Fried Eggs over Avocado Toast

Eggs are one of my favorite foods. I would even venture to say that eggs fall in my top 5 favorite foods. I eat them at least 3 times a week for breakfast, occasionally have them for a snack, and once in a while I will each breakfast for dinner or have an egg with some type of dinner. Apple Pie Oatmeal

As much as I love fresh fruits and vegetables coming straight from the garden during the summer…I think fall might be my favorite time of year for in-season produce. Pumpkin. Sweet potatoes. Winter squash. Apples. Cranberries. Pears. So many awesome flavors! Not only do these foods taste better in the fall, but they are cheaper to buy at the grocery store! Pumpkin Pie Protein Shake

Well hello fall and hello pumpkin! The weather in Colorado has been absolutely fantastic. Sunny and mid-70s. Perfect. I would say that it has been hard to get into fall-recipe-mode because it has been such nice weather but, that my friend, would be a lie. It could be 100 degrees outside and I would still love pumpkin. I must not be the only one because Pinterest is flooded with pumpkin recipes. I thawed some frozen mixed veggies, heated an Uncle Ben’s Ready Whole Grain Medley package and diced/heated some chicken that I made during meal prep up. Threw all that in a bowl with some Mrs Dash Onion & Herb Salt-Free seasoning and boom, dinner! Plus it has 33g protein and only 350 calories
