass…….

Speaking of colder weather… I am ditching this cold weather and heading somewhere a little warmer!  Hello Calirfornia. How I have missed you. Ok, I cannot really say I’ve missed California because I have only been once and it was 5 years ago! [Read more…]

Chocolate Cherry Energy Bites

Energy bites are one of my favorite quick recipes and they are super easy to make. You can eat them for a snack or even as a healthy dessert if you have a sweet tooth (like I do!).

For this recipe you’ll need a food processor. First, I put raw cashews, rolled oats, and cocoa powder in the food processor. [Read more…]
