Clean Eating Meals

I won’t lie, I didn’t feel THAT great throughout the day but I still managed to eat healthy, clean eating meals. Honestly, meal prep is the only way that I continue to do that!

Without meal prep, I’d most likely grab unhealthy foods to make me feel better. I’m thinking chips, candy, pop, etc. Instead I ate what I had packed which included lean proteins, healthy carbs, veggies and fruit. [Read more…]

My clean eating meals this week were super simple, but I have not been bored at all! During meal prep I made an enchilada casserole and it has been wonderful to eat for lunch this week. I also forgot how much I like hardboiled eggs! I’ve been having those as a snack and they are filling, yet low in calories.

Meal prep helps me to eat clean all day long without having to cook every meal. In fact, the only thing I cooked all day was the eggs at breakfast! I keep healthy foods in the fridge ready-to-eat in case I get home late or am too tired to cook. [Read more…]

Mel’s Clean Eating Meals is a weekly post where I show you what I eat through the entire day. I try to eat healthy foods from start to finish, but I do throw in an occasional treat (especially lately).

Healthy meals can be made without too much effort or weird foods. I tend to gravitate towards the same healthy foods, but I enjoy them so it is alright. I switch up the vegetables occasionally, but stay true to the basic lean proteins like chicken and eggs. [Read more…]

Another day in the life of Mel’s clean eating meals. Meal prep really helps me be able to eat healthy meals from start to finish. I like having foods already prepared so that I can make a quick breakfast or easy dinner. Plus, I love having my lunch and snacks already prepared ahead of time! I keep them in the refrigerator all week and grab them before I head to work in the morning. It is really convenient!

Clean eating meals don’t have to be difficult to make or involve crazy foods. For example, my breakfast was basically three ingredients – bread, avocado and eggs! Add a little salt and pepper and you are good to go! [Read more…]

Clean Eating Meals

I am back to a normal eating schedule for me. When we were remodeling our kitchen I was eating a little different in terms of meals. I was still eating healthy meals, but they were more snack-like and more frequent. I definitely prefer eating actual meals compared to snacking. They keep me full longer than snacks so I don’t go crazy at night eating every. single. thing.

Most of these meals are made during meal prep. Meal prep helps me to eat healthy, clean eating meals throughout the day without having to worry about preparing food. It is already done! It saves me time and also money from not eating out when I am starving. It has become a staple in my weekend routine and I definitely recommend it to anyone. [Read more…]

Mel's Clean Eating Meals

It is SO nice to be back to a normal eating schedule. Honestly, I was more thrown off my clean-eating-meals-game than I thought.  I wasn’t eating a ton of unhealthy food, but I was definitely snacking more and not feeling as satisfied after meals. Over the weekend I got to do some legitimate meal prep and I have been loving the meals I prepared.

The last few weeks I’ve had three meals and a couple snacks. This week I’m back to five smaller meals spread throughout the day. I definitely find that my body likes this eating schedule better. It is not a big deal to change things up every once in a while, but it is good to be back to a better eating schedule. [Read more…]

Lately Mel’s Clean Eating Meals have been a little different. Maybe you’ve noticed, maybe you haven’t.

I’ve been a lot less structured lately and have been eating even more often (who knew that was possible….) and snacking more than eating full meals. I still have breakfast, lunch and dinner, but also 3-4 snacks mixed randomly throughout the day. I am still trying to eat healthy, but have had a few more sweets lately. Oh well, life happens. Clean Eating Meals

Just like any recipe, some clean eating meals can be time-intensive and require a million ingredients! Other clean eating meals can consist of throwing five healthy ingredients into a bowl and calling it lunch! Either way, I like to have a clean diet.

My meals have been slightly different the last few weeks. I have been “snacking” more and not making as many meat-veggies meals. Mostly due to a lack of kitchen right now (we are remodeling) but also because I’ve been craving snack foods like cottage cheese and yogurt! I will warn you. Mel’s Clean Eating Meals is quite random this week. I still haven’t been tracking macros and my eating has been slightly off due to our kitchen remodel. Who knows, but either way I had chocolate AND carrot cake in the same day, yet don’t feel bad about it. They were both delicious!

I found myself to be more hungry on this particular day, so I had small snacks randomly spread out. Rather than five meals, I had three meals and four snacks! Day in the Life: Mel’s Clean Eating Meals [#54]

Clean Eating MealsDonny, myself and four other couples went down to Texas to spend a weekend. It was a ton of fun, but we go back fairly late on Monday night. I didn’t have much time to meal prep, but I managed to throw together a little food to last the day!

I typically eat five small, clean eating meals per day, but this week it is more like 3 bigger meals and 2 more snack-like meals. I don’t mind this structure, but prefer to have 250-300 calorie meals spread out throughout the day. It is only one week, so I can manage! [Read more…]

I thawed some frozen mixed veggies, heated an Uncle Ben’s Ready Whole Grain Medley package and diced/heated some chicken that I made during meal prep up. Threw all that in a bowl with some Mrs Dash Onion & Herb Salt-Free seasoning and boom, dinner! Plus it has 33g protein and only 350 calories
