Well Christmas 2014 is long gone…moving on to 2015! We had a wonderful Christmas Eve and Christmas Day. We were lucky enough to see my cousins from Wichita this year along with their 18 month old daughter, Brystol. She was born 3 weeks before our wedding and was teeny tiny! Now she is the most adorable little girl…so cute. We also got to spoil Donny’s nieces and nephews over the holidays, which is always fun. Apparently the theme for 2014 Christmas was Frozen, as in the movie. I love that movie along with about every child in the world. Santa got Donny’s 3 ½ year old niece Carlie a Frozen karaoke machine that plays three different Frozen songs. Awesome. We had a small Edson concert. We don’t sing on key, but boy do we sing loud! My New Way of Eating
Merry Christmas! That is our Christmas tree. One of my favorite parts of Christmas is turning my tree on (it’s on whenever I am home and awake) and firing up my fireplace while I eat breakfast or dinner. It is so peaceful to me.
I cannot believe that it is Christmas Eve already…which means 2015 is just a few days away. Yikes. I have had a fantastic year and look forward to 2015 for sure. I mean, who knows what shenanigans will come Donny & my way over the next 365 days!
For the past few weeks I have been eating quite a bit differently (and no I do not mean extra holiday goodies…). I track my eating most days using My Fitness Pal on my phone. I was going through it the other day looking at how much protein I consume and I was surprised to see the real numbers. I wasn’t consuming as much as I thought! [Read more…]
Minestrone Soup
It was 65 degrees here in Colorado last Friday, so naturally it makes sense that it would snow eight inches on Sunday night. School closures all over northeast Colorado! Almost makes me wish I was still in school…..almost. We have had about a week of extremely cold weather and then it was just beautiful for a few weeks. When I was going through the weekend weather forecast on Friday (which I do several times during my show), it said that it would be windy, cloudy, and chance of snow but less than an inch was possible. Well let’s just say they were about 6-7 inches off from that forecast. It was windy though! Snow drifts were all over the place. [Read more…]

Oh man, have you heard Taylor Swift’s new song “Blank Space”? I am addicted. It is so catchy and so good. I mean, it’s Taylor Swift so why should I expect anything less…but if you have not heard it, then listen here. I turned Pandora on before I got started on the treadmill this morning and the first song to play on my Pop Fitness station was: Blank Space. I had to legitimately keep myself from singing out loud to the song….it was difficult, but I bet those other gym-goers appreciated my silence. So basically what I am saying is…you’re welcome gym-buddies. [Read more…]

Officially back from Tennessee. Officially into the holiday season. Thanksgiving is over….now on to Christmas and New Years….crazy to think about it! Can you believe it is already December?!?! I hope you had a fantastic Thankgiving! Mine was awesome. We had so much fun in Tennessee with Donny’s family and we got a lot of Cathy-and-Jay-time, which was awesome. [Read more…]
Spinach Cubes
Thanksgiving is in a few days! Yay, it is such a fun holiday. We are going to Tennessee to see Donny’s sister, Cathy, and her family including her husband Jay and her kiddos Kyle, Elena, and Carly. I haven’t spent Thanksgiving somewhere other than Colorado in years….in fact, I cannot even tell you the last time I spent it out of state. [Read more…]
Fried Eggs Over Avocado Toast
Eggs are one of my favorite foods. I would even venture to say that eggs fall in my top 5 favorite foods. I eat them at least 3 times a week for breakfast, occasionally have them for a snack, and once in a while I will each breakfast for dinner or have an egg with some type of dinner. One of my favorite things to have an egg on is pizza. No, not breakfast pizza, a homemade vegetable or meat pizza with a fried egg on top. Yum! [Read more…]
Wedding in Cancun
Back from Cancun and (sort of) getting settled back into things. Why does it seem that whenever you get back from a relaxing vacation everything gets chaotic? It feels like it is settling down though.
We had so much fun in Mexico. Jamie & Charlie’s wedding was amazing! We stayed at Dreams Resort Riviera Maya in Cancun. Donny & I and then Lindsey, my sister, and her husband Cody all flew down to Cancun together. Cody had never been and the rest of us had not been since our senior class trip (which was anywhere from 13 years ago to 8 years ago….). Also, none of us had done the whole all-inclusive thing. Everyone we talked to that vacations to Mexico says that all-inclusive is the way to go. Now that I have experienced it, I completely agree! It was so nice not having to carry a purse or wallet around. Plus, you can pay for the whole trip before you even get there. Win win.
Museum Dinner – Part 2
We are back from Cancun and had a great time! The weather was awesome down there, I’m talking mid-80s the entire time. Even better, we landed in Denver and the pilot came on and said “the current temperature here in Denver is 13 degrees”. Can you sense the sarcasm? I mean, 13 degrees!!! Yikes, talk about a shock. We were completely spoiled through October and the first part of November with beautiful weather. However, it would have been nice to have a gradual decrease in temperature. Sunday was in the 70s and Monday was in the teens. Gotta love Colorado! I will post some pictures and tell you more about the wedding later. [Read more…]
Museum Dinner – Part 1
Vacation starts tomorrow! Yay, I am super excited about this trip. I have never stayed at an all-inclusive resort but everyone tells me that is the way to go! Not having to pay for food and booze all the time?! I am in.
On an unrelated note, my hamstrings have been screaming at me both yesterday and today! At bootcamp we did Romanian dead lifts on Monday morning and then we did a “Baby Got Back” workout on Wednesday. It was all back body lifting and we did Good Mornings. Yowza. I was sore from the deads and then to add Good Mornings…woah, they were not happy. But a toned butt is a happy butt. Isn’t that what they say? If not, it’ll catch on.
