Well the holidays are officially over. It was nice to have two 3-day weekends in a row. Now it is time to tackle 2016!

Do you have any New Year’s resolutions? I mentioned this Friday, but I don’t usually do resolutions at the New Year. I make goals throughout the year, but don’t typically start anything at the beginning of each year.

Jodi is challenging us this round of bootcamp to come up with two goals. One is health related in terms of exercise and eating. The other is a health goal as well, but a lifestyle goal. I have some in mind, but I need to sit down tonight or tomorrow and really think about what I would like to accomplish. [Read more…]

Mexican-Style Quinoa Bake

Mexican-Style Quinoa Bake-edit

Don’t worry, I finally got our Christmas tree up yesterday! It is decorated and everything. Not only that, we also got our outdoor lights up! I had to work Snowzilla (more on that later) until 2pm and then the Broncos game started at 2:05pm.

The weather was perfect to put them up, but I wasn’t sure we’d get them done. Donny ended up getting all the lights out while I was gone and started putting some of them up on the front of our house (the hardest part). He had just made it around the first corner when I showed up.

I decided to take over for him because I honestly don’t trust him on a ladder. First of all, he has a bum knee. Second of all, he fell off a ladder once and got really messed up. No bueno. We ended up recording the Broncos game and then watching it about an hour after it started. Donny doesn’t mind that because he can fast forward through the commercials and the dead time.

Another weekend gone. They seem to fly by waaaay too quick sometimes. I took it very easy Friday night. I messed around in the kitchen for a while making nut & seed bars (post headed your way soon). I didn’t want to do anything too crazy because I knew Saturday would be a long day getting ready for the museum dinner for the Heritage Foundation.

I have a new appreciation for people that do manual labor for a living. Donny & I spent between 6-7 hours doing yard work in our backyard this weekend and most of that was spent tearing out this concrete slab we had in the back. It is officially April and a couple days away from Easter and guess what?! We have snow!!! I love spring here in Colorado… I mean 80 degrees one day, snowing and 40 degrees the next. Crazy. It’s like Mother Nature is on a hormonal roller coaster! Just cannot make up her mind. 

Today is Good Friday and I love Good Friday! We get all the major holidays off of work but don’t get many other days as paid holidays. We do get Good Friday though! I never thought much about that until the first year I worked at Media Logic and noticed that other people still had to work. The banks are even open! That’s the only holiday that we don’t work and other people do! It’s usually the other way around…..it’s the little joys in life, right?! Buffalo Chicken Quinoa Bites

Did you watch the Oscars last night?! I did not. Want to know why? Because Donny & I decided to watch 45 episodes of Orange is the New Black. Ok, 45 might be a bit of an exaggeration, but we did watch OITNB all day yesterday. It is just such an awesome show! It has very dry humor throughout it, but also has a lot of drama and suspense. I love it.

Donny suggested that I watch it while he was gone on his last trip so I assumed he had seen Season 1. I watched all of Season 1 and then a few episodes of Season 2. When he got home he informed me that he had only seen like 3-4 episodes…. whoops! He had some catching up to do. He is now caught up to me so we can start watching episodes I haven’t seen yet! Threw all that in a bowl with some Mrs Dash Onion & Herb Salt-Free seasoning and boom, dinner! Plus it has 33g protein and only 350 calories
