I am a huge advocate of preparing my meals ahead of time, aka meal prep. I’ve been preparing my foods for the week ahead of time for a couple years now and I believe there are several good reasons to meal prep.

It saves me time and money, which I LOVE having more of. It also helps me with portion control and helps me reach my fitness goals.

I have been doing MUCH better with eating this week. It honestly helps so much to have healthy foods already prepared in the fridge to grab for dinner and other clean eating meals. Last week I didn’t prepare very much food other than lunch and some easy snacks, so we ended up eating out several times for dinner.

I like eating dinner at restaurants, but it is more expensive and higher calorie foods usually. This week during meal prep I made extra foods to use for easy breakfasts and dinners. It made me feel so much better about my food choices! [Read more…]

I was lucky when it came to meal prep ideas this week, because I actually had the energy to make several things!

Last week was pretty bare bones in terms of meal prep because I was so exhausted over the weekend (thank you Bobstock and 7-months-pregnant-energy-levels). We ended up eating out WAY too many times for dinner this last week because I didn’t want to cook and nothing was prepared.

Instead of doing that this week, I decided to make two lunch-like meals and have some extra for dinners. I made a turkey pasta bake and a chicken version of my Healthy Enchilada Casserole. Mel’s Clean Eating Meals has changed a bit over the last few months. I’m not 7 1/2 months pregnant (30 weeks)… 3/4 of the way there! I’ve tried to keep eating clean as much as possible, but I do indulge occasionally in chocolate or ice cream.

I’ve been trying to keep my protein intake up, but haven’t been doing an afternoon meal like I used to. My afternoon “meal” is typical snack foods like yogurt, nut mixes, cottage cheese, protein bars, etc. Otherwise, my eating has remained fairly similar, just more frequent. We had our biggest event of the year for work over the weekend and I was beat on Sunday. Turns out being 7+ months pregnant and being in 90-100 degree weather for three days really takes it out of you!

It is a busy week for me this week, but I still needed meal prep ideas. 4th of July is a paid company holiday, but falls on a Tuesday and then we have our biggest work event of the year this next weekend. I didn’t need very many meals, so meal prep didn’t take very long!

I cooked a few things this week, but I love eating raw produce in the summer!

Clean Eating Meals

Mel’s Clean Eating Meals has changed a little bit over the last few months. I’m officially into the third trimester of this pregnancy and I’m feeling really good. I’m hungry a lot, but I feel great.

I have been lucky and have not been sick or had food aversions. It has made healthy eating during pregnancy a lot easier! I’m still eating frequently (in fact, more frequently) and I am trying to keep the majority of my meals clean eating friendly.

I’ve stopped tracking my food intake and macro intake. Honestly, I’ve done it for the last year or more and it was time for a break. Plus, if I want a piece of cake while I’m pregnant then I’m having that piece of cake! [Read more…]

Threw all that in a bowl with some Mrs Dash Onion & Herb Salt-Free seasoning and boom, dinner! Plus it has 33g protein and only 350 calories
