I definitely want to talk about toasted muesli, but first we must discuss homemade ice cream!
A couple weeks ago we had our company BBQ and the last couple years there had been an auction. Our sales manager pairs up one sales person with one non-salesperson and each team has a chance to win “Media Logic Money” based on performance. He also rounds up a bunch of auction items for us to bid on.
One of the items on the auction this year was an ice cream machine, which I “bought” with my Media Logic Money!
My grandparents celebrated their 56th wedding anniversary yesterday, so in honor of their marriage we made homemade ice cream! We stuck with plain vanilla for the first round and it was awesome.
Definitely not clean eating friendly, but rather splurge-worthy! Whole milk, half & half, heavy whipping cream, plus sugar…. those are the main ingredients and I am not mad about it.
We are going to play around with recipes a little more and try some fun flavors! Any suggestions or good recipes?!?
Have you tried muesli before? It is not something I grew up eating by any means, but I love it! First of all, muesli has some of my favorite food ingredients in it: oats, nuts, seeds, dried fruits. Second of all, it is very customizable depending on your taste preferences and what ingredients you have available. I am all about customizable recipes!
I decided to toast the muesli in order to bring out more of the flavors of the oats and pecans. It doesn’t take very long to do and adds a lot of flavor, so don’t skip that step!
Muesli is basically a raw cereal. Cereal is one of the foods that I crave. Some people crave salty foods and others crave sweets. I crave cereal and I typically crave it about 8:00pm. Anyone else have that problem?!
Muesli can be eaten like cereal by simply pouring it in a bowl and topping it off with milk. It can be sprinkled on top of yogurt similar to granola. You can also eat it by the handful if you lack self control like I do! it makes a healthy, clean eating breakfast or snack.
Once you’ve made the muesli, then allow it to cool on a baking sheet. Store muesli in an airtight container for up to two weeks. I keep mine in a large mason jar in the pantry and it does just fine!
- 2 cups rolled oats*
- 1/2 cup pecans, chopped
- 1/4 cup hemp hearts
- 2 Tbsp flax seed
- 3/4 cup raisins
- 2 Tbsp honey
- 1 Tbsp coconut oil
- 2 tsp vanilla extract
- 1 1/2 tsp cinnamon
- 1/2 tsp salt
- Line a baking sheet with parchment paper and set aside.
- In a large saute pan, combine the oats, pecans, hemp hearts and flax seed. Toast mixture over medium heat until oats begin to brown and ingredients become fragrant, about 7-8 minutes. Stir occasionally and be careful not to burn.
- Place the coconut oil and honey in a small bowl and microwave on high for 20-30 seconds, or so the coconut oil is melted. Remove from the microwave, add the vanilla extract and stir until well combined.
- Once the oats are toasted remove the pan from the heat. Pour the coconut oil mixture into the pan and stir until liquid is evenly distributed among the oat mixture. Sprinkled with cinnamon and salt and continue to stir until well combined.
- Evenly spread the oat mixture onto the parchment paper lined baking sheet. Allow to cool for at least one hour. Store muesli in an airtight container for up to two weeks.
