Grocery Shopping & Meal Prep

The holidays are a busy time for a lot of people and meal prep might be the last thing on your mind. I feel ya. We do a Christmas promotion that runs the weeks between Thanksgiving and Christmas. It is basically four weekends and three full weeks of craziness! Don’t get me wrong, I love to prep food on Sundays but these days I prefer rest.

My schedule gets crazy and I have to leave the office most afternoons so I actually didn’t plan an afternoon-meal this week. Instead, I opted for convenience, aka Quest bars! Obviously packaged bars are not as clean as foods I usually prepare, but it is definitely worth having a grab-and-go snack that I didn’t have to actually cook this week. Plus, it is better than skipping a meal because I didn’t have time to eat meat and veggies. [Read more…]

Grocery Shopping & Meal Prep

Food prep and meal prep is a huge part of my weekly schedule. I try to take several hours on Saturday or Sunday to prepare meals and extra food to get me through the week. My meals are all clean eating friendly, but meal prep can be done for any type of diet or eating style. It can be adjusted to be vegetarian, vegan, gluten free, etc.

Taking a few hours over the weekend to prepare meals saves me a lot of time throughout the week. I keep my meals in the fridge grouped together so that I can grab a days worth of meals and head out the door in the morning. [Read more…]

Grocery Shopping & Meal Prep

Each week I try to come up with new combinations of clean eating foods to take for meals. I generally cook a variety of vegetables for the week, then mix and match those with protein and sometimes a carbohydrate. I used the Farro Harvest Salad from earlier this week for meals which has me feeling more and more like fall!

Here is everything that I bought at the grocery store and also how I prepared the food to make clean eating meals for the week. Thanksgiving is tomorrow so I only needed to pack four days worth, rather than five. [Read more…]

Grocery Shopping & Meal Prep

Grocery shopping and meal prep this week was SUPER simple! I’m talking it took me one hour max. We were in New Orleans, LA from Friday night to Tuesday around noon, so not a ton of time for my usual shopping trip and meal prep schedule.

No worries though, I planned to make a few of my go-to meals for the week that are easy to make and take very little time. I only needed to make three days worth of meals so that helped too.   [Read more…]

My grocery shopping schedule was the same this week, but I ended up doing all of my meal prep on Saturday, rather than Sunday. Donny & I planned to be bums on Saturday and then go to Denver on Sunday to get some things done.

Originally Donny had planned to get his wisdom teeth out on Friday so we’d left the weekend open in case he was in pain or on painkillers. His appointment was rescheduled for early December, so we had a free weekend! I did my typical Saturday routine of grocery store and gym, then meal prepped the rest of the day. [Read more…]

Grocery Shopping & Meal Prep

We took it pretty easy in terms of food preparation this week. Donny had a catering job to do on Saturday, so I knew I wouldn’t want to spend too much time in kitchen on Sunday.

Meals this week were kept pretty simple. They consist of a few different types of meat and lots of vegetables…my favorite! I did all of my grocery shopping at Safeway this week. The kitchen was in use on Saturday, so I took pictures at the store!

Donny is home from over a week of work travel, so my grocery shopping trip was a bigger than the last couple weeks! I can deal with a bigger grocery trip because Donny was kind enough to grill for me. I (almost) forgot how nice it is to have a couple things cooked outside of the kitchen! It goes a little quicker if he is cooking outside while I am cooking inside.

I found one recipe online and one in a magazine this week that I wanted to try out for meal prep. Pinterest is a fantastic place to hunt for recipe ideas! I rarely make the recipe exactly the way it written. Most of the time I take a not-so-healthy recipe and make it clean eating friendly. Other times, I only have certain ingredients on hand so I’ll make a couple substitutions. [Read more…]

My weekend was less than eventful and I am really happy about it! Donny was out of town (boo) and I didn’t have any plans (yay). Saturday morning I hung out at the house and my sister came over for coffee. I made it to the grocery store and to the gym then had zero plans the rest of the day. My mom & I ended up going on a walk and I spoiled the pups all evening long! A perfectly relaxing day.

I went to Safeway for all my groceries this week. My list consisted of mostly vegetables and a couple other items for recipes I wanted to try. I’ve been trying to incorporate new recipes into my meal prep so that I don’t get bored eating and you don’t get bored reading about my eating!  [Read more…]

Grocery Shopping & Meal Prep

Donny & I went to a wedding Friday in Estes Park, CO and stayed the night. I dropped Donny off at the airport in Denver Saturday afternoon and decided to go grocery shopping while I was up there. At first I thought I’d stop by a Sprouts or Trader Joe’s, but I didn’t want to have to go back into the city so I stopped by Target in Brighton, CO.

First of all, going to Target is dangerous business in my world! I spend WAY too much money on things I only kinda sorta need…. I’m not the only one that is like that, right?!?!

I didn’t do too bad in the grocery department, but I won’t discuss the other areas! In the end I didn’t end up too terribly bad (aka broke), but I’m glad I don’t go there very often. [Read more…]

Grocery Shopping & Meal Prep – Week 21

Grocery Shopping & Meal prep

Donny, his parents & I took a road trip to Omaha, NE to see Donny’s brother and his family! We had a great time and got back to town Sunday, just in time for the second half of the Broncos game. We listened to the first half on the radio and watched the other half on TV at my parent’s house.

I knew that we would be back late Sunday, so I didn’t want to have to go to the grocery store and make food once we got back. Instead, I went to the grocery store on Friday morning before I went to work and then cooked very little Sunday night. Turns out, the grocery store is EMPTY at 7:20am on a Friday! Plus, I only needed produce because I had most of the meat already. Another thing that helped was that I planned a couple meals that required zero cooking to make things easy!
