4-Ingredient No Bake Peanut Butter Cookies

March 31, 2016 by johnson_mel@hotmail.com

No Bake Peanut Butter Cookie

It is ridiculous how easy it is to make these 4-Ingredient Peanut Butter Cookies. First of all, you only have to round up four ingredients! After that, it only takes a couple minutes to get them whipped up! The hardest part is letting them harden in the refrigerator without trying to sneak a few bites!!!

Last week we had a crazy spring blizzard in Colorado. Remember that?!?! Well in the radio world we do not get snow days. However, the weather was getting crazy and visibility was getting really bad, so the Boss-Man let us go home at about 12:30pm! It was not easy trying to find my way home with several areas that were complete white-outs! Did you end up having to drive in that weather?! [Read more…]

Carrot Cake Cupcakes

We didn’t plan it on purpose, but we managed to schedule our Louisville trip so that we had two three-day weekends in a row! Both Lindsey & I took Monday off last week because we were flying home from Kentucky and then Good Friday is a company holiday. I definitely like four-day work weeks!

Good Friday is the only holiday that we get to take off and a lot of other businesses don’t. Lindsey and I have started a tradition of going to Denver for the day to hang out. It varies each year, but we’ve done massages, pedicures, manicures, shopping, went to Blackhawk, etc. This year we scheduled mani-pedis for Friday at one of our favorite spots the Sweet Life Nail Bar. It is super cute and they decorate with rustic doors that have been painted in different pastel colors. I really like it, plus their pedicures tend to last a long time! [Read more…]

Toasted Almond Chia Pudding

First of all, happy birthday to my sister, Lindsey! She is 30 years old today! I hope you said goodbye to your 20s yesterday…. I have a feeling you are going to love your 30s!

Did you feel like something was missing this weekend with no football?!? It was weird not having a game to work around yesterday. I guess I better get used to it because after next Sunday we’ll have 7 or more months of no football!

Hopefully the Broncos come out and kick some A so these next 7 months are bearable! It should be a fun game. [Read more…]

Chai Spiced Oatmeal Cookies

Chai Spiced Oatmeal Cookie-edit

Donny had his four week check-up yesterday afternoon and the surgeon was really impressed with his progress! He was really excited with how well Donny has done and says he heals really quickly. Compared to 70-year-olds I am guessing that’s true…. just kidding Donny, you do heal fast.

He thought his scar looked 8-10 weeks old, not 4 weeks old. Crazy! Plus he got his knee to bend to 102 degrees, which is awesome. His goal is 135 degrees like his right knee. [Read more…]

How was your Christmas?! It was really nice to have a three-and-a-half day weekend. The best part is I get to do this all over again this week! We work today, Tuesday, and Wednesday. We have a half day on Thursday and Friday we get the whole day off for New Year’s Day. We also have our company retreat on Wednesday so we’ll all be out of the office starting at noon on Wednesday. I’m sure this week will fly by! [Read more…]

So I had a really crazy weekend. Well crazy in my book!

Friday night we celebrated Cody’s Dirty Thirty by renting a limo to come get us in Fort Morgan, take us to Denver to a show at Comedy Works, and then bring us back to Fort Morgan. It was a blast. There were 12 of us that rode the limo up then two of our friends met us there. [Read more…]

Peach Crisp for One-edit

I have to take a minute and brag about my husband. The last two years he has helped Brad, the dad of  few guys Donny went to high school with, to raise money for ALS (Lou Gehrig’s disease). You might remember last year in August when social media went crazy with the Ice Bucket Challenge….that was for ALS awareness. In fact, according to the ALS Association $115 million was raised in 2014 because of the challenge. Pretty impressive. [Read more…]

I just need to say this once and then move on. Holy rain. We have been getting hammered with rain here in northeast Colorado. I was glad to hear that the river did crest finally today, so Rainbow Bridge won’t be flooded (my way home!).  [Read more…]

How was your Valentine’s Day? Donny got back to Colorado about 6pm on Saturday. Our friends McKenzie & Cody rode with me to pick him up at the airport and we all went to dinner for Valentine’s Day. We went to Cholon Modern Asian Bistro. It is so awesome and one of our favorite places to go downtown. [Read more…]
