Savory Oat Cake with Fried Egg

August 13, 2015 by johnson_mel@hotmail.com

Savory Oat Cake

Breakfast is by far my favorite meal of the day. If I am feeling lazy about cooking dinner or nothing sounds good to me at that moment, then I inevitably choose to have BFD, aka Breakfast For Dinner. I have also been known to have BFD 3-4 nights per week when Donny is out of town. I just love breakfast foods! I crave them more than any other food. [Read more…]

“Tart & Tangy” Granola

Tart & Tangy Granola

The other day I was at Donny’s office and noticed he had a couple large piles of magazines in the corner. I figured they were mostly Golf Magazine, which I don’t need to read (I like golfing, but don’t need to read about it). However I was mistaken. It was a bunch of food magazines! I’m talking issues of Bon Appetit & Food & Wine from as far back as 2013. [Read more…]

It has been crazy busy at the office the last couple of weeks. We put on a two-day music festival once a year in Fort Morgan and bring in a band from the 80s. The past few years we’ve had Blue Oyster Cult, Little River Band, and Foghat come and play. The best part is that the entire event is free to the community! We don’t have a very big staff at Media Logic, so it is a lot of work. It is a really fun event, but a lot to coordinate. [Read more…]

Pistachio & Cherry Overnight Oats

Pistachio-Cherry Overnight Oats

We had a fantastic time in New York City! We left late Thursday night and I returned home on Sunday. To say it was a quick trip is an understatement. The food show started on Sunday, so Donny stayed out there a few more days and I returned home. I will get some pictures together and post about the trip later! Let’s just say it was a trip full of shrimp cocktail, hot dogs, lots of seafood, gigantic porterhouse steaks, and pizza! Not too shabby….. [Read more…]

Strawberry Almond Protein Smoothie

Strawberry Almond Protein Smoothie

We finally had a weekend with no commitments! I’m telling you, that’s pretty rare in our lives. I did have a Lions Club spaghetti dinner on Friday night (yes, I’m in Lions Club – in fact, I’m the President!). We have members of our club make/buy desserts for everyone to enjoy instead of buying them through the club and taking away from the total profit. [Read more…]

Single-Serving Blueberry-Peach French Toast

Blueberry Peach French Toast

I have really been kicking my own butt in the gym this week! Since we are off of bootcamp for a week I decided to change up my workout routine a little bit. I am lifting more days per week than usual and focusing on certain body parts each day. For example, Monday was legs, Tuesday was chest and triceps, etc. It has me so. dang. sore.

What really got me sore was on Monday I did a pretty big leg workout and did glute-ham raises as one of my exercises and I know those get my hamstrings super sore. I also did a pretty killer chest and tricep workout on Tuesday. I’ll have to post that later but I incorporated drop sets into the chest workout – which I loved!  [Read more…]

“Almond Joy” Oatmeal

Almond Joy Oatmeal

It’s almost Valentine’s Day! Donny & I went on our first “real” date around Valentine’s Day in 2012. It was not actually on Valentine’s Day, but it was somewhere in the beginning to mid-February. I say “real” because we went on our first date in 2010, but it didn’t go anywhere. Then we gave it another go a couple years later and, as they say, the rest is history!

Donny always has food shows in Germany and Dubai in February so this will actually be the first Valentine’s Day that we have spent together! Technically we get about 5 hours of Valentine’s Day together this year because he gets in from Germany at about 7pm on Saturday night… but it counts! I am not really a big Valentine’s Day person, but it might be nice seeing my husband for once on the day. [Read more…]

Mini Veggie Egg White Cups

Mini Egg Cups

Man, has it been cold this winter or what?! At least here in northeast Colorado it has been cold. What I do like about this year is that with the cold weather we have had snow! Quite a bit compared to other Decembers in fact. I don’t mind the cold if I can look outside and see white stuff on the ground! It’s not as fun when it’s freezing and all you see is bare, brown grass…….

Speaking of colder weather… I am ditching this cold weather and heading somewhere a little warmer!  Hello Calirfornia. How I have missed you. Ok, I cannot really say I’ve missed California because I have only been once and it was 5 years ago! [Read more…]

Banana Pancakes

Banana Pancakes

Well Christmas 2014 is long gone…moving on to 2015! We had a wonderful Christmas Eve and Christmas Day. We were lucky enough to see my cousins from Wichita this year along with their 18 month old daughter, Brystol. She was born 3 weeks before our wedding and was teeny tiny! Now she is the most adorable little girl…so cute. We also got to spoil Donny’s nieces and nephews over the holidays, which is always fun. Apparently the theme for 2014 Christmas was Frozen, as in the movie. I love that movie along with about every child in the world. Santa got Donny’s 3 ½ year old niece Carlie a Frozen karaoke machine that plays three different Frozen songs. Awesome. We had a small Edson concert. We don’t sing on key, but boy do we sing loud! Thanksgiving is in a few days! Yay, it is such a fun holiday. We are going to Tennessee to see Donny’s sister, Cathy, and her family including her husband Jay and her kiddos Kyle, Elena, and Carly. I haven’t spent Thanksgiving somewhere other than Colorado in years….in fact, I cannot even tell you the last time I spent it out of state. [Read more…]
