Meal Prep IdeasIt was nice to actually go grocery shopping this week and prepare a few interesting meals! My meal prep ideas lately have been quite limited due to a lack of kitchen. Donny & I are in the middle of a kitchen remodel so I’ve been sticking to raw foods or foods I can cook in the microwave. Honestly, it hasn’t been that bad!

Meal prep is very important to me. I like knowing that I have healthy, convenient meals ready for me throughout the day. If I didn’t meal prep, I’d be more likely to stop by a fast food joint or other restaurant, plus I’d grab not-so-healthy snacks along the way too. Making all my food over the weekend takes a little planning and some extra time, but it is completely worth it to me. [Read more…]

Meal Prep Ideas

Grocery shopping was non-existent this week, but meal prep was not! Donny & I were on vacation Friday through Monday, plus we are remodeling our kitchen so we have NO kitchen. Both of those factors led me to skip grocery shopping.

Rather than skipping both shopping AND meal prep, I made a simple lunch for the week and packed two convenient snacks. I’d prefer to have fresh meals to eat all week, but sometimes life happens and I don’t get that luxury. [Read more…]

Meal Prep Ideas

Some weeks I spend a couple hours during meal prep, while other weeks I spend 30 minutes! We are remodeling our kitchen, so literally I have NO kitchen to make food in. Luckily I have a million no-cook meal prep ideas so still be able to create meals to last the week.

This weekend we are going to Texas, so I only needed meals through Thursday. I bought several convenient foods to help make meals this week. A microwave is not my favorite cooking tool, but it sure does come in handy when you don’t have a kitchen! [Read more…]

Meal Prep Ideas

Donny & I are adding an addition onto our house and remodeling our kitchen. It will be awesome when it is done, but now we don’t have a kitchen for 3-4 weeks! The contractor ripped all of our existing kitchen out this week, so I knew I would need extra food ready since we won’t be able to cook dinner. Luckily, I have a million meal prep ideas!

The Meal Prep Series this week focuses on breakfast. Your goal is to make breakfast ahead of time to quickly grab each morning. It actually fell at the perfect time, because I won’t be able to cook the variety of breakfast foods that I’m used to! The Meal Prep Series task for this week is to make a whole grain to last the week. My favorite whole grains to have on hand include brown rice, quinoa and oats. I decided to make a Cilantro-Lime Quinoa Salad to eat during the week. If you are looking for a quick meal prep idea that involves a whole grain then try this out! Meal Prep Ideas

The Meal Prep Series task this week involves preparing vegetables to last the week. Well this week I made a TON of vegetables! Roasting them is one of my favorite ways to cook, because while they are in the oven I can do other things. My sister wanted to prepare some foods for the week, so she joined me in the kitchen preparing a lot of veggies! What are your favorite meal prep ideas for vegetables?

I split meal prep up a little bit this week. Rather than doing it all in one day I split it into two days. I cooked all the vegetables on Saturday, then prepared all the protein (turkey, chicken and beef) on Sunday. It has been a while since I went on a grocery shopping haul! We’ve been so busy with work and the holidays that I haven’t gone on a big shopping spree in a while! It was time. Lately I’ve lacked in meal prep ideas based on minimal time on the weekends. This week I felt like keeping it simple even though I had the time.

I’m up a few pounds from our trip to New York City and the holidays, so I wanted to keep things simple with meat and vegetables! Meal Prep Ideas

Meal prep this week was non-existent. Honestly, I didn’t do anything. I didn’t have time to even come up with meal prep ideas, let alone cook anything.

Donny & I were on vacation and flew back to Colorado on Monday. We were suppose to land around 4:30pm, but our flight was delayed a couple hours. We didn’t get home until after 9:00pm…yuck!

Rather than cooking anything I bought some convenience foods and threw together some meals to get me through the week.

Threw all that in a bowl with some Mrs Dash Onion & Herb Salt-Free seasoning and boom, dinner! Plus it has 33g protein and only 350 calories
