Road Trip 2015 – Part 1

First Stop

Well Donny & I are both back to our normal routines (pretty much at least). I always have fun on vacations, but I am very much a routine kind of person and I am a home-body so I also enjoy coming home from vacations!

We had such a fun time on our road trip. We drove a total of 2,700 miles, leaving from Fort Morgan, Colorado and ending in Fort Lauderdale, Florida with a bunch of stuff in between! I am going to apologize now….I did not take very many pictures the first part of the trip but I did get a few on Instagram so I will share those (they aren’t great because they are iPhone pictures… but they are better than nothing). Girl’s Trip 2015: Austin, Texas

We basically spent four days eating and drinking, which honestly, was expected.

My sister met Katie when they were in school at the University of Northern Colorado in Greeley. They were best friends right off the bat. Katie has a sister my age, Brandy. Brandy & Katie are just as close and Lindsey & I, which made it really easy for all of us to hang out in college! We had a ton of fun in college (I would drive to Greeley to see them) and we partied. As much as I love exercising, clean eating, and creating recipes, I do enjoy doing other things in my free time. Shocking I know…. But I thought I’d share with you some of my favorite things to do when I am not cooking, food prepping, working out, etc.

Beer Tasting. I love trying new beers. I love going to breweries and on brewery tours. I like quite a few different beers, but my go-to when picking a beer off a list is a brown ale. I am, surprisingly, also intrigued usually by stouts and will choose those occasionally if some of the ingredients look appealing.

Keep Calm

I happen to love to read. Sitting by a fire in my pj’s reading a book cuddled under a blanket… that is heaven to me (with Doug on my lap of course!). I love reading at night but I also really love getting up in the morning, making coffee, and reading until Donny wakes up. So relaxing. 

I am going to 100% honest with you, one word that I feel describes my book preference is probably: shallow. I don’t want you to get offended if you like the same books I’m about to talk about, but that is how I feel. I mean, I love them enough to recommend them to you but they are not what I would call real literature. [Read more…]

Grocery Shopping

I happen to love grocery shopping. Like love grocery shopping. I can spend hours at a grocery store just looking at all the products and reading nutrition labels (total nerd, right?). Generally what makes me rush through the store is either a crowded grocery store or I am in a time crunch! When we have time and can go aisle-by-aisle at Whole Foods or Sprouts or Vitamin Cottage, I definitely take full advantage and try to look at as many products as possible. [Read more…]

My Trip to San Francisco!

I am back from California and guess what, it wasn’t negative temperatures here in Colorado this time! When we came back from Mexico in November it was freeeezzzing for a few weeks. I read a forecast earlier today and tomorrow is suppose to be in the 50s…..people will probably be wearing t-shirts and shorts, it’ll feel that hot out after the weather we’ve had. I am definitely looking forward to this!

Wedding in Cancun

Sunset in Cancun

Back from Cancun and (sort of) getting settled back into things. Why does it seem that whenever you get back from a relaxing vacation everything gets chaotic? It feels like it is settling down though. 

We had so much fun in Mexico. Jamie & Charlie’s wedding was amazing! We stayed at Dreams Resort Riviera Maya in Cancun. Donny & I and then Lindsey, my sister, and her husband Cody all flew down to Cancun together. Cody had never been and the rest of us had not been since our senior class trip (which was anywhere from 13 years ago to 8 years ago….). Also, none of us had done the whole all-inclusive thing. Everyone we talked to that vacations to Mexico says that all-inclusive is the way to go. Now that I have experienced it, I completely agree! It was so nice not having to carry a purse or wallet around. Plus, you can pay for the whole trip before you even get there. Win win.

Museum Dinner – Part 2

We are back from Cancun and had a great time! The weather was awesome down there, I’m talking mid-80s the entire time. Even better, we landed in Denver and the pilot came on and said “the current temperature here in Denver is 13 degrees”. Can you sense the sarcasm? I mean, 13 degrees!!! Yikes, talk about a shock. We were completely spoiled through October and the first part of November with beautiful weather. However, it would have been nice to have a gradual decrease in temperature. Sunday was in the 70s and Monday was in the teens. Gotta love Colorado! I will post some pictures and tell you more about the wedding later. [Read more…]

Museum Dinner – Part 1

Vacation starts tomorrow! Yay, I am super excited about this trip. I have never stayed at an all-inclusive resort but everyone tells me that is the way to go! Not having to pay for food and booze all the time?! I am in.

On an unrelated note, my hamstrings have been screaming at me both yesterday and today! At bootcamp we did Romanian dead lifts on Monday morning and then we did a “Baby Got Back” workout on Wednesday. It was all back body lifting and we did Good Mornings. Yowza. I was sore from the deads and then to add Good Mornings…woah, they were not happy. But a toned butt is a happy butt. Isn’t that what they say? If not, it’ll catch on.

Threw all that in a bowl with some Mrs Dash Onion & Herb Salt-Free seasoning and boom, dinner! Plus it has 33g protein and only 350 calories
