Breakfast is definitely my favorite meal of the day, which is awesome because they say it is the “most important meal of the day”. Now, depending who you are, you may or may not agree with that. If you are not someone who can eat first thing in the morning, then don’t.

I, for one, must eat when I get up. I can occasionally make it 30 minutes to an hour without eating if I have water and coffee, but if not then LOOK OUT. I’ve been known to get hangry.  [Read more…]

Strawberry Banana Protein Overnight Oats

Overnight oats are one of my favorite snacks. I usually enjoy a hot breakfast because I have time to make it (eggs, hot oats, etc). However, sometimes on Friday when I go to yoga I get home a little later than normal. I don’t want to be rushed so I will plan ahead and make chia pudding or overnight oats the night before. That way, I can come home, eat, and get ready.

I was not sold on overnight oats the first time I had them. They are obviously cold and I wasn’t sure how I felt about that at first. I’d been eating hot oatmeal my whole life and trying it cold was very different. [Read more…]

How was your Valentine’s Day?! I am not the buy-me-flowers-on-Valentine’s-Day girl. I’m a take-me-to-a-cool-breakfast-joint type of girl! We went to The Universal Sunday morning and it was fantastic. I had two over-easy eggs, an apple chicken sausage link, potatoes, and a banana nut pancake. It was awesome! I gave half my pancake to Donny (he loved it too) and I tried the potatoes, but didn’t eat very many of them. It was so good. I highly suggest going there.

We spent most of the day Saturday in Denver. We were celebrating my sister’s 30th birthday in style. By in style, I mean eating and drink all afternoon and into the evening. [Read more…]

Peanut Butter & Banana Baked Oatmeal

First of all, BRONCOS ARE GOING TO THE SUPER BOWL! The game was a blast yesterday. It was quite intense the last 6 minutes…… Our defense played lights out and it was amazing!

We had a very busy weekend. We left work early on Friday and my surprise birthday evening started. Donny actually booked us a night stay at The Stanley Hotel in Estes Park. It is beautiful there! We had a great time. The hotel called a few days ahead of time and started these intimate dinners with alcohol pairings. They had an opening for us to do their whiskey pairing, which included a six-course meal with a different whiskey paired with each dish. Very cool! There were 20 people or so and the chef came to talk to us about each dish as well as the two whiskey experts for the hotel. Totally worth the money! We had a blast. [Read more…]

It is Christmas week!!! I had a huge sigh of relief Saturday afternoon when our Christmas Capital of the Plains events wrapped up. It is fun to do the events but it is a month long promotion that takes a lot of time! It is nice to have it over.

Donny & I don’t get a ton of time to sit down and watch TV but occasionally we will. Recently I’ve been into the show How To Get Away With Murder. Have you seen it? It is on ABC, but the first season is on Netflix. It stars Viola Davis and I guess originally came out in 2014.

There is a lot going on and they go back and forth from current times, to things that happened months and weeks beforehand. If you’ve seen it then you know what I’m talking about, but they give you bits and pieces of what is happening yet won’t give the whole story. First of all, happy birthday to Donny!!!! He is 33 years old today so if you see him around then wish him a happy birthday too.

We had a fantastic time in Seattle over the weekend to celebrate his birthday. It was one of our most fun trips. We were there less than 48 hours, but I’m telling you, we made it count! We left late on Friday night and got back last night around 12:30pm. Yikes. Not my thing to be out that late on a Sunday, but I’m trying to be more open to the idea (under certain circumstances) and this trip was absolutely worth it. Coffee. I’ll just drink coffee. Donny & I did end up going to see the new James Bond movie last night. We went on an official date. My favorite kind of date too…sweat pants included!

We both loved the movie! Not as many cool cars in it, but plenty of action.

Does anyone else think that Christoph Waltz makes a fantastic bad guy?!?! He was the controlling husband in the movie Water for Elephants and he’s been in quite a few other movies. He was in Django Unchained, but I never saw that movie to know what kind of character he plays. I think he makes a great bad guy. He is in Spectre and just gives such a great creepy vibe. Maybe it is his voice. I can’t quite put my finger on it, but I like watching him. [Read more…]

Donny & I had a pretty relaxed Labor Day weekend. We did quite a bit of yard work Saturday morning, which wasn’t too bad because once we got that done we didn’t have anything else to do all weekend! We made sure to get all the yardwork done first thing so we could play.

After we were done with the yardwork we went to Denver. We did end up getting pedicures (yay!) and then went to Biker Jim’s Gourmet Dogs for our date! It was awesome. We shared three dogs and a half order of the fried mac and cheese. We could have gone with two dogs and the mac and cheese, but we aren’t exactly the type to order responsibly. [Read more…]

I thawed some frozen mixed veggies, heated an Uncle Ben’s Ready Whole Grain Medley package and diced/heated some chicken that I made during meal prep up. Threw all that in a bowl with some Mrs Dash Onion & Herb Salt-Free seasoning and boom, dinner! Plus it has 33g protein and only 350 calories
