Asian Chopped Salad

March 28, 2016 by johnson_mel@hotmail.com

Asian Chopped Salad

Before we get to the Asian Chopped Salad, let’s talk about Easter. Was the Easter Bunny good to you?!?!? He was good to me! I got a little basket full of goodies including some cute socks that look like tennis shoes (awesome), some beef jerky, and Reese’s PB Egg. Most importantly however, the Easter Bunny gave me the ingredients for a Moscow mule! Hahaha yes, last year I received a six pack of beer and this year a shooter of vodka, one can of ginger beer, and a lime! The Easter Bunny really does know me! [Read more…]

Kale Lasagna Roll Ups

Kale Lasagna Roll Ups-EDIT 2

Well the holidays are officially over. It was nice to have two 3-day weekends in a row. Now it is time to tackle 2016!

Do you have any New Year’s resolutions? I mentioned this Friday, but I don’t usually do resolutions at the New Year. I make goals throughout the year, but don’t typically start anything at the beginning of each year.

Jodi is challenging us this round of bootcamp to come up with two goals. One is health related in terms of exercise and eating. The other is a health goal as well, but a lifestyle goal. I have some in mind, but I need to sit down tonight or tomorrow and really think about what I would like to accomplish. [Read more…]

Mexican-Style Quinoa Bake

December 7, 2015 by johnson_mel@hotmail.com

Mexican-Style Quinoa Bake-edit

Don’t worry, I finally got our Christmas tree up yesterday! It is decorated and everything. Not only that, we also got our outdoor lights up! I had to work Snowzilla (more on that later) until 2pm and then the Broncos game started at 2:05pm.

The weather was perfect to put them up, but I wasn’t sure we’d get them done. Donny ended up getting all the lights out while I was gone and started putting some of them up on the front of our house (the hardest part). He had just made it around the first corner when I showed up.

I decided to take over for him because I honestly don’t trust him on a ladder. First of all, he has a bum knee. Second of all, he fell off a ladder once and got really messed up. No bueno. We ended up recording the Broncos game and then watching it about an hour after it started. Donny doesn’t mind that because he can fast forward through the commercials and the dead time.

Spinach Artichoke Farro with White Beans & Roasted Tomatoes

September 1, 2015 by johnson_mel@hotmail.com

 Spinach Artichoke Farro-edit

I have a new appreciation for people that do manual labor for a living. Donny & I spent between 6-7 hours doing yard work in our backyard this weekend and most of that was spent tearing out this concrete slab we had in the back. The people that we bought the house from bred dogs and they poured concrete back there to put their dog kennel on. [Read more…]

Cottage Cheese with tomatoes and avocado

Guess what tomorrow is? Friday yes, but it also happens to be the day that Season 3 of Orange is the New Black comes out on Netflix!!! I haven’t had a show lately that I was so addicted to that made me miss it when it wasn’t on. I seriously miss OITNB. The characters are fantastic and they have just the right mix of drama and comedy. Good work Netflix, good work. [Read more…]

Low-Carb Mexican Stuffed Peppers

Low Carb Mexican Stuffed Peppers

First of all, I had a blast in Austin over the weekend! I found out I cannot drink like I could 4 years ago when we started these girls trip. However, I did get to hang out with the gals, consumed my fair share of alcohol and ate at quite a few food trucks. Success. I did in fact take and actually use a new compact digital camera. I will go through my pictures and share them with you soon! [Read more…]

Minestrone Soup

December 18, 2014 by johnson_mel@hotmail.com

Minestrone Soup

It was 65 degrees here in Colorado last Friday, so naturally it makes sense that it would snow eight inches on Sunday night. School closures all over northeast Colorado! Almost makes me wish I was still in school…..almost. We have had about a week of extremely cold weather and then it was just beautiful for a few weeks. When I was going through the weekend weather forecast on Friday (which I do several times during my show), it said that it would be windy, cloudy, and chance of snow but less than an inch was possible. Well let’s just say they were about 6-7 inches off from that forecast. It was windy though! Snow drifts were all over the place. [Read more…]
