Roasted Acorn Squash

Acorn squash is one of the many winter squashes that I look forward to eating when fall hits! Spaghetti squash, butternut squash and of course acorn squash are some of my go-to squash for when the weather cools down. Roasted acorn squash is super easy to make, but acorn squash can be microwaved or steamed as well.

Like other winter squash, acorn squash is low in calories, but is also high in fiber and potassium. Half a cup of cooked acorn squash is only 57 calories, yet has 4.5 grams of fiber! [Read more…]

Italian Pasta Salad

Holy. Sore. Feet.

We had Bobstock, our company’s biggest event of the year, this last weekend! If you are not familiar, it is a two-day music festival with three stages so that there is constantly music playing throughout the day. This year we brought in 17 different bands from around the area with Grand Funk Railroad as our headliner for Saturday night. The best part about Bobstock is we keep it completely free of charge! We have great sponsors from the community who help us out, but the work is done entirely by our Media Logic staff.

I am very proud of the event and this year was fantastic! We had beautiful weather, which is always a concern. It was really hot both Friday & Saturday, but Saturday night was gorgeous. You could see the stars as Grand Funk was playing!!! It was awesome. [Read more…]

Donny & I started out with just one dog, Doug. It took us 2 1/2 years of marriage before we were ready to get another dog. We finally did that and adopted Kevin six weeks ago or so! Well we are in love with both dogs so much that we decided to take another dog in for a few weeks!

Olympia 2015 is now over. Ashley Kaltwasser did in fact win the Bikini division for the third year in a row! Nicole Wilkins actually got beat. She took second place (which is still amazing!) while Latorya Watts took the top spot. This was her fist win and actually only her second time competing in the Olympia. Pretty impressive! Have you seen the movie Lawless? Donny & I started it last night as we were going to bed. It is by no means a horror film, but it is pretty intense and has some very graphic/bloody scenes. Those scenes get me pretty scared!

I had watched Lawless a couple years ago and it didn’t bother me. I actually really like movies like that and I actually do enjoy that film. However, for some reason I watched about 20 minutes of the movie before falling asleep and then I kept having bad dreams about it! I woke up a little scared and realize it was just because of the movie and go back to sleep. I did that probably 3-4 times last night…… Silly movie. I felt 6-years-old again watching Are You Afraid of the Dark with my sister in our living room growing up. Yikes. [Read more…]
