Peanut Butter Chocolate Chip Oatmeal Cups

Have you seen the new Reese’s Peanut Butter Cups that have the Reese’s Pieces IN the Peanut Butter Cup?!?! Yes, a giant Reese’s Peanut Butter Cup stuffed with Reese’s Pieces. Mind. Blown.

I read about this a while ago and was so excited to try them! They haven’t released these Reese’s Stuffed with Pieces, but they were handing out samples at a food show that Donny went to in late May. He brought some of the samples home with him and they are amazing. I mean, how could they NOT be amazing?!

Now, these Peanut Butter Chocolate Chip Oatmeal Cups are not filled with Reese’s Pieces, but they do combine the wonderful combination of chocolate and peanut butter! Plus, they are made with all clean eating ingredients, which is even better!

I love oatmeal cups because they make a great portable snack, plus they are healthy. I took these Peanut Butter Chocolate Chip Oatmeal Cups for my mid-morning meal a couple weeks go and I LOVED having chocolate five days in a row! Boom. I like taking oatmeal cups for my mid-morning meal at work because there are a million different flavor combinations to try and they are super easy to make. I can mix up a batch of these in just a few minutes and then continue with food prep while they bake in the oven.

I usually make a dozen oatmeal cups and freeze any of the ones I don’t use for meal prep. Then if I need a quick snack then I pull one or two out and defrost it. Perfect.

Or if you are super busy, then you can pull all the extras out and use them for meal prep without having to bake any. Easy peasy.

These can easily be made gluten free by using gluten free oats. The peanut powder should be gluten free, but you might check the label to make sure they didn’t sneak it in there for some reason.

Chocolate and peanut butter flavors are combined to make these healthy, clean eating baked oatmeal cups. They make a great grab-and-go breakfast or snack.

Ingredients
  1. 2 cups rolled oats
  2. 2 cups vanilla almond milk, unsweetened
  3. 1/2 cup peanut flour
  4. 1/2 cup applesauce, unsweetened
  5. 1 egg + 1 egg white, beaten
  6. 1Tbsp stevia
  7. 1tsp vanilla extract
  8. 1tsp baking powder
  9. 1/2tsp salt
  10. 1/2 cup mini chocolate chips
Instructions
  1. Preheat oven to 350 degrees. Spray a muffin pan with nonstick cooking spray or line with paper liners.
  2. In a large mixing bowl combine the oats, peanut flour, stevia, baking powder, and salt.
  3. In a medium mixing bowl combine the almond milk, applesauce, vanilla, and eggs. Add the wet ingredients to the dry and stir until evenly combined. Fold in the chocolate chips.
  4. Divide batter evenly among the muffin cups. Bake at 350 degrees for 30-35 minutes*.
  5. Allow to cool slightly before serving.
Notes
  1. *Insert a toothpick in the middle of a muffin cup and if it comes out clean then the oatmeal cups are done. If batter is on the toothpick, continue to bake until oatmeal cups are fully cooked.
  2. Store oatmeal cups in the refrigerator for up to one week or in the freezer for up to 3 months.
